    Instead of prosciutto, I use pancetta. I love using pancetta for a couple reasons. First of all, pancetta is less fatty in my opinion. Secondly, it has the right amount of saltiness that this dish needs. Thirdly, it crisps up so nicely in a pan, and really has that crunch that is needed to balance out the creaminess of the dish.

    If you do find that the sauce is too thick-set a side a little of the water that the pasta sat in and thin out the sauce.
