  • For a richer flavor, use brown sugar instead of white. The molasses in brown sugar gives it a deeper level of sweetness.

  • Add an extra tablespoon of cocoa powder for more chocolatey goodness.
  • Switch things up: add 1 to 2 drops of mint, almond, hazelnut, or orange extract for a different flavor.
  • Make it mocha! Add a teaspoon of espresso to the mixture.
  • Tips to avoid lumps:
  • Sift the dry ingredients before adding the milk.
  • Pour the milk gradually and stir constantly while doing so.
  • If all else fails, push the cooked pudding through a mesh sieve to get rid of lumps.

    Other than the dairy substitute, I havenât tried other substitutes in this recipe. If you use substitutions, you are doing so at your own risk.

    Second, you want to mix at the right time and not over-mix. When you are beating the oil, sugar, and eggs youâll want to beat it for the time listed.

    This adds air which in turn helps the cake rise. Beating any longer will cause the batter to stiffen.

    Vegan Gluten Free Desserts

    Egg

    To make your gluten free desserts more vegan friendly, you can often follow the suggestions for replacing the dairy in the recipe, and replace each egg with one âchia egg.â Each chia egg is made by combining 1 tablespoon ground white chia seeds with 1 tablespoon lukewarm water, and allowing it to gel.

    Some people really like to use âflax eggs,â which are made by boiling flax seeds and then straining out the seed particles after they create a gel. They have a relatively strong flavor, and the process isn’t easy, so I prefer âchia eggs.â

    The next trick for this gluten-free cookie recipe is to add a tablespoon of milk. This helps to compensate for the liquid that evaporates from the butter during the browning process. It also helps the cookies get a golden color and prevents grittiness.

    Gluten-free flour needs a little extra liquid for best results so you dont have chalky cookies.

    How To Make Flourless Chocolate Cake:

    Preheat the oven to 275°. Butter the bottom and sides of a 9 springform pan. Set aside.

    Place butter and chocolate in a large, microwaveable bowl and microwave in 30-second increments, stirring after each 30 seconds, until completely melted. Let cool slightly.

    Whisk in egg yolks until smooth.

    In medium or large bowl, beat egg whites until soft peaks form. Gradually add the sugar, and continue beating until glossy stiff peaks form.

    Whisk 1/4 of the egg whites into the chocolate mixture. Heres a pic:

    Pour batter into the prepared springform cake pan, and smooth the top with a rubber spatula.

    Bake at 275° until the cake pulls away from the sides of the pan and is set in the center, 45-50 minutes.

    Cool completely on a wire rack remove sides of pan.

    While you can buy Cool Whip topping, I highly recommend you make sweetened homemade whipped cream to top slices of this cake with. Its quite easy too!

    For the whipping cream, youll want to grab a quart of heavy whipping cream, some powdered sugar and some pure vanilla extract.
