Dont Forget Ancient Grains

Gluten Free Vegan for a Day ð±âï¸? with soy-free, nut-free and dairy-free recipes!

Just because you dont do gluten, doesnt mean you cant do grains! Come on guys, its all about ball bearings, just kidding. Quinoa, oats, rice, and other grains do not have the same structural protein as spelt, wheat, and rye, so you can eat them if youre celiac. You cant eat them if youre a grain and gluten-free vegan, but give them a go if you can, or try garbanzo and coconut flour.

Do You Use Crazy Ingredients

I live in a small town in Idaho, so I dont have access to an Aldi, Trader Joes or Whole Foods. Most of the ingredients I get are from Walmart. And, a few I have to get from my local Natural Grocer. I try to not do crazy, specialty ingredients and instead stick to simple ingredients because those are easier to find and are usually less expensive. Every once in awhile, you will have to get some dairy-free sour cream or dairy-free cream cheese . But, againif I can find them in IdahoI hope you wont have a problem either. I also try to ALWAYS link to any different type ingredients in the recipe cards to Amazon, in case youd rather shop online, or even to see what they look like to help you spot them at the grocery store.

Creamy Vegan Mushroom Risotto

For anyone who already loves mushrooms, this arborio rice recipe is a no-brainer. The combination of a thick, cheesy sauce with smooth umami undertones makes for the most magical of meal memories. Youll be spending quality time with every spoonful and feeling grateful for every gluten-free, garlicky bit of grub.

What Is A Gluten

Get in more greens with this egg

First and foremost, lets clearly define what gluten is. Gluten is the protein found in wheat, barley, and rye that provides structure to the grain. A gluten-free diet is removing sources of gluten and only eating foods without gluten.

Gluten is in a lot of foods, even ones that you wouldnt expect! Heres a list of common foods with gluten:

  • salad dressings

What Snacks Are Gluten

Snacks dont have to be processed, pre-packaged foods! Whole foods make quick, delicious, and cost effective snacks. Rather than reaching for snack packs or crackers, consider choosing:

  • Fruit and nut butter

If you do choose pre-packaged processed foods for a snack, be mindful of labels. Youll begin to notice certain brands that are known for being gluten and dairy-free. Snacks labeled vegan or paleo are often safest, but be sure to always double check and weigh the risks of contamination for yourself.

Creamy Vegan Chocolate Fudge Pops From Half

Why We Love It: Whether its summer or winterto me, the season doesnt matter: Im always down for ice cream. These fudge pops are especially great because you can make them ahead of time, i.e. they are stress-free.

Hero Ingredient: If theres one thing weve learned from the Barefoot Contessa, its that coffee is the best ingredient for bringing out the chocolate in any recipe. You wont taste the coffee here, and you might not get a caffeinated boost of energy, but it sure does make these pops divine.

How To Start A Gluten And Dairy

Transitioning to a gluten and dairy-free diet can feel like an intimidating leap to make but it doesnât have to be. In fact, the majority of whole foods are naturally gluten and dairy-free, and new gluten and dairy-free food options in grocery stores are making it easier to find compliant foods than ever before. By focusing on all the foods you can still eat, learning how to read a nutrition facts label, understanding hidden ingredients, and finding gluten and dairy-free substitutes for some of your favorites, you can build a diet that suits your dietary needs without sacrificing delicious food.

How To Make Vegan Nachos

I used cheddar and pepperjack vegan cheeses, but you can use any plant-based cheese that meltsand tastes like a dairy-based cheese.

The corn chips I replaced with Plentils Lentil chips are great because they bring a little more protein to the table than corn chips, plus the lentil chips contain no saturated fat.

Add in the black beans for another heavy hit of protein and all of the veggies for, well . . . all that veggies bring: vitamins A and C, iron, phytonutrients, and the list goes on!

Lets Take A Closer Look At Our Ingredients

Baked Lentil Split Pea Falafel Bowl with Tahini dressing. Gluten

Coconut milk I like using the coconut milk in the carton when a recipe calls for milk. My favorite brand is So Delicious. Coconut is my duct tape, I can make almost anything with it. Any time a recipe calls for milk this is what I use. When a recipe calls for whole milk, Ill use the full fat coconut milk in the can, and when a recipe calls for cream, Ill go with canned coconut cream.

Xanthan GumThe closest Ill ever get to baking with unicorn farts, xanthan gum makes the magic happen! It thickens, it emulsifies, it foams. In baking, it creates structure and allows the CO2 pockets created by the yeast, baking soda, or cream of tartar to remain after the baked good is removed from the oven.

In this recipe, the xanthan gum emulsifies the coconut milk, stopping it from separating when it chills!

The most frequently asked question about xanthan gum isDoes it contain: dairy, soy, wheat, or corn? These are the most common ingredients uses in creating xanthan gum. So people are right to ask. But I have found Authentic Foods Xanthan Gum, a brand that is free of all these allergens! Its made from cabbage. I havent had anyone tell me they dislike it. Its high quality and it gets the job done!

Chickpea ProteinWe add chickpea protein to this recipe to replicate the structure of dairy because while coconut milk is high in fat, it doesnt have protein. We add nutrition and improve the texture of our sour cream with this ingredient.

These vegan Spicy Black Bean Onigiri by Anarki AJ Tjon Affo are fun to make and eat! Onigiri are a traditional Japanese food that consist of nori seaweed wrapped around sushi rice and a filling. They usually come with a salty or sour filling such as fish, seaweed or umeboshi, a pickled Japanese plum. Rather than those more traditional fillings, this recipe for vegan Onigiri uses a spicy black bean one that adds the perfect kick. Theyre great for picnics or lunch on-the-go. While having a mold makes these easier to put together, you can do it by hand. While its not necessary, adding little faces on these vegan Onigiri makes them so much cuter!

I First Tried The Keto Diet But I Actually Gained Weight

I believe it was from the salt in the processed meats, like bacon and sausage, and all the dairy I was eating. I realized without carbs, I was eating too much. So, I decided to eliminate gluten because I always knew that my body didnt do well with it. It made me super tired and I would get skin breakouts. I also went dairy-free.

With those changes to my diet, I lost 60 pounds. Then I moved to the 21 Day Meal Plan, which is an eating plan I developed that focuses on lean meat, non-fat dairy and low-sodium foods. Thats what ultimately got me to my goal weight. I was 137 pounds.
