How to make gluten free pasta dough

First, well mix the gluten free flour and xanthan gum together until evenly distributed. Well then make a well in the middle and crack in the eggs.

This is a 1-bowlrecipe, folks. No fuss.

Next, well scramble the eggs slightly and start mixing in the flour/xanthan mixture. Eventually, well end up with a slightly sticky pasta dough.

Can You Substitute Tapioca Starch

If you cannot find Tapioca starch you can swap it out for arrowroot starch 1:1. These alternative flours take the place of gluten in this recipe and add elasticity to the dough which is super important for rolling out the pasta with ease. Additionally, if you would like to make the pasta even lower in carbohydrates, you can use 1 1/2 cup of almond flour, 3/4 cup tapioca starch, and 3/4 cup arrowroot starch.

You don’t need a pasta machine to make this gluten free pasta recipe, although I do have one.

Sometimes, I use it, and sometimes I don’t. But with the holidays approaching, if you’re feeling ambitious, you should know how to make it.

You don’t need any sort of crank pasta machine to make this fresh gf pasta. You can run it through a hand crank machine, and I can show you how in our recipe for gluten free egg noodles pasta.

It’s super easy, if you have the machine, but please don’t run out and get one just because you think you must have it to make fresh pasta.

Can I Use This Flour Blend In All Gluten Free Recipes

No, I don’t recommend using this flour blend anywhere other than this recipefor now. I’m working on a guide for using konjac powder in place of xanthan gum , but I haven’t yet completed my testing, so I can’t share the results yet. It won’t be the same in all types of recipes.

I’m simplifying our mock Better Batter gluten free flour blend, rather than simply replacing xanthan gum with konjac powder. Plus, konjac powder so far doesn’t appear to be a 1:1 replacement for xanthan gum in all thingsespecially since I’m eliminating pectin as an ingredient.

I do hope to arrive at a simpler version of an all purpose gluten free flour blend without xanthan gum that works everywhere my recipes call for an all purpose blend. It will call for varying amounts of konjac powder, though. That will make it an even more useful blend, though.

How To Make Gluten Free Pasta:

If you want to make this homemade vegan pasta a gluten free pasta instead, you can easily do so! If you dont have a gluten allergy, such as Celiac Disease, but rather need a really low gluten pasta, I recommend using Einkorn flour.

Einkorn is a variety of wheat, but is much different from our modern wheat. It contains a much lower content of gluten, and actually a variety of minerals.

For a homemade gluten free pasta, you can use gluten free 1:1 baking flour, such as Bobs Red Mill in the blue bag.

Tips For Cooking Your Gluten Free Egg Pasta

  • Ive found that there are two big determinants of success in cooking up long strands of pasta. 1) ample flour and loose nests for storage and 2) being attentive to the pasta when it first goes in the water.
  • I havent quite figured out what makes for a good pasta nest, but I have noticed that sufficient flouring makes life easier later on. If the dough is wet once youve rolled it out, it will stick to itself when you cook it. There begins a vicious cycle, youll spend the cooking time trying to separate it, only to end up breaking it into little pieces. So, a well floured, dry pasta makes for better strands later on.
  • On the second topic, Ive found that you really need to spend a bit of time with tongs gently encouraging the pasta to separate once it goes into the boiling water. It likes to stick to itself, so dispersing it into the water early on really helps. Dont wait a minute or two to do this: do it as soon as the nests hit the water.
  • As the recipe stands, it only needs 2-3 minutes cooking time. Overcook it and the pasta will begin breaking apart and feeling a little slimy. I find it best to undercook this pasta as opposed to overcooking it. This is particularly important if youre tossing it through a warm sauce like cacio pepe, as it will continue cooking in the saucepan.

How To Make Vegan Pasta

In this section, were going to go over how to make vegan pasta from scratch with a pasta machine:

  • Make the dough:

    In a large bowl, whisk together the flour and sea salt. Then add in the remaining ingredients from either vegan pasta dough option and stir until combined.

