You can buy packaged gluten free graham crackers. Kinnikinnick and Pamela’s brands both make crunchy gluten free graham crackers, but honestly I think they both taste terrible. Schar brand’s variety is much better, but super expensive.

If you are looking for that crispy graham cracker taste like Nabisco, you need our recipe for Nabisco-style gluten free graham crackers. They really do taste exactly like the real thing, and they’re just like you remember.

I don’t know of any brand of packaged gluten free graham crackers that is soft and tender. This recipe for soft gluten free graham crackers is made with a different balance of ingredients than our Nabisco crackers.

This style is perfect for layering with and milk chocolate for s’mores that don’t need to be heated at all. For a graham cracker crust, though, I recommend using the crunchy kind.

How To Make Gluten Free Graham Crackers:

  • Preheat oven: 325°F.
  • Mix together dry ingredients: Add flour, oat flour, coconut sugar, cinnamon, baking powder, baking soda, and salt to a large bowl of a stand mixer with a paddle attachment*. Turn on low to blend.
  • Add in wet ingredients: Add melted coconut oil, water, maple syrup, and vanilla extract to the bowl. Continue to mix until the dough is formed.
  • Roll out the dough: Transfer dough to a sheet tray lined with parchment paper. If your sheet tray has raised sides like mine, you will need to just place the parchment paper on the counter for now. Top the dough with another piece of parchment paper and start to roll out the dough into a large rectangle. The dough needs to be about 1/6-inch thick .
  • Cut into squares: Use a pizza cutter or knife to cut the dough into 3 squares. Using a fork, poke 2-3 sets of holes in each graham cracker.
  • Bake: Transfer the parchment paper and graham crackers to the sheet tray if you havent already. Bake for 20-22 minutes or until the graham crackers start to brown.
  • Cool: Allow graham crackers to cool. Once cool, use the pizza cutter or knife to go back over the cuts to separate the graham crackers.

    Make the graham cracker crust layer. This is as easy as combining some finely crushed graham cracker crumbs with a little sugar for sweetness and melted butter to help it stick together and give a buttery taste. Once the graham cracker crumbs are evenly moistened just divide them between six 8-ounce jars.

    You’ll get the best results and your cream will whip more easily using heavy cream that is very cold. Some people even like to chill the bowl and beaters they use to whip cream first.

    If you like your graham crackers on the softer side or want this recipe to be more cookie-like, follow the instructions as they are listed. However, if you want to add a bit more crunch, make sure to roll out the batter extra thin. For the best results you want it to be about 1/16th inch thick.

    Or, if youd like a thicker cracker that still has a nice crunch, you can simply dry them out after baking. To do this, place them in a warm oven at a temperature between 190-200 degrees Fahrenheit for about an hour. Then, remove the crackers, and let them cool before serving.

    Whichever method you choose, you should be left with golden-brown and perfectly crispy squares.
