How To Store And Reheat
Because this soup contains noodles, you cant keep it around for over 4 days. The noodles will turn mushy as the days go by.
Store the leftover soup in an air-tight container and refrigerate for up to 4 days. Reheat it either in the microwave or the stovetop, depending on how much you need.
Theres a chance the noodles will absorb too much liquid in the soup while reheating. If this happens, just add more broth.
If you want to keep the soup around much longer, freeze it.
Just be sure to store the noodles separately, otherwise, the soup wont stand a chance in the freezer.
Place the soup in an air-tight container and freeze for up to 3 months. Keep the noodles in a Ziploc bag and refrigerate.
Defrost it in the freezer overnight and reheat it on the stovetop. Stir in the noodles while reheating.
Have a can of chicken broth ready just in case you need more.
Pro-tip: If you already know beforehand that youll have leftovers, dont add the noodles to the soup. Cook them separately and just add them to individual bowls right before serving.
This way, you wont need to worry about separating the noodles from the soup.

- Place whole leftover chicken in a large soup pot and cover with water
- Cook over medium heat 1-2 hrs. or until falling apart
- With large slotted spoons remove chicken from water and place on a plate
- Pick chicken off again
- You should be able to get even more now that the bird is so soft
- Shred the chicken
- Using the slotted spoons, remove all leftover chicken skin, bones and fat from broth and discard Place shredded chicken in broth along with all other ingredients except noodles
- Let cook until veggies are soft but not falling apart
- Add noodles and cook an additional 10 minutes or until noodles are soft

Progresso Creamy Mushroom Soup Recipes
Enjoy this creamy mushroom chicken thats made using Progresso® soup a delicious dinner.

4 boneless skinless chicken breasts |
1/4 teaspoon salt |
1 package sliced fresh mushrooms |
1 can Progresso Vegetable Classics creamy mushroom soup |
2 tablespoons gluten-free sour cream |
1/4 to 1/2 teaspoon paprika |
3 cups hot cooked brown or white rice |
Steps:
- Season chicken with salt and pepper set aside. In 12-inch nonstick skillet, melt butter over medium heat. Add mushrooms to butter cook 5 minutes, stirring frequently, until beginning to brown. Remove from skillet reserve.
- In same skillet, add seasoned chicken. Cook uncovered 8 to 12 minutes, turning once, until light golden brown stir in reserved mushrooms and the soup. Reduce heat cover and simmer 15 minutes, stirring occasionally, until juice of chicken is clear when center of thickest part is cut . Remove chicken to serving platter keep warm.
- Stir sour cream and paprika into mushroom mixture. Heat through . Pour mushroom mixture over chicken on platter serve with hot rice.

Ingredients For This Gluten
Again, Im all about easy with this recipe, so in addition to the leftover chicken, the other convenience items I add are carrots that I buy shredded already, and boxed gluten-free chicken broth.
You should be able to buy shredded carrots near the baby carrots at your local store. My Fred Meyer store even carries bags of organic shredded carrots. They are fantastic to have on hand to add to salads and soups. I gave my shredded carrots a few chops with the knife to make them a bit smaller for the soup. You can also just chop up whole carrots.
For the chicken broth, I recommend Pacific Natural Foods Organic Free Range Chicken Broth, which if you really like, you can buy a case of 12 boxes of it from Amazon! It is one of just a few brands of broth I know of that are gluten-free, and clearly labeled as such.
For added flavor, this recipe also calls for chicken bouillon. Make sure you closely study the ingredients of any bouillon you use for any hidden gluten. I use Herb-Ox brand bouillon, and it is clearly labeled Gluten Free.
For the noodles, I always use these gluten-free traditional egg pasta noodles from Jovial foods. I sometimes order these online, but I also find them locally at Whole Foods, Fred Meyer, and even Walmart now. They were fantastic for this homemade chicken noodle soup. Unlike other gluten-free pasta noodles that I had tried in my soup in the past, these did not get bigger and mushier as they sat in the broth throughout dinner and even a day later.
