Everyone’s tastebuds vary, particularly when it comes to bread. Not everyone prefers brown or seeded varieties and so, for those who wish to avoid gluten but still want the taste and familiarity of the classic white loaf, Warburtons’ white farmhouse loaf is the closest thing you’ll find to that door-stop white bread. We love the neat size of this loaf, too, perfect for the lunchbox. Or you could use it to make a gluten-free bread & butter pudding.

Effect Of Fermentation On Gluten

Sourdough and regular bread are leavened differently.

While regular bread is leavened with packaged yeast, sourdough bread is leavened with Lactobacillus bacteria and wild yeasts.

This mixture of bacteria and wild yeast is called a sourdough starter. Its made by mixing flour and water and letting it sit until microbes move in and ferment it.

During fermentation, these organisms digest the starches in the dough and produce lactic acid and carbon dioxide (

7 ).

In one study, 13 people with celiac disease on a gluten-free diet ate either regular wheat bread, sourdough that was fermented so that part of the gluten was degraded, or sourdough that contained only 8 ppm of residual gluten .

After 60 days, the group eating the sourdough that contained 8 ppm of gluten reported no negative symptoms and showed no negative effects in their blood work or intestinal biopsies, while the other two groups reacted to the gluten .

Its important to note that the low-gluten sourdough bread was produced under controlled conditions in a lab not a home or food manufacturing kitchen.

The Easiest Vegan Gluten

Ingredients 1 1/2 cups rolled oats 1 1/2 cups nuts and/or seeds 3/4 cup flaxseed meal, regular or golden 3 Tbsp whole psyllium husks 3/4 tsp fine sea salt, optional or adjustable to preferences 2 cups water

Instructions 1. Line a 9 x 5-inch loaf pan with parchment paper, leaving an overhang on opposite sides for easy removal post-bake.

2. In a large bowl, stir together the oats, nuts/seeds, flaxseed meal, psyllium husk, and optional salt. Add the water, stirring until completely combined. The dough will be very thick and stiff.

3. Transfer the dough to the prepared loaf pan and smooth the top with your hands .

4. Preheat the oven to 400°F. Let the dough stand for 15 minutes while the oven preheats.

5. Bake in the preheated oven for 55 to 65 minutes until the bread is dry to the touch, browned, and sounds hollow when tapped.

6. Cool bread in pan for 15 minutes and then use parchment paper to remove bread to a cooling rack. Cool completely before cutting into slices.

Is Gluten Free Bread Healthy

If you cant tolerate gluten, eating even small amounts of the protein can lead to uncomfortable intestinal symptoms.

So, there are many wellness benefits of eating gluten free bread for people with gluten intolerance or coeliac disease.

However, going gluten-free without a specific health reason is less likely to lead to benefits and isnt generally recommended.9

Tips For Measuring Gluten

The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup.

Friends, please do not scoop the flour out of the bag with your measuring cup. If you do you may get more flour than the recipe calls for.

Also, measure flour using nested measuring cups. Do not measure dry ingredients in a liquid measuring cup.

How Long To Bake Gluten

This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.

You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

Gluten is the name for a group of proteins found in wheat, rye, and barley. It causes damage to the intestinal lining in those with celiac disease, so its essential to avoid all sources of gluten if you have this condition (

Those with a gluten sensitivity or wheat allergy should also avoid gluten and wheat-containing foods.

The main ingredient in sourdough bread is usually wheat flour which contains gluten.

While one lab analysis of the gluten in wheat sourdough bread has shown that it has less gluten than other types of wheat bread, the amount can vary .

This means there may still be unsafe levels of gluten in regular wheat sourdough bread.

However, gluten-free sourdough varieties, which are made from gluten-free flours like rice, sorghum, or teff, are available .

The Food and Drug Administration requires all products that are labeled gluten-free to have a gluten content below 20 parts per million .

Summary

If your sourdough bread contains wheat, rye, or barley, it also contains gluten. If you have to follow a strict gluten-free diet, only purchase sourdough bread made from gluten-free grains.

What Is Psyllium Husk And What Is Its Role In Gluten Free Bread

This is probably the only unfamiliar ingredient in the list above but one that is absolutely crucial if you want to bake proper gluten free bread.

And before you ask: there is no substitute for psyllium husk.

Psyllium husk is available in two forms: as the rough husk or as a fine powder. This recipe uses the rough husk, which has the following appearance:

When its mixed with water, psyllium husk forms a gel and this is what acts as the gluten substitute, both in the dough and in the baked loaf.

Before baking, the psyllium gel helps to create a dough that can be kneaded and shaped . It also gives the dough enough elasticity so that it can trap the gas produced through the yeast action and expand during the bulk fermentation and the final proof.

In the final baked loaf, psyllium is responsible for the characteristic elasticity and flexibility of the bread, as well as its amazing chewy texture with an open crumb.

Tips For Making Gluten

Here are my tips that work with this gluten-free bread recipe. See blow for my gluten free bread machine recipe.

Don’t substitute anything unless I specified above that I’ve tested it. This is important. If you substitute something I can’t guarantee anything and I can’t help you troubleshoot if something doesn’t work in your gluten-free bread.

Ingredients at room temperature work best. You can always run your eggs under warm water for a couple minutes to bring the temperature up.

Read the recipe instruction and get all ingredients out before you start.

Use dry active yeast or quick yeast.

If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.

Make sure your water is between 95-110 degrees before adding the yeast. If you don’t have a thermometer I suggest you get one.

Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.

Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.

Does Rye Bread Have Gluten Is Sourdough Gluten Free

They dont have the fluffiness of a standard white loaf or the bounce of a wheat-based wholemeal bread, but this isnt down to a lack of gluten.

In reality many sourdoughs are baked using wheat, so you need to look specifically for a loaf made with a gluten free grain.

And if youre looking for gluten free rye bread, prepare to be disappointed. This grain is unsuitable for anyone following a gluten free diet.
