I make lasagna several times throughout the year and I always make it for our Christmas dinner. In the past, I always used Barilla gluten-free oven-ready lasagna noodles. But one year I wanted to make that lasagna extra special, so I decided to try it with homemade noodles.

Let me tell you, when I made my regular lasagna recipe with these homemade noodles, wow-oh-wow! What a difference! It was literally the best gluten-free lasagna recipe I’ve ever made in my entire life!

Even the most discerning of my gluten-eating relatives thought this lasagna was amazing and never once questioned if it was gluten-free!

This versatile pasta recipe is actually the same recipe I use to make the best gluten-free egg noodles and all sorts of other pasta like gluten-free cheese ravioli and even extruded shapes such as fusilli and bucatini.

While it is easier and less time consuming to use store-bought lasagna noodles, if you really want to make an impressive lasagna, I urge you to make your own gluten-free lasagna noodles from scratch!

They are actually very easy to make, albeit just a tad more time consuming than opening a box. And this pasta only requires four ingredients, one of them being water!

These gluten-free lasagna noodles are soft, pliable, and sturdy! They aren’t going to crumble apart! Plus they are delicate in flavor. This pasta will blend right in with your lasagna, no one will ever notice it is gluten-free.

How To Make Gluten Free Pasta:

If you want to make this homemade vegan pasta a gluten free pasta instead, you can easily do so! If you dont have a gluten allergy, such as Celiac Disease, but rather need a really low gluten pasta, I recommend using Einkorn flour.

Einkorn is a variety of wheat, but is much different from our modern wheat. It contains a much lower content of gluten, and actually a variety of minerals.

For a homemade gluten free pasta, you can use gluten free 1:1 baking flour, such as Bobs Red Mill in the blue bag.

How To Cook Gluten

After cutting the pasta you gently separate the strips of dough and cook off right away in salted boiling water, as you would any fresh pasta. After the pasta is cooked I drizzle it with a bit of olive oil to keep it from sticking together. This pasta is a great blank canvas for all of your favorite sauces.

Note: This pasta is only meant to be cooked from fresh. I would not suggest drying or freezing the raw pasta dough. It just wont hold up.

I’ve included another recipe card below for those who may need to make this recipe by hand. While I find it much quicker and easier to make this recipe using a food processor and pasta machine, I understand not everyone has those tools at their disposal. While it’s a bit more effort, it can still be done.

When rolling out the pasta, try to get them as thin as possible. If they are too thick, they may not cook all they way through in your lasagna, so is a good idea to pre-boil them for a two to three minutes before assembling the lasagna.

How To Make Gluten Free Ravioli

Gluten free ravioli are shockingly easy to make without any special equipment! Use your favorite filling and sauce.

It’s true! This ravioli is perfectly al dente, with just the right amount of chewy, and stands up to any filling. It’s perfect for an Italian date-night-in or an intimate dinner party.

How Do You Store Fresh Gluten Free Pasta

You can store the dough, wrapped tightly, in the refrigerator for up to three days before you roll and cook it. You can also freeze it for up to three months.

It’s also possible to dry the raw pasta by running it through your pasta roller or rolling and cutting it into fairly thin noodles, forming it into loose nests, and setting it in your dehydrator on a low temperature for 12 to 24 hours. Then store the dried nests in an airtight container.

Best Pasta Dough Recipe – Gluten Free

The ingredients list is as short as it is simple:

  • gluten free flour

Thats all there is to it. The gluten free flour blend I use is an Aldi brand thats available in the UK . It contains rice, potato and maize flour, like most of the gluten free blends out there. Nothing special, the kind of stuff you should be able to find in pretty much any grocery store, nowadays.

The xanthan gum has the job of making the gluten free pasta dough more flexible it takes the place of gluten. Without it, the dough can crumble and crack, and you really really cant use a substitute for this.

The eggs bind the dough together: the egg yolks give the pasta its richness, the egg whites add even more elasticity.

Theres no salt, no oil, no water and no other strange ingredients in this gluten free pasta recipe. Three simple ingredients, thats it.

How To Make Vegan Pasta

For the full written instructions and ingredientmeasurements, see the bottom of this post in the recipe card. You can also hit the jump to recipe button at the top of this post!Here, well go over a brief overview of the steps, along with providing visuals for a better understanding of the recipe.

