At 23 years old, I have officially made my first pie. Not just any pie, but The Best Vegan Pumpkin Pie. Not to toot my own horn but its freaking amazing.

The fall season is the perfect time to make a pumpkin pieespecially for Thanksgiving dinner.

If you are looking for a healthier version of pumpkin pie. Stop right here this is the best one. Its super simple, delicious and beyond easy to make.

Easiest Vegan Pumpkin Pie Ever.

The best vegan pumpkin pie starts with an oatmeal cookie crust. YUM! The filling is made in the blender and then poured right into the crust, does it get any easier than that?!

100% plant-based, gluten-free, oil-free optional and WFPB. I dare you to find a pumpkin pie with cleaner ingredients than this one.

Once the pie is done being prepared, it goes into the oven for only 35 minutes. I am not a fan of complicated recipes that take all day to make so if youre busy but still want to have a pie ready for your family + friends, I gotcha covered.

I promise you, if you bring this to Thanksgiving dinner, your guests will be SO impressed with how delicious this tastes .

How To Make A Vegan Quiche

This easy quiche recipe is made up of just four simple steps. For the full ingredients list, measurements, and nutritional information, then please find the recipe card below.

Step 1: Prepare The Pie Crust

  • Begin by preparing your flax egg by combining 1 tbsp of ground flax seeds and 3 tbsp of water into a small bowl and mixing well. Leave this aside for 5 minutes.
  • When ready, add the flax egg, along with all other pie crust ingredients to a food processor and blend until a dough forms and is clumping together. Alternatively, add the ingredients to a large bowl and knead into a dough with your hands. Add a splash of extra cold water, if it feels a little dry.
  • Next, roll the dough into a ball, wrap it in plastic wrap, and chill in the fridge for around 30 minutes. During this time, you can move on to Step 2!
  • Once chilled, remove the dough from the fridge, roll it out to fit the bottom of an 8-9 Pie Pan. Press it into the pan without around 2 inches of pastry up the sides of the tin. Place back in the fridge.

You make a wet mixture with cooked veggies like Idaho potatoes, beets, sweet potatoes, and carrots.

You can fiddle with the amounts, but you can always add more dry ingredients if you need to.

If you are missing one ingredient you can double up on another. I like to keep with root veggies and ones of those that mash easily.

The beets are the exception because they dont mash smooth, but they add the perfect color!

The dry ingredients add the body and texture to the gluten-free hot dog, and the herbs and spices add the flavor.

  • 1/2 cup brown rice flour
  • 1/2 cup teff or quinoa flour needs to be a high protein flour
  • 1/2 cup oat flour
  • 1 teaspoon paprika

  • For helping dough rise > Place rising dough in oven with light on . After it has risen, preheat oven and bake.
  • Tip for handling sticky dough Skip the kneading by hand. Knead in the stand mixer with dough hook, then place the dough straight into the pan. Cover and let is rise in warm place. Then bake!
  • A Gluten Free All Purpose flour without thickeners works best! You will be adding in a thickener to help with give the bread texture and softness. If you add in too much xanthan gum or guar gum, the bread will be too hard.

What Kind Of Yeast Do I Use To Make A Vegan Bread Recipe

Here are the facts. If you dont bake very often, yeast can be sort of confusing. Look at the shelf at the grocery store there are SO many different types! As a result, some are better for baking pizza dough and others are best for bread. It gets even more confusing when you realize that there are actually just three types of yeast. Allow me to explain


There are three types of yeast two are dry yeast and then there is cake yeast, which is a wet yeast. Well discuss that another day. Lets focus on the types of dry yeast you can use to make vegan bread.

  • Regular Yeast
  • Instant Yeast Other names for this include quick-rise, rapid-rise, and bread machine yeast,

You can use either type of yeast to bake bread with, but each type has advantages.

Baking with active dry yeast often requires two proofing sessions, meaning, the yeast has to be activated and then again when the bread rises before baking. Personally, I like to let the bread rise right in the pan and skip second rise, going straight to baking.

Also, active yeast has a longer shelf life than instant yeast well over a year if you keep it refrigerated. This is the yeast I used for this vegan bread recipe and the bread has lasted me a good while in the fridge! LOVE IT!

Instant yeast is what many bakers choose, simply because its quicker to make things with. If you make vegan bread with instant yeast, it only requires a single rise . As a result, you get to enjoy that warm bread sooner!

Just because you dont do gluten, doesnt mean you cant do grains! Come on guys, its all about ball bearings, just kidding. Quinoa, oats, rice, and other grains do not have the same structural protein as spelt, wheat, and rye, so you can eat them if youre celiac. You cant eat them if youre a grain and gluten-free vegan, but give them a go if you can, or try garbanzo and coconut flour.

The corn chips I replaced with Plentils Lentil chips are great because they bring a little more protein to the table than corn chips, plus the lentil chips contain no saturated fat.

Add in the black beans for another heavy hit of protein and all of the veggies for, well . . . all that veggies bring: vitamins A and C, iron, phytonutrients, and the list goes on!

How Do I Make Homemade Vegan Gluten

Steam the veggies in your Instant Pot for 15 minutes, so they are fairly firm when you mash them and dont dissolve in the cooking water that will happen if you overcook them.

With that being the wet base, you drain the cooked veggies well, then mash.

I do it by hand instead of in my food processor because I like to see some of the veggie pieces in the dog.

Mix all the dry ingredients together well, then add to the wet and mix with your hands. It should be the consistency of clay or play-dough.

You may need to add extra dry ingredients if the mixture is too wet or try letting the dough rest for 20 minutes.

Prepare a large cutting board by sprinkling with extra brown rice flour. This will keep the dogs from sticking.

Cut 16 equal pieces each of parchment paper and foil for the dogs. Wrap in parchment paper, then in foil. Twist the ends.

Place the rolled hot dogs on a steamer or in a steamer basket.

Cook on high pressure for 35 minutes and release the pressure manually.

Unwrap the veggie dogs, place them on a cooling rack to dry. They may seem extra wet at this point.

If you are not in a hurry its nice to let them cool all the way down before you do this!

Freeze any you wont be using and cook the rest on your grill or in your air fryer.
