Colavita produces most pasta in an egg-free facility however, they produce some pasta in a facility with eggs. Heres the allergen information I got via email from Colavita customer service inMay 2021:

Our Colavita Long Fusilli, Colavita Lasagne, and our Colavita Gluten Free Pasta have a risk of cross-contamination with eggs because these items are produced in a separate factory that produces egg pasta on the same machinery.

2 yearsthats how long I was strictly gluten free.

To be honest, I felt like a death sentence. As an Italian I feel like bread and pasta run through my veins. How was I supposed to physically survive without these in my life?!

Well guess what? I did! And I learned a lot along the way. First of all if you cant have gluten for whatever reason , you can still eat delicious food. Especially today when there are soooo many amazing alternative options!

I tried every single gluten free pasta. There was one that I felt was close-ish but this homemade gluten free egg pasta takes the cake! I feel like I could fool some people . Youd never know they are gluten free.

In order to make this recipe a success in your home here is what you need to know.

#1- Your flour matters. Not all gluten free flours are created the same. I tested several different flours and even employed my gluten free expert friend Chandice to help test the recipe and flours as well. *Side note: if you are interested in trying sourdough gluten free pasta she has a tutorial on how to make a gluten free sourdough start!

**NOTE: whatever flour you choose just make sure it has xanthan gum in it as it acts as a binder to keep everything together. You can always add xanthan gum to your flour before adding the rest of the ingredients.

  • 1 cup 1:1 gluten free flour

Do I Need A Pasta Machine To Make Fresh Homemade Pasta

I find its easiest to use a pasta machine here, but this is only necessary if you really really love making pasta! Pasta machines can be on the pricier side, so if youre just going to make pasta once, then getting a machine might not be worth it.

However, if, like me, you like how simply you can make the ingredients , then a pasta machine might be worth the investment!

That being said, heres a great video on how to make pasta without a machine. Youll simply fold the dough, as we mentioned above, and use a sharp knife to slice each strand.

Make sure you flour your work surface very well!

Is It Easy To Make Fresh Eggless Pasta Dough

If youve ever made homemade pasta dough before, you know that typically, people like to use eggs. But you can easily make fresh pasta without eggs!

This wonderfully simple, quick, easy, and beginner friendly pasta dough recipe is the perfect vegan pasta that everyone will love.

The only thing we really need to focus on is swapping out the eggs from the pasta. To do this, Ive offered two options for making homemade pasta dough.

Rolling Out The Gluten Free Pasta Dough

The amount of ingredients in the recipe below makes 4 nests of tagliatelle-like gluten free pasta, so well cut the dough into four evenly sized pieces. If you want to be extra precise, feel free to weigh the pieces to get them to the same weight.

Wrapping the three pieces of dough we wont use immediately in cling film ensures they dont dry out trying to roll out dried out pasta dough is a nightmare and, trust me, you will want to avoid it.

Now, Ive rolled out the pasta dough with a pasta machine its handy, quick and it doesnt make your hands tired. Plus, you feel like a total pasta making badass, and thats a helluva feeling. But if you dont have a pasta machine, you can easily follow the exactly same procedure with a good ol rollin pin and a bit of elbow grease.

First, well flatten the piece of gluten free pasta dough a bit and flour it generously on both sides. Well then pass the flattened piece through the pasta machine, starting on the widest setting. Well stay on this setting for a few minutes, so get comfy.

Now, different pasta machines can have different widest settings. What Im trying to say is that the widest setting can produce pasta sheets of different thicknesses. In my case, the widest setting gives pasta sheets about 2 mm thick, which is actually quite thin compared to some other machines. Moral of this side-story: get to know your pasta machine.

  • 1 jar pasta sauce of your choice

Directions

  • Prepare gluten-free spaghetti according to package directions.
  • In a large skillet over medium-high heat, brown ground beef halfway, then add the chopped onion, red pepper, Italian seasoning, salt, and pepper and cook until meat is fully browned.
  • Add garlic, carrot, and zucchini, and cook about 3 more minutes enough to soften the veggies.
  • Add the pasta sauce and stir to combine everything. Let the sauce warm through and simmer about 5 more minutes.
  • Serve meat and veggie sauce over spaghetti.
  • For a dairy-free parmesan cheese substitute, try sprinkling nutritional yeast or grate roasted almonds on top.

    Why My Family Loves This Gluten Free Vegan Pasta

    First, I must apologize for the lack of noodles in the above picture. Im sure you can imagine the many uses for a plate full of fresh noodles that a 6 and 3 year old boys imagination could muster up . I am also sorry that this post is going out so late, I was without an internet connection today and the idea of taking the aforementioned 3 year old to Starbucks is definitely not my idea of a good time!

    Anyhooif you happen to be a friend on , then you are aware that I had some fun on Sunday experimenting with making homemade gluten-free pasta . Oh, did I forget to mention that it also happens to be free from all the Top 8 Allergens?

    What To Keep In Mind When Choosing A Gluten

    Of course, nutritional content isnt all that should be considered when choosing a gluten-free pasta taste and texture are key too. Gluten-free pasta tends to be made from grains that have a more robust flavor than traditional pasta. It can be a bit of a shock for someone who’s accustomed to white pasta to make the switch in the same way that whole-wheat pasta can be, says Stephanie Pixley, the deputy editor at Americas Test Kitchen, a cooking resource that publishes many cookbooks, including How Can It Be Gluten Free.

    When choosing a gluten-free pasta, think about how you plan on using it. Are you going to top it with tomato sauce? A cream-based sauce? Pesto? Just a little olive oil and garlic? Once you have that figured out, Pixley says to then think about how the flavor of the different gluten-free pasta ingredients would pair with what youre making it with. For example, do you like the idea of chickpeas paired with pesto more than you do the idea of lentils and pesto paired together? Then chickpea pasta is your best bet. Or do you think red lentils sound great paired with a hearty tomato sauce? If so, go for red lentil pasta. If youre looking for a gluten-free pasta thats super versatile, Pixley says to consider brown rice-based pasta, which is the most neutral in taste.

    Do You Use Crazy Ingredients

    I live in a small town in Idaho, so I dont have access to an Aldi, Trader Joes or Whole Foods. Most of the ingredients I get are from Walmart. And, a few I have to get from my local Natural Grocer. I try to not do crazy, specialty ingredients and instead stick to simple ingredients because those are easier to find and are usually less expensive. Every once in awhile, you will have to get some dairy-free sour cream or dairy-free cream cheese . But, againif I can find them in IdahoI hope you wont have a problem either. I also try to ALWAYS link to any different type ingredients in the recipe cards to Amazon, in case youd rather shop online, or even to see what they look like to help you spot them at the grocery store.
