Making The Cake Batter
This vegan gluten-free strawberry cake is EASY to make! You don’t even have to separate the dry ingredients from the wet ingredients!
First, add your fresh or defrosted strawberries to a food processor or blender. Blend until the strawberries form a puree. Make sure there are no chunks in the strawberry puree, though seeds are fine.
Next, simply add the rest of your ingredients to your food processor or blender. Blend the cake batter until combined.
Your final cake batter should be very thick and almost like a paste rather than a typical runny cake batter.
For this vegan gluten-free strawberry cake, a thicker batter will lead to a fluffier cake with no dense spots. In contrast, a thinner batter will lead to a denser cake.
If your strawberries were juicer, your cake batter might be a little runnier than we need. In this case, add a little more potato starch and blend the batter again.
Note About Ovens And Oven Temperatures
All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods.
If you are baking with convection , please adjust the recipes accordingly. Be also prepared that the convection oven can cause your baked goods to dry out quickly and still be raw inside. Be aware that it takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.

What Happens When You Cook Strawberries
When you roast the strawberries first, much of their juice is released, turning even the wimpiest strawberries into sticky, bright red delights, with the deep flavor to match.
Then just nest them, cut side down, on top of the smooth cake batter. I like to arrange them in nesting circles with a common center, but it’s just because it looks beautiful.
The result is a super moist and tender cake that stays fresh for days. This is a rare cake that I don’t mind storing in the refrigerator for a day or so, which can be drying.

Can I Make Your Gluten Free Prosecco And Strawberry Cake Recipe By Hand
You can of course, bake this without any assistance from any appliance just a good ol fashioned silicone spatula will do. Just make sure you give it a lot of welly, otherwise your mixture wont be consistent and might not bake properly.
Making the buttercream by hand is definitely possible, but itll take longer and required a little more effort. But its definitely doable!

Gluten Free Strawberry Cake Mix
While I like to make cakes from scratch, if you’re in a pinch, you can use a gluten free cake mix. I’ve only seen one on the shelves, by LiveGFree, and I haven’t personally tried it.
You could also use a gluten free vanilla cake mix and add strawberries.
This recipe is pretty simple, just as simple as a gluten free strawberry cake mix, but it has a better texture and flavor in my opinion.

I will tell you up front that this gluten free strawberry cake recipe is a from-scratch cake recipe. I don’t use a gluten free strawberry cake mix.
But … this gluten free strawberry cake is super simple to make. If you’ve made any of my other cakes, you know this will be a hit.

Can I Bake Your Gluten Free Prosecco And Strawberry Cake Recipe With Less Sugar / Without Sugar
I can definitely understand the need to reduce sugar in our foods, but this is one of the recipes where I wouldnt advise it.
Of course, the sugar isnt just for sweetness its integral to the structure of the cake once baked and is super important. This bake wont function without sugar!
You can of course simply make less buttercream or skip the Prosecco syrup if youre concerned about sugar its up to you.

Step 3 Make The Yogurt Frosting
In a bowl of a stand mixer whisk the coconut yogurt until it becomes really thick, around five to 10 minutes. Its really important to whisk the yogurt on its own first, before adding the maple syrup. Once it feels very thick and holds its shape, add the syrup and vanilla and continue whisking for a further minute.

Strawberry Sheet Cake And Strawberries
The strawberries should be sliced to about 1/4 1/2 inch in thickness and placed closely together on top of the cake. I also added a sprinkle of lemon zest. The zest added a tasty zing to the strawberries. But this is optional.
Once the sheet cake is baked and cooled, it is drizzled with the light, fresh strawberry glaze. Again, you dont have to add the glaze, but it does make this dessert insanely delicious. For any leftover glaze, add it to yogurt over fresh fruit or drizzle it over gluten-free pancakes.

Tips For Baking The Best Gluten
- I recommend that the strawberry reduction be made several hours before baking. The strawberry sauce needs to be completely cooled before using in the cake batter.
- Freeze-dried strawberries can be found with the dried fruit in the grocery store. I purchased at both Walmart and Aldi. Do not use dried strawberries. You need freeze-dried strawberries.
- Use 2-3 drops of gluten-free pink or red gel food coloring if you want a brighter, pink-colored cake. I used 2 drops. I did not use any food coloring in the frosting.
- Line the bottoms of the cake pans with parchment paper. Trace the bottoms of the cake pans with a pencil and cut them out with scissors to have them fit perfectly!
- Use gluten-free cooking spray to grease the cake pans. I like coconut oil cooking spray.
- Allow the cakes to cool before frosting the cake.

Its finished with a Prosecco buttercream which, when whipped long enough, has the finish of fresh cream: super light and creamy.
Of course, I had to then top this with sliced, perfectly ripe British strawberries, as well as throwing them into the middle of the cake too. The combo tastes just like strawberries and cream with a distinct Prosecco finish.

What’s A Gluten Free Breakfast Cake
A breakfast cake is a sweet treat that takes very little time to make and is still satisfying and beautiful on your table. Most regular cakes have more sugar added, and don’t contain fruit in the batter, whereas a breakfast cake usually does.

Fresh Strawberry Cake With Strawberry Cream Cheese Frosting
- Description: Anne Byrn, author of “The Cake Mix Doctor Bakes Gluten-Free” writes that she thinks this gluten-free version of strawberry cake in her book is even more intensely strawberry flavored than its regular counterpart.
- Makes: 10 to 12 servings
Ingredients:
2 teaspoons rice flour, for dusting the pans
2 cups fresh strawberries
1 package yellow gluten-free cake mix
3 tablespoons strawberry gelatin
½ cup vegetable oil
Strawberry Cream Cheese Frosting
For Strawberry Cream Cheese Frosting:
1 large strawberry
4 ounces cream cheese, at room temperature
4 tablespoons unsalted butter, at room temperature
3 ½ cups powdered sugar, sifted
Preparation:
Prep time: 35 minutes. Baking time: 18 to 22 minutes. Cooling time: 25 minutes.
Place a rack in center of oven and preheat oven to 350 degrees. Lightly mist two 9-inch round cake pans with vegetable oil spray, then dust with the rice flour, shaking out excess.
Rinse and drain strawberries, then pat dry with paper towels. Select the 6 prettiest berries for garnish and set aside. Set aside one large strawberry to use in the Strawberry Cream Cheese Frosting.
Cut green caps off remaining berries and mash berries with a fork or place them in a food processor and pulse until you have a smooth purée, about 10 pulses. You will need ¾ cup of puréed strawberries.
Divide batter evenly between prepared cake pans, smoothing tops with spatula. Place pans in oven side by side.

What Causes Cake To Crack On Top
You might see cracks if your temperature is too high, or your cake is placed in the oven too high. The heat of baking activates the baking powder and causes it to release carbon dioxide, which forms bubbles and raises the cake.
If your oven is too hot, that process is sped up. Make sure to place your cake in the center, and regularly check your ovenâs temperature.
Another reason is if you are at a high altitude. If you are baking this gluten-free strawberry cake at a high altitude consider cutting the baking powder in half.
