This should be considered an extreme sport! As noted above, investing in a simple cake carrier will be your secret to success. Prior to starting your ice cream cake, we recommend clearing an area of your freezer that is large enough to allow the cake carrier to fit and sit level inside. If you have a drawer freezer, make sure your freezer opens wide enough .

You can safely and successfully transport an ice cream cake using a large cooler or insulated food carrier. The trick is to make sure the vessel you are using is large enough to fit your cake carrier along with several ice packs or bags of ice. For best results, we recommend letting your ice cream cake freeze for 24 hours in the freezer before transporting it to make sure everything is as frozen as possible. We also suggest packing your cake at the very last minute before your departure.

Dont forget to make sure you have a place to store your cake when you arrive at your destination. Your best bet will be to have a freezer to transfer your ice cream cake to when you arrive to keep it frozen until youre ready to serve.

How To Make Gluten Free Pizza Dough

Microwave the water for about 30 seconds or until it reaches 110-115 degrees Fahrenheit. You dont want it too hot or it will kill the yeast, but it needs to be warm enough to activate the yeast.

Mix in the sugar and one packet of yeast, stir together and let sit for 5 minutes.

Meanwhile, whisk together the flour, baking powder and salt. Add in the whisked egg, vinegar, olive oil and water/yeast mixture.

Mix together with a wooden spoon or rubber spatula until a dough forms. It will likely be a bit sticky at this point.

Cover with plastic wrap then cover with a towel and let sit in a warm place for 1 hour to rise. I like to put it in the oven.

After 1 hour, preheat the oven to 425 and let the dough sit in the fridge for 15 minutes. This will make it easier to roll out.

Add the dough to a floured piece of parchment paper and knead in 1-2 more tablespoons of flour until it forms into a smooth ball. Avoid adding too much flour, just enough until a ball dough forms and the dough isnt as sticky.

Use a floured rolling pin and roll into a roughly 12 inch circle. I like to keep the crust fairly thick, you will be able to get a larger pizza or two smaller pizza if you prefer it thinner, just depends on your preference.

Generously brush the top of the crust with olive oil and bake for 12 minutes.

Remove from the oven, add sauce and any desired toppings and bake an additional 8-12 minutes. Feel free to bake for longer if you like it crispier or shorter if you prefer it doughier.

What Other Flours Can I Use In This Pizza Crust Recipe

I have tested this gluten-free pizza crust recipe with Bob’s Red Mill 1-to-1 Gluten Free Flour Blend. It works incredible in this recipe and it’s my other go-to flour blend.

If you want to mix your own blend for this pizza combine 1 cup white rice flour, ¾ cup brown rice flour, ¼ cup tapioca starch.

I haven’t tried this gluten-free pizza dough recipe with other flour blends. If you do, please come back and let me know which gluten-free flour blend you used.

To make this recipe as traditional as possible, I used just vanilla and chocolate ice cream, but feel free to use any ice cream and topping combinations you would like.

This isnt my first attempt at a gluten free pizza crust recipe. Ive tried countless times and the results have only beenmeh. But recently I ordered a couple boxes of King Arthurs Gluten Free All Purpose Flour from iHerb to see if it would work in my Gluten Free Bread Recipe. It worked so well that I decided to try out the gluten free pizza crust recipe on their website as well.

How To Make Gluten

  • Combine the warm water, sugar, and yeast in a glass measuring cup or small bowl. Whisk to combine.
  • While the yeast is proofing for 3-4 minutes, combine the gluten-free flour, baking powder, salt, and psyllium husk powder in the bowl of a stand mixer.
  • With the mixer running on low, slowly add the yeast mixture and olive oil to the dry ingredients.
  • Increase the mixer to medium speed and beat for a few minutes.
  • Using an oiled spatula, press the dough off the sides into a ball. Cover and let rise for 30 minutes.
  • Preheat the oven to 425F. Oil a 12-inch round pizza pan. Press the dough into the pan. The best way to handle the gluten free dough is with oiled hands. The dough will shrink slightly as it bake, so press the dough as thin as you can to cover the pan. Let the dough rise for another 10 minutes at room temperature.
  • Bake for 15-20 minutes. Remove from the oven and add your favorite sauce and toppings. Bake for another 10-15 minutes depending on your toppings. Let cool for a few minutes before slicing. Enjoy!

Whole Wheat Pizza Crust Thats A Classic King Arthur Recipe

Here are some quick tips and substitution ideas that you might find helpful when making this whole wheat pizza crust recipe.

  • Flour: White wheat flour is whole grain, its just made from a lighter wheat berry. If you want a lighter crust, you can use part all-purpose flour for some of the flour.
  • Yeast: King Arthur, and Paul, use instant yeast, which is also sold in the baking section. I actually prefer ordinary active dry yeast to avoid any rising mishaps or waste. And it works well since you are rising the dough quite a bit. If using active dry yeast, use warm water and add the yeast to the water-honey mixture instead of the flour. Let it sit for 5 minutes to proof. If its still active, it will foam or have tiny bubbles. If it doesnt, discard and use fresh yeast. When using active dry yeast, the rising times will be less. Look for when the dough has doubled in size.
  • Sweetener: Technically, any sugar-based sweetener will work, including plain old sugar. But dont use a sugar-free substitute. The sugar feeds the yeast.

What Do You Need For A Carvel Style Ice Cream Cake

First things first, you need cookies. Oreo style cookies. Since my son is gluten-free, I used gluten-free Oreo style cookies from Trader Joes. There are others out there but I cant vouch for them as I havent tried them. If gluten isnt an issue, Newmans Own makes a great organic Oreo style cookie.

Chocolate Sauce is optional but really takes this over the top! Whole Foods has an organic 365 one that is very affordable. You can use whatever is leftover to drizzle over the top!

Next up, you need to make some homemade whipped cream. Its easy and takes minutes. I include the instructions for that below in the recipe.

As for the ice cream, Carvel uses soft serve. I experimented with whipping the ice cream to get that softer texture before re-freezing. It does lighten up the final cake a bit and the texture is nice but overall, I do not think it is worth the extra effort, time and mess it takes so I say skip it and just use your favorite brand of ice-cream.

  • One thing Ive noticed at a lot of restaurants that serve gluten-free pizza is that the pizza never gets crispy on the bottom. Gluten-free things generally need to be baked longer than regular baked goods.
  • With this recipe I parbake the crust for 15-20 minute before adding the toppings. Then bake it for another 10-15 minute with the toppings on and youll have perfectly crispy, chewy pizza!
