Instructions

  • Preheat the oven to the 350o. Grease a glass baking pan with coconut oil and line the bottom of the pan with parchment paper.
  • In a microwave safe bowl, melt chocolate and coconut oil together for 30 second intervals. Stir after each interval. Set aside.
  • Beat eggs and keep aside.
  • Take a large bowl and add all dry ingredients whisk to combine. Make a well in the middle and add beaten eggs, chocolate melt and vanilla extract. Stir well until the batter is smooth and glossy without lumps.
  • Pour the batter into pan and bake for 30 minutes.
  • Allow the brownies to cool completely. Chill them in the fridge for an hour.
  • Then cut into pieces and store in air-tight container.

Notes

  • For a super clean cut, use a warmed knife. Do wipe the blade after every cut.
  • You may also use a plastic knife to get clean-cut brownies.

What Do I Mean By Sugar Free Desserts

In this case, none of the sugar free desserts in this post use any concentrated sweeteners not even natural concentrated sweetenersso that means no honey, no coconut sugar, no maple syrup, no raw sugar.

Panna Cotta With Mango Gelee

It is a gluten free diabetic dessert inspired by Italian cuisine. This mango custard is served chilled after supper on a warm summer night. Honey is a natural sweetener that substitutes raw or refined sugar in this gluten free sugar free recipe. It adds sweetness to any dish without compromising on its taste.

Ingredients

Instructions

  • In a small bowl mix 3 teaspoons of gelatin and 3 tablespoons of cold water until gelatin absorbs water and turns soft.
  • Combine 1/2cup milk with 4 tablespoons honey and warm slightly. Remove from heat and add gelatin whisk until melted. Cool slightly. Now whisk in the yogurt, vanilla and remaining milk.
  • Pour this mixture equally into dessert glasses and allow it to set. Save half the quantity of this mixture for later use.
  • Meanwhile repeat the process of making softened gelatin with remaining quantities of water and gelatin.
  • Blend mangoes, lime juice, remaining honey and 1/4 cup water until smooth. Transfer this mix into a saucepan and warm. Remove from heat and add softened gelatin. Whisk until gelatin melts.
  • Divide the mango mixture equally and pour on top of the yogurt-gelatin mixture in the glasses. Chill for around 45 min or till the mix sets nicely.
  • Whisk the previously saved yogurt mix vigorously until smooth. Top it on the mango layer in each glass and chill until the final layer is set.
  • Garnish with lemon wedges and serve.

Since its my birthday today, I wanted to celebrate with a pretty birthday cake. I actually made the cake yesterday and since I had all of the other recipes ready I only had to concern myself with preparing and assembling the cake.

Ive made homemade birthday cakes for my family for over twenty years. Its something I really enjoy. Eight years ago I started baking gluten-free low carb birthday cake recipes. They arent any harder to make than regular cakes and I enjoy them even more. Maybe youve seen the low carb chocolate birthday cake or the low carb peanut butter chocolate birthday cake I shared last year? They were fun.

When I first began my low carb journey I wasnt sure I would ever eat baked goods again, let alone sugar free cakes. That changed the moment I saw the beautiful cover photo of Elana Amsterdams cookbook, The Almond Flour Cookbook, which featured a chocolate almond flour cake. I knew then, that enjoying the occasional low carb keto treat would be possible.

This is the first time I have shared a gluten-free low carb birthday cake recipe that was vanilla, although I do have a nice recipe for vanilla cupcakes. I usually post low carb chocolate cake recipes just because low carb vanilla cakes made with almond flour and coconut flour are so dark in color. Theres no way around it really. Of course, I could have used a cheaper butter and egg whites instead of whole eggs, but I didnt.

What Do You Use Instead Of Butter To Make Gluten Free Drop Sugar Cookies Vegan

Easy, Gluten Free Sugar Cookie Recipe

Instead of the butter, use your favorite vegan butter or palm shortening.

I’ve found best results when I use half vegan butter and half palm shorting .

The reason I like using half vegan butter and half palm shortening is that sometimes vegan butter can make the cookies have a “fake butter” taste.

The vegan butter can also melt too quickly, resulting in oily cookies.

The palm shortening melts slower, helping the cookie to spread not to much and not too little, but just the right amount.

The palm shortening is also unflavored, and when combined with the vegan butter I feel like I get the perfect taste.

Chewy Banana Spice Cookies

Our first pick for gluten free sugar free dessert recipes is this chewy, soft and delicious banana cookie. These cookies are healthy to eat and easy to make. With gelatin as an egg substitute, they are perfect for autoimmune paleo diet. Bananas are a great source of energy and potassium and will keep you full for longer hours.

Ingredients

  • 2 tablespoon water or maple syrup
  • 1/4 cup coconut flour

Instructions

  • Preheat the oven to 350o and line two baking trays with parchment paper.
  • Take a bowl and whisk together mashed bananas, gelatin and water/maple syrup. Let this mixture sit for 5 minutes and then add the remaining ingredients. Keep aside for 5 minutes.
  • Roll the dough balls into flattened, 1/4 inch thick cookies.
  • Bake for 20-25 minutes or until the cookies turn golden around the edges.
  • Cool for around 30 minutes and remove cookies from parchment paper.

Notes

  • Consume the cookies on same day or store them for a day in air-tight container.

  • Whisking your gluten free flour This ensures the flour is well combined and it is aerated.
  • Carefully scoop your gluten free flour into a measuring cup USING A SPOON. Don’t scoop the flour directly with the cup. You’ll inadvertently get too much gluten free flour.
  • Level your measuring cup off with a knife, or using the handle of the spoon. I have some self-leveling measuring cups that I love. If I’m using them, I never forget to level off my gluten free flour.

Texture wise, these cookies are super deceptive. Bake them too short, and theyll be super soft and need to be enjoyed pretty much immediately or within the first day. Bake them too long, and youll be left with crackers instead of cookies. The happy balance is to remove the cookies from the oven when they still look soft. Once they are out of the oven and cooling, they will firm up VERY fast, but still be chewy, soft and irresistible.

The original recipe calls for one cup of sugar , but I found with monk fruit sweetener, three-quarters of a cup was plenty. In fact, I found them to be a little too sweet, which is why SALTED almond butter was the next best sub.
