What You Can Do To Limit Your Risk

Not everyone who follows a gluten-free diet eats a lot of ricepeople who tend to shun foods like bread and pasta should be at lower risk for this problem. But theres no doubt that those who have replaced conventional, gluten-rich foods like bread and pasta with gluten-free versions may be consuming a lot more rice than they realize.

Thompson lays out some common-sense ideas for people who eat gluten-free and whose diets contain a lot of rice-based foods. She says people following a gluten-free diet should consider:

  • Determining the arsenic level in their drinking water
  • Assessing their intake of rice grain
  • Sourcing rice from lower arsenic areas
  • Cooking rice like pasta, in excess amounts of water
  • Substituting quinoa or another gluten-free grain for rice grain
  • Assessing their intake of rice-based products
  • Stopping the use of rice bran, rice milk, and rice syrup

Some of these will be easier to do than others, obviously. For example, some research shows that cooking rice in a lot of water and then draining the excess water can reduce the arsenic levels by 40% to 60%. Sourcing rice from areas that are lower in arsenic may be more difficult, however, since arsenic levels vary widely and its not always obvious where your rice was grown.

Well water can also be high in arsenic, so if you get your drinking water from a well, you can purchase test kits that will show you how much arsenic is in your particular water.

How To Store Pumpkin Bread

This bread is so comforting, everyone will sneak a piece whenever they can. But it is also easy to store on the counter, in the fridge, or freeze for enjoying later.

  • Counter: Once completely cooled, wrap the bread in foil or plastic wrap. It can be kept at room temperature for five days.
  • Fridge: Once cooled and wrapped in foil or plastic, this bread can be stored in the fridge for a week.
  • Freezer: Wrap your cooled bread tightly in foil or plastic wrap and freeze up to three months.

Types Of Rice That Contain Gluten

Be sure to thoroughly review the following before consumption:

  • Mixed packets of rice
  • Any rice that was processed by a manufacturer who makes products containing gluten
  • Rice that is labeled as wheat-free
  • Rice mixes may contain gluten depending on the products theyre mixed with. The item itself can be gluten-free, but that doesnt mean the other ingredients mixed in are too. Manufacturers that process foods containing gluten are something to watch out for. Cross-contamination can happen in these instances.

    Its also important to watch out for anything that says its wheat-free because that doesnt necessarily mean gluten-free. Make sure to check the label for rye, barley, and that its gluten certified.

    Grains To Avoid

    Wheat, rye, and barley are the main grains that contain gluten. Youd be surprised how many foods contain these ingredients.

    Salad dressings, pasta, soups, cereals, sauces, baked goods, beer, and malt milkshakes are just a few of the foods to review before consuming. Also, consider avoiding triticale and oats unless they indicate theyre gluten-free.

    Mixing The Ingredients And Kneading The Dough

    First, mix the yeast and sugar with some warm water to activate the yeast. After 5 10 minutes, it will become bubbly and frothy, which means that the yeast is active. If theres no bubbles and/or foam formation, youll know that its inactive and you should open a new yeast package.

    Next up, prepare the psyllium gel by mixing the psyllium husk with some water. The gel will begin to form within seconds.

    Then:

  • Add the potato starch, brown rice flour, buckwheat flour,
  • and salt to a bowl,
  • and mix thoroughly to combine.
  • Make a well in the middle and add the yeast mixture,
  • the psyllium gel, and
  • the apple cider vinegar.
  • Now, we come to the mixing and kneading stage theres really no right or wrong way to knead gluten free bread, as you dont have to go though the stretching motions youd typically use to build up the elasticity in a gluten-containing wheat bread.

    Once the wet and the dry ingredients are combined, I tend to squeeze the dough through my fingers until smooth and homogeneous. After a few minutes youll notice the dough coming away from the sides and it will be easy to form it into a rough ball.

    While it wont have the same super-stretchy elasticity of a gluten-containing wheat dough, theres enough elasticity there that you can stretch portions of it without them breaking off.

    Once you complete one 360 degree rotation of the dough, you should be left with a ball of dough. Flip it seam side down and rotate in place to seal the seams.

    St Rise: Bulk Fermentation

    For the bulk fermentation, place the dough into a lightly oiled bowl, cover with a damp tea towel and let the dough to rise for 1 hour in a warm place. It will approximately double in volume.

    The purpose of the bulk fermentation is primarily flavour development this is what ensures that your loaf will have that wonderfully complex flavour we associate with properly baked bread.

    Why This Recipe Works

    Unlike breads with gluten, in this gluten-free yeast bread recipe theres no kneading involved, no double rise required, and trust me when I say that this bread always comes out great. Plus, it has a beautiful dome shape that I absolutely love!

