    These air fryer biscuits cook perfectly and quickly in the air fryer but you can also bake them in the oven. Just drop the biscuit dough as directed onto a baking sheet lined with parchment paper and bake the biscuits in the oven at 450 degrees F for 10-12 minutes. Remove them and brush them with the melted herb, garlic butter and enjoy!

    Making Drop Biscuits In Advance

    If you want a way to prepare fresh drop biscuits without having to go through all the prep work, consider freezing some. All you have to do is prepare the biscuit dough, drop the biscuits onto a parchment lined baking sheet, and then put the whole thing in the freezer rather than the oven.

    Once they’re frozen, remove them from the freezer and pile them into a zip-top bag. Now, you can pop them out whenever you need a biscuit. Bake right from frozen by just adding a few minutes to the baking time.

    This recipe contains butter and Kefir. I would not recommend making dairy substitutions. If you need gluten and dairy free biscuits, try Allergy Free Alaskas Gluten Free Biscuits.     I created this recipe using Cup 4 Cup Multipurpose Flour. I have tried this recipe with other flour blends, and DO NOT recommend using a different flour. Using a different flour blend will result in a denser biscuit. If you prefer to use Bobs Red Mill, try these Gluten Free Southern Biscuits from Gluten Free Palate. If you use King Arthurs Measure for Measure, try these Gluten Free Buttermilk Biscuits from Bakes & Blunders.

    • 1 1/2 cups Cup 4 Cup Multipurpose Flour Blend
    • 1 1/2 tsp baking powder
    • 1/2 tsp baking soda
    • 6 tbsp butter, frozen and grated
    • 3/4 c Lifeway Organic Plain Whole Milk Kefir

    Recipe Step By Step Directions:

    Step 1: Add your dry ingredients to a bowl and whisk the ingredients to blend them. Add the 5 tablespoon of cold butter.

    Use a pastry blender to cut in the butter into the flour. Many wonders if they can use a food processor to cut the butter in. I find a food processor overmixes the butter in and you lose some of the flaky layers.

    Step 2: Your flour mix will look like it has crumbs like in this photo.

    Step 3: Add the milk and mix.

    Step 4: Your dough should look similar in consistency to this.

    Step 5: Put the dough on wax paper. You may want to dust it with a tiny bit of gluten free flour. It depends on which gluten free flour blend you use. Press to 1 ½ inch thickness. Use a biscuit cutter to cut out biscuit shapes from the dough. If you prefer, you can use a large ice cream scoop or cookie scoop to make drop-style biscuits.

    Step 6: Brush the top of each biscuit with milk. This will help your biscuits get that nice golden color on top.

    Step 7: Bake at 425º F for 15 minutes.

    Step 8: Here are the test batches. I baked one at a time, so each cooled on the wire rack and then transferred to another tray while the next set cooled.

    The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Friends, please do not scoop the flour out of the bag with your measuring cup.

    There are so many ways to eat these tender and flaky gluten-free buttermilk biscuits. I love to drizzle them with honey or slather them with strawberry jam. I also like a savory sausage biscuit or a bacon, egg and cheese biscuit.

    First, one batch of dough for my Gluten Free Biscuits weighs between 15-16 ounces. A can of Pillsbury biscuits weighs 16 oz. Also, the beauty of this biscuit dough is that it freezes well ! Prep a batch of these over the weekend, stick the uncooked biscuits in the freezer, and then pull out how many you need and bake them from frozen!

    Also, these dont take a long time to make. This recipe only uses 6 ingredents- flour, salt, baking powder, baking soda, butter and Lifeways 3.25% Plain Kefir. One batch of my Gluten Free Biscuit dough should take you less than 20 minutes to pull together.

    My Biscuits Turn Out Heavy How Do I Fix This

    Heavy biscuits are so disappointing. Here are some dos and donts for light gluten-free biscuits.

  • Dont Use Old Baking Powder or Baking Soda. The biscuits lift comes from baking powder and soda. Make sure they are fresh for the best result.
  • Do use a gluten-free flour blend that contains xanthan gum or add your own. The best gluten-free biscuits include xanthan gum. This ingredient helps the biscuits hold their shape. If your blend doesnt include it, add 1 teaspoon of xathan gum to the flour mixture. Whisk everything together and then follow the recipe as written.
  • Dont use warm ingredients. Use cold butter and yogurt. One of the keys to light biscuits is cold butter and cold yogurt. If your hands are warm, use a pastry cutter or food processor to work the butter into the flour.
  • Do let the dough rest. Mixing the dough and letting it sit for about 20 minutes allows the flour to absorb the liquid. This prevents the biscuits from spreading.
  • Can I Use This Gluten Free Biscuit Recipe To Make Gluten Free Monkey Bread

    No. I tried it, and it doesnt really rise well enough. I recommend the Gluten Free Monkey Bread recipe I have on my site. Another person mentioned they previously used Pillsbury biscuits to make Gluten Free Pigs in a Blanket. I would recommend using my recipe for that, which uses yeasted cresent dough.

    Gluten Free Flour Blend Notes:

    Most of the gluten free flours behaved similarly when mixed with the other ingredients. I did not measure the flour amount by weight as each blend needed tweaking Here are a few things that stood out:

    • King Arthur Measure for Measure – The gluten free biscuit dough was wetter than the other flour blends. It didn’t affect the amount of rise but the dough spread out a little more than others when baking. I didn’t add additional flour but used about two teaspoons of flour sprinkled on the top so I could press the dough down enough to use the biscuit cutter.
    • Better Batter Artisinal Gum Free – I had to add two tablespoons of additional milk, so the biscuit dough wasn’t too stiff.
    • Bob’s Red Mill 1 to 1 Gluten Free Blend – I felt the dough was workable without additional flour or milk.
    • Cup4Cup – The biscuit dough this flour made was fine without adding any extra flour or milk.
    • Pillsbury Gluten Free Flour Blend – This flour performed really well.
    • Target Good & Gather Gluten Free Blend – The biscuits tasted great, but they are a little more crumbly than other gluten free blends used.
    • Just About Food Whole Grain Gluten Free Blend – I had to add almost ½ cup additional flour because the biscuit dough was so wet with just 1 cup of milk. Again, this flour was terrible, and I don’t recommend using it.

    Preheat The Oven So Your Raw Ingredients Stay Cold

    Speaking of melted butter, you really don’t want that. If your butter liquefies before the biscuits start baking, you’re going to end up with dense little rolls.

    To help keep that butter at the right temperature for baking, be sure to turn on your oven before you start preparing the gluten free drop biscuit mix. That way, your biscuits will get right to baking as soon as you pop them into the oven.

    How These Gluten Free Biscuits Are Different

    For so long, I was so obsessed with light and flaky biscuits, with layers upon layers of buttery goodness. So when a super lovely, longtime reader named Jennifer starting asking about nonflaky biscuits, it took me a few moments to actually get it.

    Yes! I made the above dish based on the recipe on the Pillsbury website. To substiute the Campbells soup, I used Flippin Delicious recipe for homemade Gluten Free Cream of Chicken Soup. Of course this recipe for Gluten Free Biscuits would work well for Biscuits and Gravy. I like using Full Flavor Foods Cream Sauce Mix for this.