  • Knead the fresh pasta dough.

    Its super important to knead the dough here. We want a smooth dough ball. This should take about 10 minutes. The dough will seem like it wont come together, but it does with a bit of work!

  • Divide the dough into four sections.

    Then youll roll one section of the dough out.

  • Use the pasta machine to make the fresh pasta.

    Fold the dough and roll it through various settings multiple times to fold and flatten the dough. Then the final roll, youll place the pasta dough through the fettuccine, spaghetti, or tagliatelle noodle settings. Make sure youre really flouring the dough through each roll.

  • Boil the pasta!

    Once all of your pasta has been made, you can boil your homemade fresh pasta and use it in your desired recipe. This pasta cooks much more quickly than dried pasta. Youll really only need 3-5 minutes to reach a good al dente texture.

  • What Is The Best Type Of Yeast To Use In This Gluten

    This recipe uses instant yeast or rapid rise yeast. I use Fleshmans Rapid Rise Yeast. It is important to use the rapid yeast and to make sure it is at room temperature.

    Rapid rise yeast does not need to be proofed and can be added directly to the flour. It is still important to use warm water because yeast is a live organism and thrives in a warm environment.

    Heat the water just until it feels warm to the touch. Or use a thermometer to check the waters temperature. The ideal temperature for instant yeast is 100°110°F. If the water is any hotter than that, it could kill the yeast and your bread will not rise.

    If you want to make sure that your instant yeast is still active, you can proof the yeast before adding it to the flour mixture. Add the honey to the warm water and stir until it dissolves.

    Then add the yeast to the water mixture and allow to sit for 5 minutes until bubbly. This is not a necessary step. This is only needed if your yeast is not new or fresh.

    I have not tried active dried yeast in this recipe. Active dried yeast requires a proofing step. Active dried yeast also requires a longer rising time.

    First, you must be clear of the purpose and then you can choose the right substitute for Xanthan gum.

    Xanthan gum is a gluten-free natural compound. It helps to add viscosity to recipes and reduces gluten. When diluted with water, Xanthan gum turns into a gel-like substance. It provides elastic and crumbs texture to baked food like bread and cakes.

    When you use this gum in liquid recipes like soups, sauces or salad dressing, it appropriately blends and emulsifies the mixture.

    While you choose a substitute for Xanthan gum you must pay attention to the impact of the substitute in your recipes. The replacement product should match the taste, flavor, texture, and heating point of the recipe.

    It takes a good bit of practice and trial before you can correctly use the right substitute in correct proportions. Ultimately, after using the substitute ingredient, your baked foods should turn out the way you want them.

    Can I Make These Gluten Free Gingerbread Vegan

    Yes, these gingerbread can easily be made vegan. The only ingredient that needs to be substituted is the butter. I used Nuttelex buttery for my tests and it worked well. If you have access to good quality plant based stick butter, I imagine that would work well.

    Two things to keep in mind are the ambient temperature and the chilling time. Vegan butter tends to melt much more quickly than regular butter. If youre working in a hot kitchen, you might need to chill your butter during the creaming process. The texture should be the same as outlined in the recipe card, so if you notice your butter is melty or weeping, get it into the fridge straight away.

    As a result of the above, gluten free vegan gingerbread need to chilled for a fair bit longer before it is firm enough to cut. I like to give my dough about 1-2 hours in the freezer to firm up when I use vegan butter.

    I find its easiest to use a pasta machine here, but this is only necessary if you really really love making pasta! Pasta machines can be on the pricier side, so if youre just going to make pasta once, then getting a machine might not be worth it.

    However, if, like me, you like how simply you can make the ingredients , then a pasta machine might be worth the investment!

    That being said, heres a great video on how to make pasta without a machine. Youll simply fold the dough, as we mentioned above, and use a sharp knife to slice each strand.

    Make sure you flour your work surface very well!

