I have no issues with Gluten and I do not usually go Gluten free. But when I saw this Gluten-free Buttermilk Pancake and Waffle Mix at Trader Joes, I just picked it up without too much thought.

It was a Friday evening when I purchased the Trader Joes Gluten Free Buttermilk Pancake and Waffle Mix and decided to give it a shot during the weekend. As much as I love pancakes, I do not like making it them at home. That is one reason I am often spotted at my local IHOP and Dennys.

I did not know pancakes where so easy to make. At least this one is. All you need to do is add eggs, water, and butter to pancake mix. Heat up the griddle and cook. The measurements are all given on the packaging and if you follow it well there is no scope for error.

The pancakes form bubbles and look light and fluffy when done. The pancakes from the Trader Joes Gluten Free Buttermilk Pancake and Waffle Mix look just like the pancakes from any restaurant.

Now for the taste test. Oh my god! I can hardly tell that these are home-made or gluten-free. They taste just like the pancakes I have loved at the restaurants all this while.

The Trader Joes Gluten Free Buttermilk Pancake and Waffle Mix can be used in exactly the same way to make waffles. Just pour in the batter into a pre-heated waffle iron.

There is about 130 calories per prepared pancake of 4 inch. The ingredients are pretty simple and understandable. Nothing too fancy or hard to pronounce.

For this diy pancake mix recipe, I wanted it to be like a complete meal in terms of macros. Just add fruit and maybe some yogurt and go.

This recipe is also gluten free for anyone for whom that is a concern. To make it vegan, use a plant based protein powder in the mix and egg replacer when making the pancakes.

Start with your oats. Youll need 2 cups of oat flour, store bought or ground at home.

I always blend mine myself because it is economical and easy.

Gluten Free Pancakes: Griddle Vs Pan

You can make these gluten free pancakes anywhere and any way you would have made conventional pancakes in the past. They dont behave any differently.

If you have a nonstick stovetop or electric griddle, by all means use that. A griddle is especially good for making big batches of pancakes at once.

If you dont have a griddle, any nonstick pan will work. But whether you use a pan or griddle, make sure its nonstick or youll end up having to use so much grease that youre basically frying the pancakes not just cooking them.

If your nonstick surface is new enough that its still really nonstick, you dont have to grease it. You can just make lovely, fluffy pancakes with an even, golden brown color on both sides.

But if youd like to make pancakes with the slightly darker edges, be sure to grease the nonstick pan. You can greasing it with some cooking oil spray, a pat of butter, vegan butter, or even coconut oil.

    Finally Trader Joes has gluten-free pancake mix! I typically buy the gluten-free Bisquick pancake mix, and was excited to see that TJs finally came out with their own version.

    Overall, its pretty good definitely doesnt scream ew, gluten-free and could totally be served to people who dont abstain from gluten. That said, I slightly prefer the Bisquick Gluten-Free pancake baking mix. If you dont have access to that, this TJs mix will definitely get the job done, though.

    And please note that the mix does not have a certified gluten free seal. If youre uncomfortable with this product because of the relative lack of proof of gluten free status, please dont purchase it.

    All that being said, I decided to include this brand because its just simply really, really good. In fact, if it werent for the lack of certified gluten free status, it probably would have beat out King Arthur Flours mix for first place.

    The pancakes turned out incredibly tender, not gritty at all , and not at all dense. I generally dont like most things that contain soy, since it tends to make baked goods tougher, but these pancakes are really quite perfect.

    The other day I had an opportunity to check out Trader Joes gluten free mixes. I had stopped by the local Trader Joes to pick up a few loaves of gluten free bread to test for a future post about all types of gluten free bread. While I was walking through the store, I noticed a few gluten free mixes including a gluten free pumpkin bread and muffin baking mix. I also saw their gluten free chocolate chip brownie mix and their gluten free buttermilk pancakes and waffle mix, so I decided to get them all.

    The best part about mixes, as opposed to baking from scratch, is how easy they are. You usually only have to add a few ingredients and those ingredients are usually things you already have on hand. They get bonus points from me if they are dump and go. This means you can just dump all the ingredients into one bowl and mix with no extra steps like separating egg yolks or mixing separate ingredients in separate bowls. That just leaves me with a big mess which defeats the purpose of using a mix.

    I was very excited about the pumpkin muffins because Ive never tried that flavor and I thought they would be a good addition to our Thanksgiving dinner. The brownie mix was a good idea because its always important to have a backup brownie mix ready to go in case your usual mix is out of stock. I was excited about the gluten free buttermilk pancake mix because my son really likes pancakes and Im always looking for a better gluten free pancake mix.

    How To Make These Vegan

    To make these Gluten Free Muffins vegan you can sub applesauce for the eggs. Store bought is fine and if you do not have it you can make your own applesauce at home. The idea is to add moisture to the recipe. Additionally, if you do not have apples you can use mashed bananas instead, just make sure to use a vegan substitute. You will use 1/4 cup for each egg.

    Should Pancake Mix Be Thin Or Thick

    The batter, once prepared, should be thin enough to easily pour and spread onto a hot, greased griddle but not so thin that it runs all over the griddle. Aim for it to spread to about 1/4-inch thick. If the batter seems too thick, add a little more water or milk. If it seems too thin, add a couple more tablespoons of batter.