    Even if you dont have access to affordable gluten-free flour blends, you can still make this recipe, because no flour blend is required! The only flour youll need in this recipe is brown rice flour.

    Why Was My Gluten

    For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.

    If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two, when making gluten free bread. Mixing it twice will always cause the bread to be denser.

    Are you scooping your measuring cup into the flour? Or spooning the flours into the cups and then leveling? You should always spoon then level.

    Otherwise, you’ll end up with more flour than you want which causes the bread to be dense.

    Are you storing your flours in the freezer or refrigerator? If flours are stored that way they lose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

    Keep The Dough In The Fridge For Up To 10 Days

    You can keep the dough for these gluten free artisan rolls in the fridge for up to 10 days. Keep the lid slightly open so that it can breathe. Ive kept it a little bit longer and it turned into a yeastier sour dough tasting roll. But all the directions Ive ever read say no more than 10 days, so I should probably recommend that for food safetys sake.

    Why Is Arsenic Dangerous

    Gluten

    Arsenic was popularized as a murder weapon in the movie Arsenic and Old Lace. It is tasteless, odorless, and looks like sugar crystals. In large enough doses, arsenic is deadly, though most of my experience deals with chronic low dose arsenic exposure creating chronic health issues. Lets differentiate the fact that arsenic comes in two flavors:

  • Organic these forms are relatively nontoxic and prominently found in seafood. They are excreted from the body via the kidneys.
  • Inorganic arsenic This form of arsenic is the real danger, and it is the form commonly found in rice-based products. It exerts damage by interfering with at least 200 different enzyme systems in the body. Many of these are critical in producing energy and regulating DNA. It is also a known human carcinogen . Chronic exposure to even low levels of arsenic can cause systemic multi-organ disease and damage including the liver, kidney, heart, lung, muscles, nervous system, and GI tract. Exposure to inorganic arsenic comes from rice , contaminated drinking water, pesticides, insecticides, and fungicides. It is important to note that even organically grown rice can contain high levels of arsenic because it can be found at high levels in soil depending on where it is grown.

    What Do I Do

    • First of all, beat the eggs for at least one minute. This step is important for giving the bread its spongy texture.
    • Next, add the liquid ingredients, the water and oil, and beat again.

    Note: If the room temperature is cold, the water should be hot.

    • Then, add the sugar and salt, beat, and set aside.
    • Mix the two flours together and add them gradually to the other mixture as you beat. Beat until well-mixed.
    • Lastly, add the yeast and beat again. The result will be a fairly thin dough.
    • Preheat the oven to 400 degrees and chill the bread dough in the refrigerator for 15 minutes. The sudden temperature change will activate the yeast and give you a spongier bread.
    • After this time, put the dough in the bread pan, and if you like, sprinkle the seeds on top.
    • Put the pan into the oven and cook for 40 minutes at 350 degrees.
    • Then, check to see if the inside is done by inserting a knife or toothpick. If it comes out clean, its done.

    How To Make This Versatile Gluten Free Bread Recipe

    This recipe is a batter bread recipe much like our gluten free white sandwich bread recipe from our flagship gluten free cookbook. But its more old school than that recipe.

    All you really need to do to make this bread is combine all the dry ingredients except for the yeast, and whisk them together. Then, add the yeast and whisk to combine . Add the wet ingredients, and beat really well.

    The dough isnt just a batter. Its a very wet batter. I remember that I used to roll it out and shape it into a rectangle in a sheet pan to make something resembling gluten free pizza. But its so soft that I simply cant picture how I did it successfully. I think I used a ton of garbanzo bean flour to shape it?

    For many years, to ensure reliable results in baking, Ive measured nearly every ingredient by weightincluding water, for which 1 fluid ounce equals 1 weighted ounce. I do measure the ingredients in this recipe by weight, but I made it successfully for so long without weighing a single thing. So clearly its not essential!

    You do need to include all of the ingredients as listed, or at least an acceptable substitute as outlined in the Ingredients and Substitutions section below. You do need to beat the batter/dough well, allow it to rise fully , and slice it in the center so it doesnt explode in a million different directions as it rises.

    Rice Flour As A Great Alternative

    Rice flour is a staple for many people with Celiac disease because it is gluten-free, has a neutral taste, and can be used like wheat flour.

    However, if you dont combine it with other flours, the texture can end up too dense.

    We recommend using brown rice flour, as most varieties are refined, and when you take the fiber out of the grain, the end product is harder to digest and may cause constipation.
