It is no coincidence that Goodie Girl’s slogan is “Just the Right Amount of Wrong.” The first thing I noticed when I put a Midnight Brownie gluten-free cookie in my mouth was a rush of intense chocolaty flavor, which was followed by a rich buttery taste.

These cookies really are “Midnight” in color, and may be the blackest cookie I’ve ever seen . I’ll attribute their color to the rich ingredients used in making them, and their baking process. The chocolate chips in the cookies actually look light in color when compared to the rest of the cookie…if you can believe that!

Whats Better Than A Chocolate Chip Cookie

A chocolate chip cookie filled with more cookies! In this case, thats Oreo cookies.

Ive taken my favorite gluten-free Chocolate Chip Cookies and turned them into Cookies & Cream Cookies. And it was maybe one of the best ideas Ive had all year.

These gluten-free cookies are made with chopped up Oreo cookies , only white sugar, and extra vanilla. Youll get literal cookie and cream flavor in every bite. Plus, a bit of cornstarch makes these cookies extra soft too.

This recipe is super simple, and made with basic, easy cookie ingredients that you probably already have on hand minus maybe the gluten-free Oreo cookies.

Theyre made in one bowl too!

Quick And Easy Gluten Free Cookie Bars

Magic bars are super easy to make. The sweetened condensed milk, cookie crust, chocolate and marshmallows come together to create the perfect gluten free cookie bar.

A lot of magic bars have coconut, but I chose to skip the coconut and added lots of marshmallows instead.

There is nothing like chocolate and marshmallows and cookies.

Normally I would offer you lots of tips on how to make these gluten free smore magic bars perfect, but they are so easy, you cant really mess them up!

The only way you can go wrong is to not make a batch!

Lets Talk All About Gluten

Youll need to use a gluten-free all purpose flour blend for these cookies . I do not recommend any other type of flour in its place.

I like and highly recommend King Arthur Measure for Measure, or Bobs Red Mill 1-to-1. Other people have had success with other brands, use your favorite! But if youre new to gluten-free baking, those are the ones Id start with.

I also like to add a little cornstarch to my cookies, to make them extra soft. Its all optional though. I would not recommend trying to substitute the cornstarch with another ingredient if you dont have it, just omit it.

And of course, lets chat about the star of the show: the gluten-free Oreo Cookies.

There are a few different brands for gluten-free options that I would recommend:

Ive seen all three in different stores either at King Soopers, Walmart, Target, or other local stores. They are generally pretty easy for me to find hopefully its the same for you. You can also find them on , although they cost a bit more online.

For the most cookies & cream flavor in every bite, I have a little trick.

Its simple, really. Instead of using just large pieces of Oreo cookies, youll want to have smaller crushed up bits as well.

So I recommend having 6 Oreo Cookies that are finely chopped as well as 6 Oreo Cookies that are cut into large pieces.

  • To begin, preheat your oven to 350 and prepare two pans with non-stick spray .

    Goodie Girl Cookies Gluten Free Mint Slims Cookies

    Dare I say that these gluten-free Thin Mint cookies taste better than Girl Scout Thin Mints? I dont know if thats blasphemy, but these are seriously good cookies and youll be in heaven now that youve baked this beloved cookie from scratch at home.

    The cookies are slightly crunchy and even have a bit of a chewy texture, which I like and prefer. The chocolate coating is generous, and the peppermint flavor is present in every single bite!

    Dont feel like making your own gluten-free Thin Mints? Want a store bought Thin Mint option? Try Goodie Girl Mint Cookies. The cookies are delicious, although I like my homemade version just a little better.

    Coat Each Cookie With Chocolate

    Now for the fun part, covering the cookies with a delicious and shiny chocolate coating.

    Start by melting the chocolate and vegetable oil in a large microwave safe bowl, mixing the chocolate every 15-30 seconds until melted. Add some peppermint extract after the chocolate has melted and mix well. Remember, a little peppermint extract goes a long way.

    Now coat each cookie with the melted chocolate. Use a fork to scoop up the cookie from the melted chocolate and bang off the excess chocolate and remove any air bubbles from the top of the coating.

    Place each coated cookie on a parchment-lined baking sheet to cool and set. Coat each cookie individually until all cookies are covered in chocolate.

    How To Make Gluten

    One of my favorite blogs, Sallys Baking Addiction, has a wonderful Thin Mint Cookie recipe. The recipe is not gluten free, but I was able to easily recreate her recipe using my trusty Bobs Red Mill 1-to-1 Gluten-Free Flour Blend.

    That said, lets walk through how to make this classic, totally satisfying Thin Mint cookie sans gluten. Ill share what worked, and what didnt.

    Wait For The Chocolate To Set

    Allow the chocolate to set on the cookies before enjoying them. The chocolate will harden, even at room temperature, but if youre anxious to eat the cookies sooner, place them in your fridge for 15 minutes.

    I dont have much fridge space to spare, so I leave mine out until the chocolate sets, then I put them in a zip top bag to store in my freezer. You can store the cookies in your fridge or freezer, but I recommend the freezer for maximum enjoyment.
