Cookie Tip #: Use A Scale
Cookies are a delicate balance of flour, fat, and sugar. If one ingredient gets out of whack, then you cookies may all run together, or not spread at all, or any other number of undesirable results.
This of course assumes that you can find cookie recipes that give weight measurements. I think these are worth hunting for because they allow you to get at least one variable in your cookie making exactly right.
If you dont have a scale or cant find good recipes with weights, at least be sure to use liquid measuring cups for the liquid ingredients and dry measuring cups for the dry ingredients. It does make a difference! Hopefully the recipe will also tell you whether the flour should be scooped or spooned into the cup that makes a difference too.
Cookie Tip #: Use The Right Kind Of Fat
I know that its tempting to substitute fats when you have dairy and soy allergies, or just for health reasons. When you do this, be sure to substitute a fat that has a similar melting point. For example, if you cant use butter, then use Earth Balance sticks that are suitable for baking.
Dont use coconut oil which has a melting point of around 76 degrees. If you do, the fat will melt too quickly and drip out of your cookies and onto the bottom of your stove.causing lots of smoke. Im sure you can guess how I figured this one out =)

Last I Tried Tate’s Bake Shop Gluten
I’m a big fan of anything made with ginger, whether it’s straight gingerbread, ginger ale, or savory dishes with a ginger component. I think it’s a wildly underrated ingredient and it should be used in recipes more often!
The Ginger Zingers come in a cute, old-timey lunch sack-type bag, and the packaging is simple and classic. Definite A+ on branding.
However, I was disappointed to see that many of the cookies were broken when I pulled the plastic sleeve out of the bag.

After all, if they had just gone from my grocery cart to my kitchen counter and shattered like fine china, how would they hold up when I crunched them in my mouth?
I found one of the fourteen cookies that wasn’t broken and grabbed it from the sleeve.
While the Ginger Zingers smells good like a regular cookie there’s not much of a zingy ginger scent.

Brenda had worked out the solution to cookies that spread too much: more flour. She just needed help developing a more formal strategy for figuring out how much more flour was really needed.
The recipes that Brenda knew would spread too much were going to be her starting point. The only other tools that she needed were a notebook and paper, and ideally a scale.
Give The Dough A Rest
After you mix the dough altogether its important to give it a 30-minute rest. This gives the gluten-free flour time to hydrate and really makes a difference. Its key for non-gritty gluten-free cookies!
Luckily just a room temperature 30-minute rest will do and no overnight-in-the-fridge chill is needed. So you can still have chocolate chip cookies shortly after a craving strikes!

Where I live Whole Foods, Walmart, and Fresh Market had the most options. I struck out at Aldi but my gut says they usually have more to choose from.

Gluten Free Nilla Wafers
Magnolia Bakery Banana Pudding is heaven in a bowl. Its creamy, luscious, sweet, and impossible to resist.
Its also effortless to make at home, with two of the main ingredients being Nilla Wafers and box vanilla instant pudding mix.
If you love the idea of creamy banana pudding but cant eat gluten, these gluten-free Nilla Wafers are for you.
Samoas have three critical components: a buttery shortbread base, a chewy caramel and coconut topping, and a dark chocolate coating.
The last two are already gluten-free, so its just the cookie you need to worry about.
Luckily, with almond flour and arrowroot powder, you can easily make a light and tinder base.
I know the donut shape is standard, but I usually just keep these as discs. Youll get more that way, and theyre not as fussy to make.

After I posted these instructions to Facebook, Brenda replied that she would be trying them with a molasses cookie recipe:
I have a molasses cookie recipe here I think I will try it with. My family loves them. Since going gluten free, we havent found a recipe that bakes up right. Usually they spread all over the pan and we end up just scraping them off the pan and eating them that way!!
The results followed pretty quickly:
