Which Gluten Free Flour Is Best For Cakes

I personally use a Lidl UK brand, Just Free, which gives consistently excellent results. Its a simple plain gluten free flour blend containing only rice, potato and maize flour with no added xanthan gum.

In general, I prefer simple blends with few ingredients and without xanthan gum already added for several reasons. Such blends can get discontinued, and a simple blend is much easier to replicate than one consisting of 5+ ingredients.

As for the xanthan gum: as with baking powder and baking soda , I prefer to control the quantity myself, as the amount of xanthan gum can vary greatly baked on what youre baking.

In general, people have successfully made my recipes with Bobs Red Mill and other gluten free flour blends, as well as their personal blends. If in doubt, feel free to ask in the comments below.

What Flavor Is Funfetti

Theres a lot of debate around this. I believe that the unique funfetti flavors comes from a combination of clear vanilla extract and a dash of almond extract. Its funny that I call for clear vanilla extract. If youre familiar with vanilla, you know that clear vanilla is artificial vanilla. And thats the point. Boxed funfetti cake mix, the type you probably grew up eating, includes artificial vanilla. If thats the flavor you crave, grab a bottle. It makes a difference! Id use clear vanilla extract in my frosting too, for the full effect.

As for the almond extract, it adds an almost maraschino cherry flavor. The almond extract isnt required. Feel free to skip it if you dont want to buy a bottle.

How Do You Make A Gluten Free Chocolate Cake From Scratch

There are many ways to make chocolate cake from scratch, and most of them arent any harder than making it from a mix. All the mix does is provide you with already-measured dry ingredients like flour, cocoa powder, sugar, and salt.

When youre using a mix, you still have to add eggs, oil, and often water. As long as youre adding eggs, oil, and water, you may as well add some sour cream, too, and make it into this cake.

Thats really all it takes. You have to provide the pan either way, right? And bake it in your oven.

Just whisk the dry ingredients and you have your chocolate cake mix. Make a well in the center, and add the wet ingredients and mix. Pour into the pan, smooth the top, and bake.

Gluten Free Dairy Free Cake

There isnt as much dairy in this cake as you might expect. Since cocoa powder works well to create chocolate richness with oil, there isnt any butter in this recipe. Just be sure the chocolate you use in your ganache is dairy-free.

The only dairy in the cake itself is the sour cream. Sour cream can be replaced in baking with plain Greek-style yogurt. If youre dairy-free, use nondairy yogurt.

If you only have plain regular yogurt, try straining out enough liquid until its looks like sour cream. Then measure and use that. If youre dairy-free, again just use nondairy plain yogurt.

The dairy in the ganache is heavy whipping cream. That can be replaced with coconut cream, if youre dairy-free.

Just be sure not to use canned light coconut milk, which has added water. Your coconut cream must be from a can, not from a carton of milk which is nearly all liquid.

How To Decorate The Gluten

Healthy Gluten-Free Birthday Cake

If you’re new to cake decorating use these easy steps to ice your cake:

  • Place the base cake on the cake turntable.
  • Add a few scoops of icing to the cake and use the icing spatula to evenly cover the cake. You can make it as thick or thin as you want on top keeping in mind this will be the “middle” of the cake when cut.
  • When finished, add the other birthday cake on top and repeat the process. Spoon some of the icing onto the cake and use the icing spatula to smear it around while rotating the turntable.
  • Use the smaller icing spatula to add icing evenly to the sides of the cake so that it is fully coated.
  • Finally, spoon some of the icing into a piping bag with your tip of choice and pipe flowers on to the side of the cake as well as the top.

    Customizing Your Gluten Free Chocolate Cake

    Honestly, I dont think this yummy cake needs anything else just slice it up and enjoy with a cold glass of milk or almond milk!

    But if youre looking for a way to make yours a little bit more unique, you cant go wrong with sprinkles. Choose chocolate ones or rainbow-colored ones they all work just fine.

    For an even more chocolate-y cake, you could even use chocolate chips in place of sprinkles!

    Note that many sprinkles and chocolate chips are gluten free, but youll still want to carefully check food labels to be sure.

    How To Make Chocolate Buttercream

    • In a large bowl, cream butter until smooth with a stand-up or hand mixer.
    • Add the pure vanilla and almond extract to the butter. Mix until fully combined.
    • Add the cocoa powder and mix until fully combined.
    • Add the powdered sugar, one cup at a time, to the butter mixture and mix until fully combined.
    • Add the milk to the frosting and beat until smooth and spreadable.
    • Place the first cake on a plate or a cake plate.
    • Frost the top of the first cake. This will be the frosting in the center of your cake. I like a good amount of frosting in the center.
    • Place the second cake on top of the frosted first cake.
    • Frost the top and side of the cake with the remaining frosting.
    • I decorated the top with gluten-free sprinkles and frosting flowers using a Wilton 1M tip.

    Its a frequent question I get asked, and the short answer is: no.

    The long answer: if a gluten free cake is made correctly, following a reliable recipe and using a gluten free flour blend you know and trust then you wont be able to tell the difference.

    And it doesnt really matter if its a gluten free chocolate cake, a gluten free vanilla cake or a gluten free carrot cake. The only instance where you might taste the difference is if you use a gluten free flour with a strong taste, such as chestnut or chickpea flour.

