When broadline foodservice distributor US Foods Holding Corp., introduced as many as 18 Spring Scoop products this March, it embraced the theme, Do More with Less and emphasized versatile items to help operator customers manage labor shortages and other operational challenges.

Speaking of doing more, US Foods R& D team members also consider new product enhancements that appeal restaurant consumer patrons. The company embraces a Serve Good program dedicated to responsibly sourced products. Included in this years Spring Scoop portfolio was a Hilltop Hearth Pub Grain Hamburger Bun made with a flour from brewers spent grains. The new bun debuted in March 2022 and is one of the first foodservice products certified by the Upcycled Food Association . The bun flour consists of brewers spent barley, wheat, and rye grains and officials say the resulting bun has a traditional dense crumb texture with mild earthy and sour notes.

Adult patients with new onset type 1 diabetes may be even more likely to develop celiac disease. Bakker et al. found that 42% of those with adult-onset type 1 diabetes developed celiac disease 10 years after diagnosis. A delay in celiac disease diagnosis may occur in adults, whose gastrointestinal symptoms may be incorrectly attributed to neuropathy . One study found that 48% of adult patients with type 1 diabetes had been symptomatic for > 5 years before being diagnosed with celiac disease .

There does not appear to be a link between type 2 diabetes, metabolic syndrome, and the development of celiac disease. One study showed a lower incidence of type 2 diabetes and metabolic syndrome in those with celiac disease, even after controlling for BMI, which was significantly lower in those with celiac disease .

Canyon Bakehouse Gluten Free Bread

Canyon Bakehouse has a whole slew of gluten free products but we tried the 7-Grain loaf for our gluten free bread taste test. And spoiler alert: this was my younger two s favorite bread.

The bread is thicker than the others feels like a little more substance, which was good. It was a tad grainy, but the taste overall was really good!! Unlike traditional pita bread made with wheat flour and yeast to help it rise, this gluten free pita recipe is made with a rice flour blend, as well as baking powder and soda in lieu of yeast. My personal choice of gluten free flour is Cup4Cup Multipurpose Flour, but Ive also used Bobs Red Mill Gluten Free 1-to-1 Baking Flour in this recipe. Why You Might Want To Avoid Wheat Breads

Unlike those loaves available to Juvenal, Omar Khayyam, and Matthew, modern bread isnt inherently wholesome. Commercial bread is typically made with refined white flour that owes its long shelf life to the process that removes all nutrients, including vitamins and fiber. Despite the low quality of that main ingredient, corporate food scientists and marketers also add large quantities of sugar, salt, and unhealthy vegetable oils, along with chemicals and dough conditioners, to make the product tastier.

Take, for example, Pepperidge Farm Farmhouse Honey Wheat Bread. While honey wheat bread sounds wholesome enough, its ingredients include a bunch of unpronounceables, like calcium propionate, sodium stearoyl lactylate, and datem, which is an abbreviation for diacetyl tartaric acid ester of mono- and diglycerides, also known internationally as additive E472. And flavorings include brown sugar, sugar, invert sugar, molasses, and honey, and a lot of salt. In fact, one serving of that bread contains more sodium than a serving of Lays Classic Potato Chips! Not exactly the staff of life more like the staff of disability.

What Is A Gluten

This is essentially a diet that removes all foods containing or contaminated with gluten. Gluten And Health Benefits

Gluten is most often associated with wheat and wheat-containing foods that are abundant in our food supply. Negative media attention on wheat and gluten has caused some people to doubt its place in a healthful diet. There is little published research to support these claims in fact published research suggests the opposite.

In a 2017 study of over 100,000 participants without celiac disease, researchers found no association between long-term dietary gluten consumption and heart disease risk. In fact, the findings also suggested that non-celiac individuals who avoid gluten may increase their risk of heart disease, due to the potential for reduced consumption of whole grains.

  • Many studies have linked whole grain consumption with improved health outcomes. For example, groups with the highest intakes of whole grains including wheat compared with groups eating the lowest amounts were found to have significantly lower rates of heart disease and stroke, development of type 2 diabetes, and deaths from all causes.

Gluten may also act as a prebiotic, feeding the good bacteria in our bodies. Arabinoxylan oligosaccharide is a prebiotic carbohydrate derived from wheat bran that has been shown to stimulate the activity of bifidobacteria in the colon. These bacteria are normally found in a healthy human gut. Changes in their amount or activity have been associated with gastrointestinal diseases including inflammatory bowel disease, colorectal cancer, and irritable bowel syndrome.