In this section, were going to go over how to make vegan pasta from scratch with a pasta machine:

  • Make the dough:

    In a large bowl, whisk together the flour and sea salt. Then add in the remaining ingredients from either vegan pasta dough option and stir until combined.

  • Knead the fresh pasta dough.

    Its super important to knead the dough here. We want a smooth dough ball. This should take about 10 minutes. The dough will seem like it wont come together, but it does with a bit of work!

  • Divide the dough into four sections.

    Then youll roll one section of the dough out.

  • Use the pasta machine to make the fresh pasta.

    Fold the dough and roll it through various settings multiple times to fold and flatten the dough. Then the final roll, youll place the pasta dough through the fettuccine, spaghetti, or tagliatelle noodle settings. Make sure youre really flouring the dough through each roll.

  • Boil the pasta!

    Once all of your pasta has been made, you can boil your homemade fresh pasta and use it in your desired recipe. This pasta cooks much more quickly than dried pasta. Youll really only need 3-5 minutes to reach a good al dente texture.

  • How To Cook Fresh Lasagna Sheets

    The great thing about this recipe is that the lasagna sheets are actually oven ready! They do not need to be pre-cooked before you use them! Simply assemble your lasagna as usual using the fresh lasagna noodles. Make sure to use enough sauce to cover each sheet of pasta and that will provide enough moisture to cook the pasta to al dente as the lasagna bakes.

    The only exception to this is if you roll the lasagna sheets by hand, since they will likely be thicker than noodles rolled with a pasta machine. In this case, cook the noodles in boiling water for 2-3 minutes before assembling the lasagna.

    Do I Need A Pasta Machine To Make Fresh Homemade Pasta

    I find its easiest to use a pasta machine here, but this is only necessary if you really really love making pasta! Pasta machines can be on the pricier side, so if youre just going to make pasta once, then getting a machine might not be worth it.

    However, if, like me, you like how simply you can make the ingredients , then a pasta machine might be worth the investment!

    That being said, heres a great video on how to make pasta without a machine. Youll simply fold the dough, as we mentioned above, and use a sharp knife to slice each strand.

    Make sure you flour your work surface very well!

    Homemade Gluten Free Pasta Dough

    Gluten

    2 cans of whole tomatoes, drained1 teaspoon fine salt1/2 cup creme fraiche 1/2 cup shredded Romano cheese

    In medium stock pot, heat olive oil over medium high heat for a minute. Add onion, garlic, and carrot and saute until onion is soft and golden, about 10 minutes. Add whole tomatoes, crushing them roughly with your hans. Add the vodka and salt and bring to boil, then reduce to a low simmer. Cook uncovered until sauce is almost dry, about 30 minutes.Puree the mixture in a blender or food processor until smooth. Then add in creme fraiche and blend again to combine. Toss with hot pasta and the the Romano cheese, plus a little basil for garnish.

    Rolling Out The Gluten Free Pasta Dough

    The amount of ingredients in the recipe below makes 4 nests of tagliatelle-like gluten free pasta, so well cut the dough into four evenly sized pieces. If you want to be extra precise, feel free to weigh the pieces to get them to the same weight.

    Wrapping the three pieces of dough we wont use immediately in cling film ensures they dont dry out trying to roll out dried out pasta dough is a nightmare and, trust me, you will want to avoid it.

    Now, Ive rolled out the pasta dough with a pasta machine its handy, quick and it doesnt make your hands tired. Plus, you feel like a total pasta making badass, and thats a helluva feeling. But if you dont have a pasta machine, you can easily follow the exactly same procedure with a good ol rollin pin and a bit of elbow grease.

    First, well flatten the piece of gluten free pasta dough a bit and flour it generously on both sides. Well then pass the flattened piece through the pasta machine, starting on the widest setting. Well stay on this setting for a few minutes, so get comfy.

    Now, different pasta machines can have different widest settings. What Im trying to say is that the widest setting can produce pasta sheets of different thicknesses. In my case, the widest setting gives pasta sheets about 2 mm thick, which is actually quite thin compared to some other machines. Moral of this side-story: get to know your pasta machine.