    But for this recipe , gluten free cake shouldnt taste any different from its wheat-based counterpart.

    How To Measure Gluten Free Flour

    How you measure your gluten free flour is also very important.

    To accurately measure your flour, use the fork, spoon, knife method.

    First, mix your gluten free flour with a fork to ensure it is aerated and evenly mixed.

    Then carefully spoon it into your measuring cup.

    DO NOT scoop the flour with your measuring cup, youll compact extra flour into the measuring cup and then your gluten free baked goods will be dry and crumbly because they’ll have too much flour.

    Finally, level off your measuring cup using a knife.

    How To Use The Formula For Making This All Purpose Gluten Free Flour Blend

    To prepare each all purpose gluten free flour blend below in whatever quantity youd like, apply each percentage listed for each individual flour to the total quantity of flour that you plan to make, one by one. Add the amounts together, and youll have the total.

    For example, if you wanted to put together 140 grams of flour , using the Mock Better Batter Blend, heres the math:

    30% BRF = 30% x 140 grams = 42 grams superfine brown rice flour30% WRF = 30% x 140 grams = 42 grams superfine white rice flour15% TS/F = 15% x 140 grams = 21 grams tapioca starch/flour15% PS = 15% x 140 grams = 21 grams potato starch5% PF = 5% x 140 grams = 7 grams potato flour3% XG = 3% x 140 grams = 4 grams xanthan gum2% PPP = 2% x 140 grams = 3 grams pure powdered pectin

    If you add up all the numbers, it will equal 140 grams . So make as much or as little as you like.

    Now I know that many of you are going to want to tell me about how you buy your rice flour from your local ethnic market, and its plenty fine for you. Or that you grind your own.

    Or something else entirely. But if you want consistent quality without making a federal case out of it, you need to buy your superfine flours from Authentic Foods.

    • Use parchment paper: Always line your cake pans with parchment paper to avoid having them stick.
    • Freeze your bowl: Put the bowl that youll use for whipping the cream in the freezer for a few minutes and use very cold heavy cream to help it whip better. Try to whip it just before you are going to assemble the cake.
    • Dont over beat: Be sure not to over beat the whipped cream or it will separate and turn into butter.
    • Make in advance: You can serve the cake right away, but I recommend making it a few hours in advance or the night before so that the cake gets super moist from absorbing some of the moisture from the whipped cream. However, I wouldnt recommend storing leftovers for more than a day or so. It tastes best when fairly fresh.

    Are Lemon Juice And Lemon Extract The Same

    I often get ask if can you use lemon juice in place of lemon extract and vise versa. Itâs not the same. Lemon juice is acidic and canât be replaced with extract which is usually alcohol based.

    Similarly, fresh lemon juice and bottled juice react differently. In many cases bottled lemon juice causes batter to get rubbery.

    If a recipe calls for fresh lemon juice, use fresh lemon juice. If it calls for lemon extract, use lemon extract.

    In this recipe, you want to use lemon Extract for the cake batter and lemon Juice for the frosting.

    How To Make Gluten

    • Preheat oven to 350°F. Cut parchment paper for the bottom of your two 8-inch cake pans and spray with gluten-free cooking spray.
    • In a large bowl, cream the butter and sugar until smooth.
    • Add eggs and vanilla extract and mix until fully combined and smooth.
    • Add gluten-free flour, baking powder, and salt and mix until combined.
    • Pour in milk and mix for 2 minutes on medium until batter is smooth.
    • Stir in the gluten-free sprinkles.
    • Pour the cake batter into the lined cake 8-inch cake pans.
    • Bake the cake for 25-30 minutes. Please watch your oven because all ovens are different. Check the center of the cake by inserting a toothpick to make sure it is done. You will also see the sides of the cake pulling away from the side of the pan.
    • Make chocolate buttercream frosting from the steps below.
    • Allow the cakes to completely cool before frosting. I like to use a baking cooling rack.
    • Store leftovers in an air-tight container.

    Can You Freeze Cake

    Yes, you can! Its really easy to freeze cakes. Once your cakes are completely cool, wrap the cakes with plastic wrap , wrap again with aluminum foil, and then place in a freezer bag.

    The cake can be frozen for up to 3 months. You can defrost the wrapped cake at room temperature for 2-3 hours or overnight in the refrigerator. I have found that it is better to thaw the cake at a slower rate in the refrigerator.

    Tip #2 Let The Cake Batter Rest

    Sprinkle Birthday Cake

    Remember earlier when I said that gluten free flour blends can have a hard time absorbing moisture and fats?

    If you let the batter sit for a bit before baking it, you give the flour more time to absorb all that goodness. This helps thicken the batter and prevents your cake from having a gritty texture.

    I unintentionally did this as I was photographing and filming this gluten free vanilla cake batter. Youd be surprised how long it takes to get a perfect shot of pouring cake batter into a pan!

    Letting the batter sit for about 30 minutes drastically improves the texture of these cake layers, so be sure you dont skip this step!!

    While the batter rests, you can figure out how you want to decorate your gluten free cake! I decided to keep things simple by piping some frosting squiggles up the side of the cake with a Wilton 1M frosting tip.
