Many people wonder why their key lime pie gets runny or doesnt set up. I find that doing a baked key lime pie is the key to getting it to consistently set up, and making sure you use enough egg yolks in your filling. This recipe for gluten free key lime pie uses 4 egg yolks to make sure that the pie will set up into a nice custard as it bakes.

You will want to be sure and bake your key lime pie until it is just set, which takes from 15-20 minutes depending on your oven. Mine took 15 minutes. If you over-bake the pie it wont have that luscious creamy texture in the same way, but the flavor will still be great.

Be sure to make the pie far enough in advance to allow for the key lime pie to fully chill and be sure to set up. Often not allowing for enough chill time can be a key factor in how your pie sets up.

  • mixer to make whipped cream with for garnish

    How To Slice Key Lime Bars

    Cold, very well-set key lime bars are easier to cut than a warm ones. Always use a long, very sharp, knife, preferably thin. I also like to use a pitcher with hot water instead of running hot water constantly while cutting.

    What you will need to slice picture-perfect key lime bars

    • a pitcher with HOT water
    • clean, dry towel
    • sharp Chefs Knife

    Dip your Chefs Knife in the hot water and dry very well with the towel. The hot water will warm up the blade and will slide through the key lime bars a lot easier.

    Clean your knife in between cuts in the hot water, wipe clean, and continue cutting. The cleaning is the very important part here. If you skip this step your gonna smudge all the leftovers from your previous cut onto the next cut.

    Key Lime Pie – With GLUTEN FREE Crust!

    Making the filling for key lime pie bars is no rocket science. If you can use a can opener, you can make key lime pie bars. I am serious.

    Zest two limes and set aside. Juice the limes and strain out any seeds. In a large bowl combine the condensed milk, sour cream, egg yolks, and freshly juiced lime juice and whisk together until smooth. Stir in the lime zest.

    Pour the filling on top of the parbaked shortbread crust and with a small offset knife or the back of a spoon smooth out evenly.

    Bake at 350F for 18-20 minutes. The filling should be almost all the way set and should not turn brown. Remove the key lime bars from the oven and allow for them to cool to room temperature before transferring them to the fridge. I recommend allowing the bars to chill for at least 3hrs before cutting them.

    You can make Gluten-Free Key Lime bars up to 3 days ahead of time and can even freeze them if needed Just skip the toppings until you are ready to serve.

    The History Of Key Lime Pie In Key West

    There are a few stories going around about the origins of key lime pie. Some say it originates from New York while others say it was derived from the Magic Lemon Cream Pie published on a promotional brochure by Borden, a producer of condensed milk.

    The story told in Key West goes all the way back to the 1800s, when Key West sponge fisherman kept limes on board to prevent sickness. The fisherman, called hookers by the locals, would whip up a sweet treat mixing the limes with condensed milk and sometimes adding a wild bird egg. Theyd pour it over stale Cuban bread and leave it out to set in the sun.

    The fishermans wives took it a step further and baked it in a pie crust. It was a modest dessert of the working class, up until Sarah Jane Lowe Curry, the daughter-in-law of Floridas first millionaire started serving it. Known as Aunt Sally, she served it to the children visiting her home and it wasnt long until it was served in every restaurant in Key West.

    • Begin by making and pre-baking a gluten free graham cracker crust. My favorite graham crackers to use, that can be found in most grocery stores, are Pamelas GF Graham Crackers or Kinnikinnick brand graham crackers.
    • In a medium size bowl, Whisk the egg yolks until they begin to lighten.
    • Whisk in lime zest, salt, sweetened condensed milk and sour cream.
    • Lastly add in the lime juice and whisk until smooth.
    • Pour into the pie shell and bake at 350°, for 15 Minutes until just set!
    • Once chilled, serve with whipped cream and enjoy!