    Tips For Making Gluten Fee Pasta Dough

    • Dont be afraid to use a little more water as needed to bring the dough together and make it workable.
    • Roll the dough out into rectangles with a rolling pan first, on a floured surface, then begin to work it into the pasta maker.
    • I found that starting on the 5th setting of the pasta making, then once on each lower setting until I reach 2 made was perfect thin and lanky yet held its structure when cooked.
    • Because gluten free flours are more absorbent than regular, it only needs about 1 1/2 minutes in boiling water to fully cook. Make sure to rinse with warm water, as this helps remove some of the starches ,which if left on do make the pasta gummy.

    Mastering fresh gluten free pasta has been on my extensive to do, make, eat list for a very long time. I needed expert help here so I sought the guidance of my super talented friend, pastry chef Angela Palermo from The Village Cooks. Trust me Ang ticks all the boxes. Italian, tick. Making pasta from the age of 5 with her Nona, tick. Hilarious and lovely, tick. Will feed me copious amounts of pasta, tick. I couldnt wait to get into the kitchen with Ang to perfect this gluten free pasta recipe.

    After a fabulous day playing with pasta dough and different gluten free flours in the kitchen what resulted was the silkiest, most delicate, most beautiful gluten free pasta I have ever tasted. It tastes like regular pasta and is honestly so easy to make, just a simple combination of two gluten free flours brown rice flour and tapioca. Brown rice flour is a little coarser than other gluten free flours so it holds its shape well and tapioca adds a lovely lightness and silkiness to the pasta strands.

    Initially your gluten free pasta dough will look dry and brittle when you roll it through the pasta machine but dont worry because it will come together as you keep rolling. Just keep folding and rolling on the widest setting 3-4 times until the pasta sheet starts to smooth out. Dust with a little extra tapioca flour between roller settings to stop the pasta strands sticking together when cut.

    Gluten Free Pasta – 2 Ingredient Recipe

    Once you have mastered the art of making fresh pasta, you can experiment with different shapes and fillings. The dough should be pliable if your dough is dry and hard, add another 1 tbsp water and continue to mix until it is pliable. To make this pasta dough suitable for vegans, see tips below!

    • 300g gluten free bread flour*
    • 1 tbsp xanthan gum
    • 3 tbsp extra-virgin olive oil

    Can I Freeze Fresh Pasta Dough

    Absolutely! If you dont plan on using this fresh pasta dough right away, you can easily freeze it. I personally recommend rolling and and slicing the pasta into its shapes before freezing. Its much easier to work with fresh dough rather than frozen dough, in my opinion.

    To freeze this pasta in its nest shape, simply wrap the pasta noodles in plastic wrap, but not tight enough that youd squish the shape of the noodles. Then place the noodles into an airtight bag and into the freezer. You can freeze the pasta dough for up to 3 months.

    Alternatively, if youd like to make this pasta the following day, you can wrap it the same way as above, only this time storing it in the fridge.

    The Best Sauces For Ravioli

    Ravioli works well with a variety of sauces! Try:

    • A classic marinara – homemade or jarred.
    • Your favorite pesto.
    • This roasted red pepper pasta sauce is a household favorite!
    • Try browned butter and fresh sage leaves.
    • Keep it simple with olive oil, lemon juice, and herbs!
    • And how could you go wrong with this decadent truffle alfredo sauce?!

    Cutting And Shaping Gluten Free Pasta

    All thats left to do now is decide on the shape. For beginner pasta-makers, I recommend something easy like tagliatelle. Especially if its your first time making homemade gluten free pasta, you dont want to experiment too much with pasta shapes. Start simple and work your way up.

    You can use a knife or the cutting setting on your pasta machine. Ive cut it with the latter and, let me tell you, theres something ridiculously satisfying about feeding a sheet of pasta into the machine, only for perfect tagliatelle to come out on the other side.

    Well toss the cut pasta in some more flour and shape it into a slightly wonky nest. This takes practice . You might tear a few pieces , but thats okay. Call it rustic and homemade and, honestly, nobody cares. Itll still be delicious homemade gluten free pasta in the end.

    You can use the pasta immediately just toss it into some boiling hot water with a pinch of salt, and within 5 minutes youll have a steaming plate of gluten free pasta that tastes just like the normal gluten-containing stuff.
