How To Make Tender Crumb Sugar Free Low Carb Cake

How to make a Gluten Free, Lactose Free, Sugar Free Cake

I adapted this sugar free cake from my Italian Lemon Cream Cake recipe which has dairy in it. I removed the sour cream in that recipe along with butter and heavy cream. If you can enjoy butter you can replace the coconut oil in the frosting recipe with unsalted butter.

Using mayonnaise in a cake recipe might sound odd, but I’ve used it in my Triple Layer Chocolate Cake in my cookbook, Naturally Keto with great success! As well as many other keto desserts like my Kahlua Chocolate Cake recipe.

What Makes This A Healthier Cake

We refer to the term healthy as using natural ingredients and least processed food as possible. Why? Because the ingredients are not only better but also give nutritional benefits in return.

Oat flour fulls you more than all purpose flour and is high in fibre. Almond helps reduce heart conditions. Honey is antioxidant. Just giving few examples here.

Having said that, it doesn’t mean that it’s low calorie because low calorie food does not always use natural and less processed ingredients. There’s a difference. So although this cake is made with natural ingredients, portion control is always a must. It’s not as easy but we have to do it!

How To Make Vegan Gluten Free Vanilla Cake:

To Make the Gluten Free Vanilla Cake:

  • Preheat oven: 350°F.
  • Prepare Cake Pans: Grease two 6 round cake pans.*
  • Mix Dry Ingredients: In a large bowl, whisk together flour, oats, baking powder, baking soda, salt and xanthan gum .
  • Add Wet Ingredients: Add the remaining ingredients to the bowl and stir until combined.
  • Bake: Pour batter into two 6 cake pans. Bake for 25-28 minutes or until a toothpick comes out clean.
  • Cool: Allow the cake to cool completely before decorating.
  • Notes:

    • This recipe will make two 6 round cakes or one 9 round cake. If you want to have more layers like the pictures shown, you can double the recipe.

    How Do You Make Sugar Free Cake From Scratch

    Prepare

    Turn on the oven and allow it to preheat. Line 2 cake pans with parchment paper and set aside.

    Stir

    Place all of the dry ingredients other than the sweetener in a large bowl and stir with a whisk to combine. In a separate bowl, add the eggs, sweetener, greek yogurt and vanilla and stir well. Add the dry mixture to the wet and stir until everything is well incorporated.

    Fold In

    Gently fold in the carrots, nuts and coconut flakes and stir until just combined. Let the batter sit for a little while so that the coconut flour can absorb the moisture.

    Bake

    Divide the batter between the cake pans and bake them until done! Cool completely, then frost the cake!

    Recipe Variations

    Here are a few ways to switch things up with this coconut flour carrot cake to suit your needs and preferences:

    • Dairy Free: Use dairy free cream cheese and dairy free greek yogurt.
    • Paleo: Use plant based yogurt instead of greek yogurt. Also, you may be able to use coconut sugar instead of erythritol but I have not personally tried this.

    How To Make Sugar

    If you cant enjoy chocolate cake without frosting, Ive got you covered.

    This cake requires a creamy decadent frosting/icing, but not as sweet as you may be used to, and thats for good reason. To live sugar-free, you need to slowly adapt your tastebuds to less sweet foods.

    Yes, you can swap the canned coconut milk with heavy cream, but follow my ingredient list for the Italian Cream Cake recipe. You do not need to use a full cup of heavy cream to replace the canned coconut milk.

    I do not recommend using coconut milk in the carton since it doesn’t have the same consistency as canned.
