The cookies made with Bobs Red Mill came out thick, chewy and just as delicious and magical as all-purpose flour chocolate chip cookies. I doubt that anyone would be able to tell that these are paleo cookies! And the 750+ reviewers agree with me.

And every batch comes out the same. I can say this very confidently as Ive made these cookies over 100x in the last 4 years . Hooray for consistency!

Some of the reviewers have mentioned the same issues with random brands of almond flour vs. Bobs Red Mill. And homemade almond flour? The cookies definitely wont come out the same! This has been confirmed by several commenters.

So the almond flour obviously plays a huge role in the final outcome of these paleo chocolate chip cookies. Another thing that will affect the cookies is the temperature of the coconut oil.

Pay Attention To The Coconut Oil

If you make these in the summer when room temperature coconut oil means melted coconut oil, youll need to refrigerate the coconut oil until its firmer, like softened butter.

If you make these dairy-free cookies with melted coconut oil, the dough will be very greasy and the chocolate chips will be hard to incorporate into the dough.

It doesnt work to use melted coconut oil and then just chill the dough. I dont understand why but it doesnt work!

How To Make Vegan Chocolate Chip Cookies

Grab your mixing bowl. Here are the steps to these easy drop cookies:

  • Preheat the oven to 350 degrees Fahrentheit. Line a baking sheet with parchment paper.
  • Whisk the melted butter and both sugars together in a medium bowl, then add vanilla and almond milk.
  • Place the oat flour, brown rice flour, tapioca starch, baking soda, and salt in a separate mixing bowl and whisk well to combine.
  • Slowly add the dry ingredients to the wet, stirring until dough forms .
  • Fold in the chocolate chips and transfer bowl to refrigerator to chill for 30 minutes.
  • Use a tablespoon or similar-sized scoop and drop cookie dough into even rows on cookie sheet about 2 inches apart.
  • Bake for 10-11 minutes. Allow cookies to cool for 5 minutes on cookie sheet then transfer to a wire rack.

    Variation In Baking = Bad

    They come in tiny 1-cup bags here so I go through a load of them when recipe testing. Id open up one bag and find some finely ground almond flour, then Id open up another bag from the same company, and it was overall coarser with bits of sliced almonds.

    Sliced almonds! In my almond flour. That was the final straw.

    These cookies dont require any creaming , making them so much easier to put together. Ive tried to make them as approachable as possible.

    So even though you can go wrong and not get the same cookies as mine, Im pretty confident in saying that theyll still taste pretty amazing regardless.

    The reason I used the 1-t-1 baking gluten-free flour from Bobs Red Mill is that its been created to make baking gluten-free easier and just as delicious. Youll know that theyre slightly underbaked if you get a little bit of a rice flour taste.

    Not a worry, just pop them back in the oven for a couple more minutes to crisp up on the outside, and the taste will go away! Magic Dont worry, youll still have a gorgeous chewy and soft center.

    Absolutely! While chilling dough isnt needed for this recipe, if you wanted to make the dough ahead, but not ready to make, just cover the bowl and place in the fridge up to a week.

    It does take chilled cookies longer to cook so check after the recommended baking time and you may need an additional few minutes to finish your cookies.

    • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
    • Add the egg , molasses, and pure vanilla extract to the butter mixture and mix until fully combined.
    • Add the gluten-free flour, baking soda, baking powder, and salt to the butter mixture and mix until fully combined.
    • Either stir in the chips with a spoon or use your mixer on low to mix the chocolate chips into the cookie batter.
    • Drop by rounded tablespoon or use a greased cookie scoop. .
    • Place the cookies 2 inches apart on a parchment-lined cookie sheet.

I had run out of my favorite Bobs Red Mill Super-Fine Almond Flour months before and was so frustrated with the brands of almond flour available here in Germany since theyre so inconsistent.

    So I went to work and while every batch tasted amazing, the appearance and thickness was different every single time. The only variable?

    The almond flour. The almond flour Id been buying varies from brand to brand and even within the same brand.

    How To Store These Vegan Cookies

    For storage tips, you have a few options for both baked cookies and cookie dough: room temperature, fridge, and freezer:

    Room temperature: Store the cookies at room temperature on a plate and wrapped in plastic wrap or in an airtight container. Theyll last for about 5 days at room temperature.

    Fridge: Store the cookies in an airtight container . Theyll last for about 7-8 days, depending on how cold your fridge is.

    Freezer: Store them in a plastic airtight bag or container for up to 3 months.

    Why Are My Chocolate Chip Cookies Flat

    Chocolate chip cookies will become flat if you dont freeze the cookie dough prior to baking or leave it uncovered when you do. You could refrigerate them, but you will need to do so for at least 1 hour.

    The vegan cinnamon roll recipe can also be made without vegan butter or coconut oil.

    Low carb recipes are great and all , but theres just something about a hot-from-the-oven soft and fluffy homemade cinnamon roll, covered in cream cheese frosting, in all its carb filled glory.

    Dont worry, these are still much healthier than Cinnabon and yet completely satisfy even the most fervent cinnamon roll cravings.

    Freezing Unbaked Cookie Dough

    Luckily, this recipe already uses frozen dough from the start! All you have to do is mix up your dough, freeze the dough, make your 1 to 2 tablespoon-sized cookie scoops on a baking sheet lined with parchment. Freeze the unbaked mounds on the baking sheet until hard again, before transferring them to a Ziplock bag with the air squeezed out. When ready to bake, simply follow the normal baking instructions, give or take a minute or two of baking time.

    Frozen cookies and frozen chocolate chip cookie dough are best used within 3-4 months.

    Its cookie time! Heres a step-by-step guide to making vegan chocolate chip cookies:

    Cream coconut oil and sugar. Place the coconut oil and sugar in a large mixing bowl. Use a stand mixer or a hand mixer to beat them together until theyre light and fluffy.

    Add remaining ingredients. Add the flour, baking powder, baking soda, pumpkin spice, cinnamon, and sea salt to the oil and sugar mixture. Beat for about 1 minute, then add the vanilla extract and pumpkin. Beat until all the ingredients are well-combined, scraping down the sides of the bowl if necessary. Fold in the chocolate chips.

    Chill the dough. Form the dough into a large ball or two smaller balls and wrap them tightly in plastic wrap. Refrigerate them for at least 2 hours.

    Form the cookies. Preheat the oven to 350ºF and take the cookie dough out of the fridge. Unwrap and scoop 2 tablespoons from the dough roll it between your fingers to form a ball. Place the dough ball on a parchment-lined baking sheet, leaving two inches of space between them. Place the sheets in the refrigerator for 10 minutes to ensure the dough is cold.

    Bake. Bake the cookies for 12 to 15 minutes, then remove the baking sheets from the oven and let the cookies cool for 10 minutes.
