In short yes, yes and yes! And I wouldnt advise attempting any of my recipes without them. One of the worst things you can do in any baking recipe is alter the quantities by mistake or on purpose.

A lot of work went into fine tuning ratios and quantities so I wouldnt mess around with them unless you really know your stuff. Id recommending using digital cooking scales like these so you know youre getting an accurate measurement.

Everyone needs a healthy pizza crust recipe in their arsenal. No matter what diet you may be on, pizza is a must, am I right? And this paleo almond flour pizza crust is here to deliver.

The frozen pizza I remember from my college days is a far cry from the homemade versions that I make now. This almond flour pizza crust recipe is gluten-free, naturally low in carbs, and believe it or not, its actually good for you. Its also packed with protein from eggs and healthy fat from coconut oil and almonds, as well as vitamins and minerals.

Classic keto fathead pizza and cauliflower pizza crust are still my two best low carb crust recipes, but for those that want to reduce dairy or need a paleo-friendly option, this is the best of both worlds.

For the best almond flour crust pizza, the choice in flour makes a huge difference. Some brands create crusts that bake up too wet, flimsy, or lacking in flavor. I only use Wholesome Yum Almond Flour for this crust because it creates the best texture and neutral flavor for all my favorite paleo pizza toppings perfect every time!

Freezing Uncooked Gluten Free Pizza Crusts

If youd like yet another way to prepare several of these yummy gluten free pizza crusts in advance, freeze them and bake them later all at one time hop to In Angelas Kitchen for her how-to photos of how to make your own frozen pizzas with my mix! Angela:

Cut 8 parchment circles 2 inches larger than trays. Lightly oil trays so parchment sticks, put parchment circles on trays, then oil parchment. Set aside.

Working with only 4 crusts at a time, mix together 4 crusts according to the package directions. Divide pizza crust between 4 prepared trays. Drizzle a bit of olive oil over each crust. With well oiled hands, pat out pizza crusts, leaving a ridge at the edge to contain toppings.

Spread pizza sauce onto each crust. Add toppings.

Wrap each pizza well, label and freeze. Repeat with remaining pizza crusts and toppings.

To bake: unwrap pizzas and remove from trays. Place pizza on your favorite pizza baking pan, pizza stone or directly on the baking rack of the cold oven. Close oven door. Set oven to bake at 400 degrees F. Check pizza after 25 minutes. Depending on toppings, bake for another 15 to 20 minutes until crust is baked through and toppings and bubbly and cheese is melted. Enjoy!

What Youll Need To Make This Crust:

  • Active Dry Yeast: I use active dry yeast from Bobs Red Mill. This gives the crust its lift and fluffiness! Bobs yeast comes in a bag instead of individual packets which I love and always activates well and quickly.
  • Sugar: this sugar doesnt add sweetness per se, its used to feed the yeast and help your dough get nice and active.
  • Psyllium Husk: dont skip or replace this! It gives this gluten-free pizza crust its chew and elasticity. It also makes the dough super easy to work with!
  • Filtered Water: filtered is always best so minerals and chemicals in hard water dont interfere with the rise.
  • Starch: I used Bobs Red Mill Potato Starch for the starch component. Tapioca flour and arrowroot flour also work well here, or you can use a combination of these starches, which add a light and fluffy texture and help the crust get crispy.
  • Gluten-Free Whole Grain Flours: I used a combination of Bobs Red Mill Brown Rice Flour& Millet Flour for the one you see in the photos! Ive also experimented with sorghum flour, quinoa flour, and white rice flour, and all of the combinations have worked super well!
  • Salt: a must for every recipe!

Can I Freeze Your Gluten Free Pizza Base

Yes! Thats what we usually do with them I often double the quantities of this recipe and make four pizza base. We then usually eat two for dinner and freeze two for next time.

You can keep them in the freezer in an airtight container for up to 2-3 months with or without toppings.

When you want to eat them, you can cook them straight from frozen by placing them into the oven on a baking tray at 200C for 10-12 minutes. Again, when theyve got back their slightly crisp exterior, theyre ready to top!

Whats Different About This Gluten Free Pizza

Cauliflower and other veggie-based crusts are great, but sometimes you need something a little closer to classic pizza to satisfy your cravings. This Paleo pizza dough bakes up into a gorgeous pie with just the right amount of crunch around the edges.

The middle of the pie is more chewy than crispy, but holds its own well enough to not sag under the weight of whatever toppings you choose. Youll just need two Paleo-style flours to make this Paleo pizza crust, and it will fool your friends with how close it tastes to traditional pizza.

You Mention A Pizza Stone In Your Directions I Don’t Have One

First, I highly recommend getting a pizza stone if you don’t have one. It really makes a huge difference when you make gluten-free pizza.

But no worries. If you don’t have one, simply use a heavy baking sheet.

If you don’t have a heavy baking sheet then you can use a cookie sheet. Let it preheat in the oven just as you would a pizza stone.

You can do this before you make your gluten-free pizza dough.