    Is Baking Powder Used As A Thickening Agent

    No, baking powder is not typically used as a thickening agent. Baking powder is usually used as a leavening agent, meaning that it is used to make baked goods rise. The small air bubbles created by the baking powder when mixed with wet ingredients cause food items to rise and become lighter and fluffier.

    Baking soda is sometimes used as a thickening agent in sauces and gravies, however, baking powder should not be substituted for baking soda in recipes that call for it. If a recipe calls for baking powder and you need to thicken a sauce or gravy, a different thickening agent should be sought out.

    Cornstarch, flour, and even egg whites are all possible thickening agents.

    Why I Choose To Minimise My Xanthan Gum Intake

    My ongoing digestive issues dictate what I eat and what makes me feel good. I dont eat wheat because it makes me unwell, which is what spurred on my interest in gluten free baking.

    Unfortunately, I find xanthan gum gives me gas, bloating and another really weird but very unpleasant digestive issue. As such, I try to develop most of my gluten free recipes without xanthan gum. I find that I tolerate these baked goods much better than those with xanthan gum.

    I also find that a lot of gluten free baked goods dont actually need xanthan gum. Things like brownies, sourdough bread and flatbread work perfectly well without it. Hell, even chocolate cake doesnt need it!

    Can I Freeze Fresh Pasta Dough

    Absolutely! If you dont plan on using this fresh pasta dough right away, you can easily freeze it. I personally recommend rolling and and slicing the pasta into its shapes before freezing. Its much easier to work with fresh dough rather than frozen dough, in my opinion.

    To freeze this pasta in its nest shape, simply wrap the pasta noodles in plastic wrap, but not tight enough that youd squish the shape of the noodles. Then place the noodles into an airtight bag and into the freezer. You can freeze the pasta dough for up to 3 months.

    Alternatively, if youd like to make this pasta the following day, you can wrap it the same way as above, only this time storing it in the fridge.

    And if you have to avoid xanthan gum then its perfect. My recipe doesnt contain it, or any other odd ingredients. Just real, whole foods that should belong in our body.

    When Roo was first diagnosed with coeliac disease in 2010 gluten free pizza was pretty hard to find.

    But that was a long time ago. Now it seems you can get gluten free pizza everywhere. Its just normally pretty horrid.

    Crumbly, hard or overly sweet has been my experience which is why I created this recipe.

    Its soft, tasty and you can even roll it up and eat it without it breaking.

    What Is The Best Type Of Bread Pan For Baking Gluten

    I test baked this gluten-free bread in two different types of bread pans. I used both a 9-inch x 4-inch Small Pullman loaf pan and a Wilton 9-inch x 5-inch non-stick pan.

    I highly recommend using the 9-inch x 4-inch small Pullman loaf pan with this recipe. The Pullman loaf pan has a narrow bottom with steep, high sides and a ridged surface that gives gluten-free bread dough the extra support to help it rise the best. I did not use the lid in this recipe. I only bought the Pullman loaf pan.

    If you bake the gluten-free bread in a 9-inch x 5-inch bread pan, it will not rise as high because the pan is larger than the Pullman loaf pan. Even though it does not rise as high, it still as delicious!

    Cutting And Shaping Gluten Free Pasta

    All thats left to do now is decide on the shape. For beginner pasta-makers, I recommend something easy like tagliatelle. Especially if its your first time making homemade gluten free pasta, you dont want to experiment too much with pasta shapes. Start simple and work your way up.

    You can use a knife or the cutting setting on your pasta machine. Ive cut it with the latter and, let me tell you, theres something ridiculously satisfying about feeding a sheet of pasta into the machine, only for perfect tagliatelle to come out on the other side.

    Well toss the cut pasta in some more flour and shape it into a slightly wonky nest. This takes practice . You might tear a few pieces , but thats okay. Call it rustic and homemade and, honestly, nobody cares. Itll still be delicious homemade gluten free pasta in the end.

    You can use the pasta immediately just toss it into some boiling hot water with a pinch of salt, and within 5 minutes youll have a steaming plate of gluten free pasta that tastes just like the normal gluten-containing stuff.
