Summer is not really my season, but I didn’t come to complain. I came to offer relief in the form of these classic gluten free ice cream sandwiches.

In the past, I’ve always made my ice cream sandwiches between two thin and chewy cookies. It seemed simple, and clearly it’s fabulously delicious. But I really wanted my gluten free son to have a classic-looking gluten free ice cream sandwich. Color me nostalgic! I blame it on the heat.

These are the same soft gluten free chocolate wafer cookies that we’ve made before. But this time, we’re rolling them out into squares and baking them whole. Fancy! And frankly, it’s easier than cutting out a million shapes.

The easiest part? When you make your own ice cream for these ice cream sandwiches, you don’t freeze it until it’s between the two cookie layers. And if you want to make things even easier, you can make the chocolate wafer cookie squares way ahead of time. Like, days and even weeks ahead of time. Just stack the baked cookie squares, wrap them tightly and stick them in the freezer. You don’t even have to thaw them.

Tips For Making These Gluten

Time – Make sure you have enough time to make them. Although they’re easy to make you need extra time for cutting and for assembly.

Freeze – Remember to freeze the cookie slab for at least 10 minutes. It helps them not to crumble and break.

Parchment paper – I like to roll my cookie dough in between two pieces of parchment paper. This way, you donât have to add additional flour to the dough and the cookies remain really smooth and chocolatey.

Measure correctly – You must spoon the flour into the measuring cup and then level off. Do not scoop the measuring cup into the bag of flour, it will be too dense, and you will have very floury cookies.

Serve immediately – These ice cream sandwiches melt quickly, so once out of the freezer serve immediately. If you would like to store for later use, individually wrap them in parchment paper or in individual freezer-safe bags.

Ice cream sandwiches take me back to childhood. Memories of softened vanilla ice cream smooshing out between chocolate wafers and dripping down my arm takes me back to when the biggest worry I had was making sure I ate it all before it melted.

  • Mix together the butter and sugar.
  • Add the egg and vanilla to the butter mixture, mixing well.

Then I cut the ice cream into chunks and place them on top of the slab. Using a warm offset spatula I gently smooth out the ice cream. Itâs much easier and cleaner to do it this way than to let the ice cream soften naturally. Take your second 8âx12â cookie slab and place it on top. Freeze for 2 hours. Then once frozen, slice them into 12 slices.

    All my recipes are tested and developed with a conventional oven. I always bake my baked goods on the rack placed in the MIDDLE of my oven. This way the heat coming from the bottom will not burn my baked goods.

    If you are baking with convection , please adjust the recipes accordingly. Be also prepared that the convection oven can cause your baked goods to dry out quickly and still be raw inside. Be aware that it takes at least 15-20 minutes for a standard American Oven to be fully preheated. I highly recommend investing in an Oven Thermometer.

    This recipe for gluten-free ice cream sandwich cookies is a very simple recipe made with ingredients you most likely already have in your pantry. Like all my other cookie recipes, I highly recommend allowing this one to rest for at least 4hrs.

    Start with room temperature ingredients. I prefer my butter soft, but cool and should not appear shiny or greasy. Especially during the summer month I only allow for it to sit out for 5 minutes before using it. The ideal temperature for butter is actually 65F which is a lot colder than many of us consider room temperature. To test if your butter is at room temperature nudge it with your finger. You should see an indent but the butter should not feel like you can poke right through it.

    Sift together dry ingredients: sift together your gluten-free flour, cornstarch, baking powder, baking soda, and milk powder, and set aside.

    Cream Butter and Sugars: Using the paddle attachment, cream butter, brown sugar, and white sugar at medium speed for 5-7 minutes until light and fluffy. I recommend halfway through the creaming process, stopping the mixer and scraping down the sides with a flexible rubber spatula.

    Incorporate Egg and Vanilla: Add your egg and vanilla and at medium speed mix until incorporated.

    Add your dry ingredients: add your sifted dry ingredients and mix to combine. Scrape down the sides and give it another good mix.

    Another option is to slice a carton of ice cream into squares, similar to this post. Because 1.5 quarts of ice cream is needed for this recipe, simply cut your carton in half and then shave off the round side to create 2 big rectangular cubes of ice cream. Cut 6 slices out of each of them, et voila! Squares of frozen ice cream for your gluten free ice cream sandwiches!

    The last option is to simply add a large scoop of ice cream in between two of the chocolate cookies. Press the cookies together gently to squish the ice cream down. This is the quickest option but not the prettiest .

    Assembling The Gluten Free Ice Cream Sandwiches

  • Once you have your sponge squares cut out, place one of them on the bottom of the baking tin .
  • Spread the no-churn ice cream mixture on top and smooth it out into an even layer.
  • Place the other sponge square on top, pressing down gently so that it adheres to the ice cream mixture.
  • Cover the baking tin with plastic wrap/cling film or a sheet of aluminium foil and freeze for least 6-8 hours or ideally overnight.
  • Once frozen solid, cut the ice cream sandwich slab into the individual portions: I divided it into 8 rectangular slices, but you can also make 16 smaller square portions.
  • Freeze the ice cream sandwiches again, so that theyre ready for the next step: dipping into the melted chocolate to make the crisp chocolate shell!
