  • Preheat oven to 375°F.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  • Add the egg , molasses, and pure vanilla extract to the butter mixture and mix until fully combined.
  • Add the gluten-free flour, baking soda, baking powder, and salt to the butter mixture and mix until fully combined.
  • Either stir in the chips with a spoon or use your mixer on low to mix the chocolate chips into the cookie batter.
  • Drop by rounded tablespoon or use a greased cookie scoop. .
  • Place the cookies 2 inches apart on a parchment-lined cookie sheet.
  • Bake for 8-10 minutes until they start to turn golden brown . Please watch your oven because all ovens are different.

How To Make A Gluten Free Peach Dump Cake

To make this easy peach dump cake, first you will preheat the oven to 350F and grease a baking pan with cooking spray.

Next youll combine your peaches, sugar, cornstarch, lemon juice, and cinnamon in one of the mixing bowls and pour it into your prepared baking pan.

In the other bowl, youll measure out your cake mix and combine it with the cinnamon.

Sprinkle this mixture over your peach mixture and spread out until fairly even.

I thought there was no difference in regular cookie dough and edible cookie dough, until I started making my own.

The key difference between the two is that regular cookie dough includes white or all-purpose flour in its raw state and often, raw eggs. You dont need to do anything to it- simply bake the dough in the oven, as you would with any cookie or cake recipe.

Even if you make vegan chocolate chip cookies, they still contain raw, inedible flour.

Edible cookie dough, on the other hand, requires the flour to be heat treated first.

Heat treating flour involves baking the flour and allowing it to cool, before mixing in the other ingredients. Treated flour will ensure that the flour is free of any food pathogens, kills germs and avoids any bacteria to be present.

Edible cookie dough also must NOT contain any eggs.

Give The Dough A Rest

After you mix the dough altogether its important to give it a 30-minute rest. This gives the gluten-free flour time to hydrate and really makes a difference. Its key for non-gritty gluten-free cookies!

Luckily just a room temperature 30-minute rest will do and no overnight-in-the-fridge chill is needed. So you can still have chocolate chip cookies shortly after a craving strikes!

How To Make Cookies From Cake Mix

It couldnt be easier to make cookies from cake mix, but there are a couple of things to know going in.

  • You will use dramatically less liquid than you would if you were making cake mix
  • You should refrigerate the dough for half an hour before baking them to make them easier to mold
  • They will flatten out after you remove them from the oven.

My vegan cake mix cookies require just a few simple ingredients:

  • King Arthur Gluten-Free Chocolate Cake Mix
  • 1/2 cup sweet potato
  • 1/3 cup canola oil
  • 1/2 teaspoon baking powder
  • Powdered sugar for rolling, about 1 cup

First things first, the sweet potato, oil, and baking powder need a good beating together.

Then, add the cake mix and mix mix mix. Youll be thinking that these dairy free cake mix cookies arent going to work out, but I promise they do.

Then, add 3 Tablespoons of water 1 tablespoon at a time, mixing in between.

When the dough is crumbly, it is ready. Be sure you can shape it into a ball like this:

Next, refrigerate for half an hour.

The secret to these cookies is rolling them twice in powdered sugar. Start by rolling them into balls, then coating in powdered sugar. Make a second trip around, and coat them twice.

Then, simply place them on a baking sheet, and bake for 10 minutes.

After they come out of the oven, they will flatten out a bit more, and you are ready to enjoy them.

These come together so quick and easy, and are a favorite at our house for just about every occasion.

Can I Freeze This Gluten And Dairy Free Cake

For longer storage, wrap this cake tightly in freezer-safe wrap like Glad Press n Seal. You can freeze it frosted or unfrosted, but its easiest to store the uncut cake unfrosted.

If you have leftover cake thats already been frosted, slice it into squares and wrap each frosted square tightly on its own, then freeze. Defrost at room temperature, or even in the refrigerator, for a dairy free, gluten free treat any time.

This recipe is designed to be made either in 2 8-inch round cake pans, or the standard wells of a 12-cup muffin tin. I always recommend baking in cast aluminum, which conducts heat well but not too well, and is light in color so it doesnt burn the outside by attracting too much heat in the oven.

Since the recipe calls for 4 eggs, you can easily cut the ingredients in half, right down the middle, and make either 1 cake or just 12 cupcakes. The cupcakes do freeze really well, though, if you make the whole recipe but dont have a need for all 24.

If your pan is 9-inches in diameter, rather than 8-inches, it will make shorter cakes that bake faster. Begin checking at 25 minutes.

Keep in mind that theres no truly standard size well in a standard 12-cup muffin tin. So you may get more or fewer cupcakes than the recipe states.
