Dish By Dish Tips/tricks:

  • Testing the Yeast: Start off by mixing the warm water , sugar, and instant yeast in a small bowl and let it sit in a warm place for five minutes until it turns foamy. This step is important for you to check if the yeast is working. If the yeast mixture doesnt foam up, it means that the yeast is expired. Throw it away and start again with a new packet of yeast.
  • Replace Brown Rice Flour with Other Flours: I like adding brown rice flour in addition to the gluten-free all-purpose flour to add a bit more fiber and give it more of a whole grain feel. If you prefer, you can also replace the brown rice flour with other flours that are rich in fiber such as millet flour, sorghum flour, or buckwheat flour.
  • Crust Thickness: Depending on how your like your crust, you may get one large pizza or two smaller pizzas .

What Is A Dairy

While many of the ingredients are identical with the ones used for standard pizza, here is what makes them different:

1) The Dough

Local pizzaiolos typically prepare the dough with ingredients that are dairy-free . However, be sure to ask for a dairy-free pie in case the restaurant uses butter for the dough or even some cheese baked in the crust.

2) The Sauce

Since the sauce is usually made with crushed or canned tomatoes, some herbs, and spices you may think it is dairy-free, right?Well, some restaurants put Parmesan and Romano cheese in the tomato sauce , so watch out for these hidden diaries.

3) The Cheese

This pizza doesnt have to be cheese-less. But, instead of cheese made with animal milk, pizzerias make dairy-free pies with dairy-free cheese alternatives.

They can be made with plant kinds of milk, proteins from soaked or raw seeds and/or soaked or raw nuts , vegetable fats, soybeans, tapioca flour, nutritional yeast, spices, and more.

These dairy-free cheese alternatives are often melty, gooey, stretchy, and so tasty, you wont even miss the real cheese.

4) The Toppings

Although meat pies without cheese may seem like a good alternative, many processed types of meat and cold cuts can contain milk as a common ingredient. Make sure the meat used is dairy-free, or simply omit it completely.Sautéed or fresh vegetables, vegan or dairy-free cheese, and fresh or dried herbs are the best toppings for a this pizza.

How Do You Make Gluten

During quarantine last year, I did my fair share of making gluten-free pizzas from scratch . I started by making rice flour crusts. They eventually worked out, but the dough did not bind together as well as regular pizza dough. . Eventually, I decided to take a different approach and began baking with Bob’s Red Mill gluten-free bread flour, which became my favorite method.

This crust is naturally dairy-free, using extra-virgin olive oil, honey, and warm water as the wet ingredients. The dry ingredients include gluten-free bread flour, baking powder, and salt, making this crust allergen-friendly and simple to bake. A good gluten-free pizza is all about the dough. There are plenty of pizza crust recipes out there, but most of them include dry yeast, and since that’s not something I keep in my pantry at all times, here is my favorite gluten-free, yeast-free pizza crust!

I usually par-bake extra crusts to cook later when I am in a rush, so next time I want a yummy pizza, I can just pull it out of the freezer, add sauce and cheese, and bake! To make the pizza baking process even faster, you can bake the pizza in an outdoor pizza oven once the dough is made.

Caf Viva Gourmet Pizza

2578 Broadway

This pizza shop is bit of a walk from the rest of the suggestions on this list, but boy oh boy is it sure worth it! Offering a traditional gluten-free crust, rice crust, or cauliflower crust option , Cafe Vivas GF pizzas are sold by-the-slice or by pie. You can choose from the classic Napoletana or Specialé slice, both featured here, or a variety of other gluten-free-friendly slices. The dough is flavorful and not dry, two things that GF-crusts usually can be. I cant recommend this place enough. The toppings are tasty and hearty, and the slices are plentiful. Cafe Viva also made it in our list of overall best pizza places on the Upper West Side. Enjoy!

How To Make Gluten

Gluten Free Pizza
  • Preheat your oven to the proofing setting or to 200°F. Once it gets to 100°, turn off your oven.
  • In a large bowl, combine the all-purpose gluten-free flour, instant yeast, gluten-free baking powder, and salt. Stir to combine the ingredients.
  • Warm the water to 110°-115°F. I microwave the water in a large glass measuring cup for 45 seconds. I also use a thermometer to check the temperature. If your water is too hot it will kill the yeast.
  • Add the honey to the warm water and stir until it is dissolved.
  • Pour the warm water and honey mixture into the gluten-free flour mixture and mix with your mixer on low. .
  • Pour the olive oil and apple cider vinegar into the dough mixture and mix on low speed for 1-2 minutes, until the dough starts to form. The dough will be very sticky.
  • Place the pizza dough in a greased ovenproof bowl and cover with plastic wrap. Cover the bowl with a towel and place in your warm oven for 30 minutes to rise.
  • Remove the dough from the oven and preheat the oven to 425° F.

The Quest For Proper Gluten

When my husband Juan was first diagnosed with Celiac disease in 2015 and we began following a gluten-free diet, we went on a search for good gluten-free pizza but unfortunately the options that were available in restaurants or delivery in Buenos Aires were far from what real pizza should feel or taste like.

Now when I say real pizza I mean pizza made with wheat flour that could hold up on its own and wasnt soggy or too thick or felt like stiff sheet of cardboard. Im talking about pizza that is crusty on the outside and chewy on the inside. You know, basically the pizza of pizza dreams.
