    Here is one of my faves- its super easy, fast, and a last minute go to any night of the week. I am so excited to share this recipe with you all.     Instead of prosciutto, I use pancetta. I love using pancetta for a couple reasons. First of all, pancetta is less fatty in my opinion. Secondly, it has the right amount of saltiness that this dish needs. Thirdly, it crisps up so nicely in a pan, and really has that crunch that is needed to balance out the creaminess of the dish.

    If you do find that the sauce is too thick-set a side a little of the water that the pasta sat in and thin out the sauce.