How To Make Gluten

  • Preheat your oven to the proofing setting or to 200°F. Once it gets to 100°, turn off your oven.
  • In a large bowl, combine the all-purpose gluten-free flour, instant yeast, gluten-free baking powder, and salt. Stir to combine the ingredients.
  • Warm the water to 110°-115°F. I microwave the water in a large glass measuring cup for 45 seconds. I also use a thermometer to check the temperature. If your water is too hot it will kill the yeast.
  • Add the honey to the warm water and stir until it is dissolved.
  • Pour the warm water and honey mixture into the gluten-free flour mixture and mix with your mixer on low. .
  • Pour the olive oil and apple cider vinegar into the dough mixture and mix on low speed for 1-2 minutes, until the dough starts to form. The dough will be very sticky.
  • Place the pizza dough in a greased ovenproof bowl and cover with plastic wrap. Cover the bowl with a towel and place in your warm oven for 30 minutes to rise.
  • Remove the dough from the oven and preheat the oven to 425° F.

Freeze The Parbaked Gluten Free Pizza Crust

If youd prefer to have a half-baked crust on hand, dinner can be as easy as a premade, packaged frozen pizza crust. Just follow the recipe instructions through step 3 below.

After the crust has been parbaked for about 7 minutes in a 400°F oven, allow it to cool completely. Once the crust has cooled completely, wrap it very tightly. I like Glad Press n Seal freezer for this sort of thing.

Place the parbaked crust in the freezer for up to a month. Even better than Press n Seal is a food sealer that removes all trapped air from the container, since trapped air is what causes freezer burn.

How Long Can I Keep Your Gluten Free Pizza Base For

Theyre best eaten fresh as they will start to lose their crisp, freshly baked exterior unless eaten a few hours after baking. However, you can keep them in an airtight container in the fridge for up to 3-5 days before topping them.

Then when you want to enjoy one again, simply reheat in the oven at 200C for 5 minutes. When theyve got back its slightly crisp exterior, theyre ready to top!

Scooping The First Two Crusts

  • Move the bowl of dough to your work area and turn on your scale, set to grams. Put a small bowl on top of the scale and tare to zero. Spray the bowl you will be scooping into, the spatula, and the scooper with non-stick spray. Have a bowl of hot water nearby to dip your hands into.
  • Start scooping the dough into the bowl on top of your scale until you reach 260g. If you need to take the dough out of the bowl on the scale, wet your hands before touching the dough. Once you have 260g in your bowl, wet your hands and slid it from the bowl to one of the sheets of prepared parchment paper. Scoop and measure out the second dough ball and add to another sheet of prepared parchment paper.

This is a trick question, right? I made this crust on the firm side, so the pizza wont get soggy. It keeps well for up to a week when kept in a sealed container in the refrigerator. That is, if you can keep it hidden that long.

So if youre wondering if you can make this fruit pizza the day before the festivities, the answer is yes! Just be sure to keep it stored in the refrigerator until youre ready to serve it.

Gluten Free Pizza That Is Actually The Real Deal

Gluten-Free Pizza Crust (Dairy-Free & Vegan)

For gluten free pizza dough:

  • In a large bowl, mix together all dry ingredients.
  • In a smaller bowl, mix together all wet ingredients.
  • Add the wet ingredients to the dry ingredients, and mix until you get a very sticky dough.
  • Turn the dough onto a work surface and use a bench scraper to work the pizza dough. I like to spread the dough onto the surface, scrape it off, and repeat this for about 2 minutes. Even if the dough is sticky, DO NOT add flour.
  • Place the dough into a well-oiled bowl, cover with cling film and allow to proof for 2 â 3 hours. The dough probably wonât double in volume, but it should rise slightly.
  • In the mean time, prepare the tomato sauce and toppings.

For simple tomato sauce:

  • In a saucepan or small pot, add the crushed canned tomatoes, salt and pepper. Cook on medium heat for 15 â 20 minutes with occasional stirring, until slightly reduced .
  • Add the olive oil, chopped garlic and oregano. Cook for a further 3 â 5 minutes with occasional stirring.

My Dough Was Too Dry And Cracked And Crumbly

If the dough seems a little crumbly in the bowl, get it out of the bowl and knead it on a floured surface first before adding any extra wet ingredients.

This will ensure that its truly combined and there isnt any yoghurt not properly mixed in at the centre of the dough. If you measured out all of your ingredients accurately, you should avoid getting dough thats either too dry or cracks and crumbles.

Can You Make Your Own Pizza Sauce

Yes! If you have ever read the nutrition label on a jar of pizza sauce, then you know it only takes a few ingredients to make your own. In fact, you can make most tomato-based sauces with a can of tomato sauce and a numerous spices. This sauce has a medium thickness. If you want a thicker sauce, add a can of tomato paste.

To make your own pizza sauce, I suggest starting by sauteing a few cloves of minced garlic in olive oil. Then add a can of tomato sauce. Next, add your seasonings. Use the seasonings listed on the label of your favorite store-bought pizza sauce or dress it up even more. I like to use garlic powder, onion powder, Italian seasoning, oregano, basil, parsley, and sometimes even a touch of cumin, paprika, or turmeric.

In my experience buying Whole Foods canned pizza dough for recipes like this pear and goat cheese pizza, or getting classic Pilsbury pizza dough in the can, it is a bit more like puff pastry.
