Another Reason Why I Turn To This Vegan Vegetable Soup Recipe Time And Time Again Is Because You Can Make It On The Stovetop Or In An Instant Pot Or Crock Pot

I originally created this vegan vegetable soup recipe after I wrote the cookbook. During the cookbook process I gained 5 pounds while writing the book and those 5 made me feel self conscious and just not as well. I wanted a hearty and healthy meal that I could eat for lunch and dinner while I got those extra pounds off. I made it for myself for dinner and made spaghetti for the rest of the family. They all saw the soup and wanted some. It was so good that they asked for it again the next day. Ever since then I added it into the monthly meal plan rotation. If I am trying to keep it light I just allow myself one slice of bread to go with it.

How To Store And Freeze Chicken Noodle Soup

This chicken soup with turmeric and ginger is good in the fridge up to 4 days. You can store the spinach, noodles, and soup separately or together in one container. If you have leftovers, freeze it for up to 3 months. I like to do it in two-cup containers, so I can pull out one serving for easy lunches during the week.

How To Make This Italian Wedding Soup

  • Line a baking sheet with parchment paper and set aside.
  • In a medium bowl, add ingredients for meatballs.
  • Use your hands to incorporate the ingredients well.
  • Form 16 small balls and place them on the baking sheet, then transfer the tray put to the refrigerator.
  • Next, make the soup.
  • Add the olive oil to a large pot over medium heat. Add the onion, carrots, celery, and garlic.
  • Cover the pot and let the vegetables soften for 10 minutes.
  • Next, add the broth, oregano and salt/pepper, and bring to a gentle boil.
  • Once boiling, add the pasta. Cook for 7 more minutes, then gently drop in the meatballs.
  • Cook 5 more minutes, add spinach, mix and turn off the heat. Serve and enjoy!

    Gluten Free Dairy Free Soup With Pinto Beans And Sauerkraut

    This sauerkraut and bean soup is another hearty meatless soup recipe made with gluten free and dairy free ingredients. There are a lot of versions for this soup but I have changed the recipe to meet my preferences I excluded the meat and adjusted the proportion of beans and sauerkraut, plus I added some extra veggies.

    Its a tangy and satisfying probiotic rich soup. Its great on its own or with a side of gluten free sourdough bread. The sauerkrauts salty acidity elevates the taste of this soup in a special way.

    As for the beans, you can soak them and then cook, or use canned beans. The pinto beans adds creaminess and earthiness to the soup. They have a nuttier nature and take on nicely the salt form sauerkraut and the flavors of the other ingredients in the soup.

    When my daughter Cali was diagnosed with a wheat and dairy intolerance years ago it took some adjusting. It was almost like learning to cook all over again. One of the biggest challenges was taking some of our family favorite recipes and adapting them so that Cali could eat them.

    Really any kind of rice will work. I prefer to use a simple long grain white rice , but use whatever you have on hand: brown rice, short grain rice, sushi riceetc. Just follow the directions on the bag for the cook time and liquid to rice ratio. I prefer to use my wild rice blend in my creamy chicken wild rice soup and keep it simple for this recipe, especially for my kids so the whole family will love it..

    How you should cook your rice in this chicken and rice soup recipe

    Ive tried to make this soup all in one pot. I really wanted to. But no matter whos recipe I tried, the rice would end up bloating way too much and would end up soaking up way too much of the broth. It always felt more like a casserole than a traditional soup. So, I gave in and made my rice in its own pot, and then only added it right before I serve the soup and what a difference that makes!

    The only concern was if the rice would still have a good flavor, since it didnt cook in the broth. My work around is to add the chicken bouillon to the rice as it cooks, so its already got flavor infused in it. #Winning

    Most store-bought brands of chicken broth, chicken stock, bone broth, bouillon cubes, or powdered broth base are not gluten-free. Make sure to check the label!

    I always keep Orrington Farms Chicken Flavored Broth Base in my pantry. Its an easy and economical way to make gluten-free chicken broth. I buy it at Walmart.

    How To Make Delicious And Healthy Turmeric Chicken Noodle Soup

  • Cook the Vegetables: Put the scallions, carrots, and celery seasoned with salt and pepper in a large pot on medium heat and sauté for about five minutes. Add the tomatoes and cook for three to four minutes.
  • Boil and Simmer: Increase the heat to high and pour in the broth, water, bouillon, chicken, turmeric, and ginger, and bring it to a boil. Cover the pot and simmer it on low for an hour until the chicken easily shreds and the veggies are tender.
  • Add the zucchini and broccoli and cook for five minutes.
  • Cook the noodles in a separate pot according to the package directions.
  • How to Serve: Place a cup of spinach and some noodles in each bowl and top with two cups of soup. Serve with lemon wedges if desired.

    While the meatballs in this Gluten Free Italian Wedding Soup with Kale might be small, they pack a ton of flavor. Alone they are irresistibly poppable, but added to this soup they become something even more.

    For this recipe we are using ground chicken as the base for the meatballs. I love using ground chicken not only for the lean protein, but also because its quick cooking and a great canvas for flavors.

    These meatballs are seasoning with one of my absolute favorite blends, Everyday Herb from Outside Table. This seasoning includes. organic thyme, organic oregano, organic cayenne and chilis for a little warmth, and sea salt among some of its ingredients.

    We use the Jovial brand gluten free egg tagliatelle noodles. We have found them at several local grocery stores, including Walmart. They are also available from Amazon.

    And we like to keep an extra 2-3 boxes on hand at all times. They are inexpensive, have a long shelf life, and make for a quick meal with this soup and our Chicken Noodle recipe over mashed potatoes.

    Heres What You Need For This Creamy Chicken Vegetable Soup:

    • potatoes some of the potatoes will be chopped up smaller for the soup and some will be halved. I leave some halved so that they are larger pieces and easier to fish out of the soup because they will be blended for the potato cream. Reading the instructions will make everything make sense!
    • spices dried parsley, dried basil, sea salt, pepper. Feel free to also add in your favorite savory spices!
    • avocado oil I use avocado oil for high heat cooking but feel free to use your preferred cooking oil or butter/ghee
    • chicken breast or thighs will work. Ive used both and they are both delicious. I usually buy organic thighs because they are less expensive, more flavorful, and contain more healthy fat than chicken breast
    • broth I love using bone broth but feel free to use your preferred broth
    • non-dairy milk I recommend full fat coconut milk from a can. You can find this at most grocery stores in the international aisle. You can also use your favorite unflavored + unsweetened non-dairy milk

    • Mirepoix: Green onions, carrots, celery
    • Salt and Pepper to season veggies
    • Tomatoes: Grape or cherry tomatoes will work.
    • Broth: I like chicken bone broth for the extra nutrition, but regular broth is good too. Youll also need four cups of water and two bouillon cubes.
    • Chicken: Buy chicken thighs or breasts.
    • Spices: Turmeric and freshly grated ginger
    • Vegetables: Zucchini and broccoli get added towards the end.
    • Noodles: Find vermicelli rice noodles in the Asian section of your supermarket.
    • Spinach: The spinach goes in the soup bowls, and you pour the hot broth over it.
    • Lemon: I like to squeeze fresh lemon juice over this healing chicken soup.
