Lets Go Over Exactly What Happens In The Body When Someone Who Is Celiac Eats Gluten

To start, here are some facts about celiac disease that you may or may not know:

    • Celiac disease is considered an autoimmune disorder because it results in the body damaging its own tissues.
    • Celiac disease is the only autoimmune disease in which the trigger is known.
    • Celiac disease is not a food allergy.
    • If you have the disease, your bodys response to gluten differs from the immune response caused by a food allergy.
  • Celiac disease is different from a gluten sensitivity.
  • Also known as non-celiac gluten sensitivity, gluten sensitivity is not a condition that is currently well defined. It is neither an autoimmune reaction like celiac disease or an allergic reaction in which the immune system produces antibodies.
  • Unfortunately at this time autoimmune diseases cannot be cured. The only way to prevent further damage to the digestive tract is to avoid gluten entirely. Gluten is a type of protein found in certain grains including wheat, barley, and rye.

The real mechanism behind a celiacs negative response to gluten is a protein called gliadin. There are four different types of gliadin, two of which are associated with celiac disease in particular. It is the specific amino acids found in gliadin that trigger the autoimmune reaction.

I have severe reactions to gluten. If I get even the tiniest bit, I have horrible aura migraines where I lose my site for a few minutes and vertigo, as well as severe stomach stabbing, cramps and discomfort. I never have vertigo or those type of migraines unless I accidently ingest gluten. I had only had severe and painful migraines before I removed gluten, but once I removed gluten, any type of accidents after removing it now causes the vertigo and aura migraine attacks. I originally removed it because of bloating, skin rashes and migraines, and now am so thankful because I did not realize what it was doing to my body. Luckily, 2 years after removing it from my diet, I am in excellent health

    When Gluten Is A Problem

Whats not great about gluten is that it can cause serious side effects in certain individuals. Some people react differently to gluten, where the body senses it as a toxin, causing ones immune cells to overreact and attack it. If an unknowingly sensitive person continues to eat gluten, this creates a kind of battle ground resulting in inflammation. The side effects can range from mild to severe as seen in the autoimmune disorder celiac disease. Estimates suggest that 1 in 133 Americans has celiac disease, or about 1% of the population, but about 83% of them are undiagnosed or misdiagnosed with other conditions. Research shows that people with celiac disease also have a slightly higher risk of osteoporosis and anemia infertility nerve disorders and in rare cases cancer. The good news is that removing gluten from the diet may reverse the damage. A gluten-free diet is the primary medical treatment for celiac disease. However, understanding and following a strict gluten-free diet can be challenging, possibly requiring the guidance of a registered dietitian to learn which foods contain gluten and to ensure that adequate nutrients are obtained from gluten-free alternatives. Other conditions that may require the reduction or elimination of gluten in the diet include:

What Foods Can I Eat On A Gluten

On a gluten-free diet you can eat:

    • foods that are naturally gluten-free such as fresh fruit and vegetables, fresh meats, eggs, nuts and legumes, milk, fats and oils and gluten-free grains such as rice and corn
    • products labelled gluten-free irrespective of their country of origin
    • products that use the Crossed Grain Logo. This logo is recognised both in Australia and overseas and means the food item is suitable for a gluten-free diet wherever you are
    • products that are gluten-free according to their ingredients list

In Australia, products containing any ingredient derived from wheat, rye, barley or oats must be declared on the ingredients panel. Avoid products with statements such as may contain gluten because they can be cross contaminated with gluten.

Different countries have different labelling laws, so you will need to research which foods are safe to eat when you travel overseas. For example, very small quantities of oats are permitted in products labelled gluten-free in the European Union.
