The recipe is adapted from Gluten-free Girl, where she didnt use 100% whole grain flours and described the result as warn, soft flatbreads. Our got thin enough to be real tortillas for sure and I used my adaptation of Jovial Foods 100% whole grain GF blend. Since you can taste the quinoa a bit, if you want a more blank palette tortilla, Id try the teff in this recipe in place of quinoa.

I have only used bake by weight with this recipe but included the cup measurements as well using my cup-to-gram converter for gluten-free flours. You should be able to make these tortillas without a mill no problem if you do and there is an issue with the recipe though, please let me know because I did NOT test the cup measurements out yet.

La Tortilla Factory makes a Gluten-Free, Ivory Teff Wrap. I have been wanting to go to Whole Foods to pick some up, but just havent had the time with all of my other errands while Im in town. So, my cravings got the best of me, and I created a recipe of my own. They turned out fantastic! And they dont taste anything like a whole grain gluten free wrap or tortilla. The best thing about them is that you can roll them like a regular tortilla. They may be even softer than the glutenous one. Just perfect, to me!

Though these gluten free wraps do not contain yeast, baking powder does, therefore, it is not listed as a yeast-free recipe. You may ask where is the yeast in baking powder? Well, baking powder contains cream of tartar which is made from the sediment produced in the process of making wine, which contains yeast. I learned this not too long ago and probably need to go through all of my recipes and remove any containing baking powder from the yeast-free category.
