Gluten Free Pancakes | Using King Arthur’s Baking Flour Blend

The main trick for a perfect gluten-free dutch baby is to use a high quality gluten-free flour. You can use oat flour or an all-purpose blend.

In most of my recipes I recommend using a high-quality 1:1 gluten-free baking flour. This flour is usually a blend of several different types of gluten-free flour and a binder like xathan gum.

For this recipe, I like using King Arthur Flour Gluten-Free All Purpose Flour that doesnt contain xanthan gum for this recipe.

A blend with xanthan gum will work fine but might not be as puffy. This is because xanthan gum binds the pancake more than needed.

You can also use gluten-free oat flour in this recipe. It lends just the right amount of structure and a delicious wholesome flavor.

My favorite brand of gluten-free flour is GF Harvest Oat Flour. You can also easily make your own oat flour from gluten-free oats. Just be sure to buy 100% certified gluten-free oats.

What Are Some Substitutions For Buttermilk

If you dont have buttermilk on hand, you can always use kefir or blend milk and yogurt together to thin it out or make your own buttermilk with regular milk and lemon juice. In fact, there are lots of recipes on the internet for making homemade buttermilk.

Dairy free milks are a great alternative to buttermilk almond and coconut milk are both tasty options for this recipe! Feel free to use whole, 1% or skim milk too.

I have had great success using Bobs Red Mill 1:1, King Arthur Measure for Measure, Cup4Cup and Better Batter blends. However, I know that many people prefer to blend their own flours in order to control the quality of the ingredients for example, using organic flours.

I have created the following copycat gluten free flour mixes to work as cup for cup substitutes in most baking recipes and in any recipes that the above mentioned flours are used in.

The only difference between the two blends is that one contains sorghum and one does not. Sorghum adds a touch of a wheat like flavor and is slightly heavier than the mix without it.

I generally uses Bobs Red Mill flours to create my blends because they are readily available in most supermarkets in the states and are not overpriced. You can find organic versions of all of these flours on Amazon.

Just like regular pancakes, these gluten-free pancakes are fantastic for freezing. Place them on a parchment-lined sheet pan and pop them into the freezer until theyre frozen through. Place the frozen pancakes in a freezer bag where theyll keep well for up to 3 months. Reheat from frozen in the microwave or in your oven using the reheating instructions above.

  • Xanthan Gum – If your gluten free flour blend doesn’t contain Xanthan Gum, you will need to add it in. If your mix has it already, skip this.
  • Baking powder – Be sure to use aluminum free. Regular baking powder has aluminum and this leaves a bitter aftertaste.
  • Eggs – I used size large.
  • Brown sugar – you can use regular sugar too, I just like how the brown sugar adds a slightly caramelized flavor.
  • Light oil – I like to use avocado oil or grapeseed oil because they are light. You can use any light oil but do NOT use olive oil, it will not stand up to the heat.
  • Non-dairy milk – I used cashew milk for this recipe. I have also had great luck with rice milk, almond milk, and regular organic full-fat milk. If you use oat milk, you can check this list to see if your oat milk is gluten free.

  • I use a well seasoned cast iron skillet to make my pancakes. If you do not have a cast iron skillet then a non stick pan will work well too.
  • Grease the pan a little in between every batch of pancakes to make them easier to turn, you donât want them swimming in fat or you will end up frying your gluten free pancakes!
  • Donât expect them to show air bubbles like regular pancakes, they will make some but the batter is not exactly the same as regular pancakes, they also take a little longer to cook.
  • Make sure the baking powder you use is not old or your pancakes will not rise.
  • To prep ahead you can measure out your dry ingredients ahead of time and put them into ziplock bags to create your own gluten free pancakes mix that is ready to go in the morning when your children are getting ready for school.
  • Make the pancakes dairy free by using your favorite dairy free milk, I like to use unsweetened soy milk but any non dairy milk will work.
  • Serve them warm from the pan! This is the best way to eat them.

    How To Make A Gluten

    One of my favorite things about german pancakes are that theyre so easy to make! The blender does all the work so clean-up is minimal.

  • Start by placing a 9×13 pan in the oven as it preheats with a chunk of butter.
  • Add the ingredients to the blender. Dont overblend the batter just pulse until combined.
  • Blend until smooth.
  • Take the hot 9×13 pan out of the oven and pour the batter in a figure-8 shape into the pan. Bake until puffy and golden!
  • Tip: Swirling the batter into the pan in a figure-8 pattern helps give the German pancake peaks and valleys which contributes to a better overall texture.
