This vegan gluten free chocolate cake is very moist and will stay that way with proper storage! You can easily make this ahead of time and wrap the layers in plastic wrap before frosting for 24 hours.

However, once frosted, the cake will keep for 3 days at room temperature. I usually keep it covered on a cake stand, but you can also wrap it tightly in aluminum foil with good results.

How To Make Vegan Gluten Free Carrot Cake

You will find full instructions and measurements in the recipe card at the bottom of the post. This is a summary of the process to go along with the process photos.

  • Add gluten free all purpose flour to a mixing bowl along with brown sugar, baking soda, baking powder, salt, cinnamon and nutmeg and mix together.
  • Then add in grated carrot, flax eggs , applesauce, oil, vanilla, apple cider vinegar and chopped walnuts and mix into a thick batter.
  • Divide between two 8-inch prepared cake pans and bake for 30-35 minutes.
  • Let the cakes cool for a few minutes in the pans and then transfer them to a wire cooling rack to cool completely before frosting and decorating.

I am offering two crust recipes depending on if you want to stick to vegan or sugar free.

This is a simple recipe that can be made in a food processor or using a strong blender. Feel free to use this crust or the crust of your choice in this recipe.

Here is what you will need to make the crust.

Nuts 1 ½ cups, unsweetened cocoa powder 2 tablespoons, and dates ½ cup pitted . Process these ingredients until you get a fine to crumb-like texture and then press it into a round pie dish or springform pan. Freeze this while you work to allow it to firm up.

How To Make Almond Truffles

These luscious bites come together in just a few simple steps. The hardest part is giving them enough time to chill before you bite into one!

Step 1: Place a cookie sheet lined with parchment paper in the refrigerator.

Step 2: Melt 1 tablespoon of coconut oil, then let it cool to the point that its still liquid but not hot.

Step 3: In a medium mixing bowl, whisk the almond flour to break up clumps. Add the melted coconut oil, agave or honey, vanilla, almond butter, a pinch of salt, and stevia drops. Mix well with a wooden spoon.

Step 4: Add the almond milk and stir until well combined. If the consistency is too thick, add up to another tablespoon of almond milk.

Step 5: Take a scant teaspoon of the mixture, roll it into a ball, and place it on the cold cookie sheet. Repeat with the remaining mixture to form 16 balls.

Step 6: Place the cookie sheet back in the refrigerator for about an hour.

Step 7: Place the chocolate and ½ a teaspoon of coconut oil in a small microwave-safe bowl. Microwave in 20-second increments, stirring between each one, until the chocolate is smooth and shiny.

Step 8: Add the almond extract and mix well.

Step 9: One at a time, roll a truffle ball in the chocolate until its completely coated. Use a thick toothpick to pull the ball out of the chocolate and let the excess drip off, then place it back on the parchment-lined cookie sheet. Repeat with the remaining truffle balls.

Step 10: Refrigerate for another hour or until the chocolate is set.

How To Make This Recipe

Preheat the oven to 350 degrees Fahrenheit. Line two round 8 inch cake pans with parchment paper and set aside. See notes about using 9 inch pans.

Combine the room temperature milk with the vinegar and mix together in a glass. Set aside.

In a large mixing bowl , sift together the almond flour, all purpose flour and cocoa powder. Whisk in the remaining dry ingredients.

The espresso powder is optional, but it really enhances the chocolate flavor. I promise it wont taste like coffee at all!

Add in all remaining wet ingredients and whisk together until smooth. Add the batter to the prepared cake pans, trying to keep them as even as possible to ensure even baking. Let sit for 5 minutes.

This isnt something you usually do with cake batter, but I always do it when baking a vegan gluten free cake. It allows the batter to rest for a second and absorbs some excess moisture so the cake isnt too dense.

Add to the oven and bake for 34-42 minutes or until an inserted toothpick comes out with a few crumbs.

You dont want to underbake since the cake will sink in the middle or end up dense, but over-baking will lead to a dry cake, so start your timer at 34 minutes, and add just a couple of minutes at a time until the toothpick has a few crumbs but isnt wet.

Remove from the oven and let cool in the cake pans for 30 minutes.

Carefully flip onto a cooling rack and let cool completely before frosting. I usually stick them in the fridge to cool, which takes about 90 minutes.
