Allergy Friendly Pancakes: Gluten-Free, Dairy-Free, Egg-Free

A nonstick or cast-iron griddle is the perfect pan for pancakes. Its flat, even surface and lack of sides makes it easy to flip the pancakes.

Before cooking, heat and grease the griddle. If you cook pancakes on a cold pan, they wont brown or rise nicely.

Heat the griddle to about 350 degrees. If youre using an electric griddle, its easy to know when it reaches the right temperature. But how can you tell if youre using the stove? Do the water test. Place a few drops of water on the pan. They should bubble and then disappear. If the water sits on the griddle for more than a few seconds, the pan isnt hot enough. If the water sizzles and quickly disappears, its probably too hot.

How To Make Gluten And Dairy Free Pancakes

First tip, separate the whites from the yolks of two eggs into two separate bowls.

Then, beat the egg whites with an electric mixer on high until it begins to form soft peaks. I simply turn on the mixer and walk away. Then, I start mixing the other ingredients together.

Once there are white fluffy peaks, turn the mixer off. I turn it on for one more beat right before adding egg whites much later in this recipe.

Here are some of the most recommended brands.Bobs Red Mill Gluten-Free Pancake Mix, Bisquick Gluten-Free Pancake Mix, King Arthur Flour Gluten-Free Pancake Mix, Pamelas Non-Dairy Gluten-Free Pancake and Waffle Mix, and Pamelas Gluten-Free Baking and Pancake Mix. Check the ingredients carefully for other allergens such as milk, soy, and nuts. Different brands use different flour blends.

Can You Make Pancakes Without Milk

I slightly adapted this recipe using oil because I didnt like melting butter, and eventually switching to dairy free milk and we never looked back. Why would we when it literally takes 2 extra minutes to measure out ingredients instead of paying for pricey pancake mix.

Maybe pancake mix isnt that pricey, but its still something I dont need to spend money on. Plus, I almost always have all of these ingredients in my pantry.

So anytime we want pancakes, I whip up a batch of this batter, and Marc mans the griddle. Hes really strangely good at making pancakes. I know Ive told you that before.

Can I Make This Recipe Gluten

It is gluten-free, though nobody would know just by tasting it trust me!

Bear in mind that minimising cross-contamination is hugely important if youre Coeliac or making this for someone who is. Heres some tips from Coeliac UK on minimising the risk of cross contamination.

Also, make sure that all ingredients used dont have any gluten-containing ingredients. Then make sure that they also dont have a may contain warning for gluten, wheat, rye, barley, oats , spelt and khorasan wheat .

Why I Love These Vegan Gluten

Pancakes have been a favorite breakfast of mine since childhood. In fact, we FREQUENTLY have pancakes for dinner, because its so kid friendly. AND, just because these are meant for a specific diet doesnt mean any extra crazy steps. Just some simple swaps are all you need to still enjoy that taste and texture youve been craving!

My son has a wheat, dairy and egg food allergy, and my husband has a gluten intolerance, so I love to make sure theyre included. How To Make Easy Gluten

  • I always like to start by mixing my liquid ingredients first. In a large bowl whisk the egg , granulated sugar, pure vanilla extract, and the vegetable oil together.
  • Add the gluten-free flour, xanthan gum , gluten-free baking powder, and salt to the egg mixture and mix until fully combined.
  • Stir in milk and mix until smooth. For thinner pancakes stir in 1 to 2 tablespoons of milk.
  • Scoop the batter into a ¼ cup measuring cup and pour the batter onto a greased griddle or pan for each pancake.
  • Cook the pancakes until the batter starts to bubble a little and the pancakes start to puff. Flip/turn over the pancakes and cook the pancakes until they are golden brown.
  • Top with butter, syrup or favorite topping. Enjoy!
  • These pancakes can be frozen and reheated in the microwave. To freeze the pancakes, allow them to completely cool and place them on a parchment lined baking sheet and flash freeze them for 10 minutes. Flash freezing them keeps them from sticking together. Once the pancakes are flash frozen, you can remove them from the baking sheet and place them inside a freezer-safe bag or air-tight container.

Can I Make Your Gluten

Yes! Just use dairy-free milk and thats it. As milk is a large part of this recipe, Id recommend to:

  • Use a sweetened dairy-free milk, ideally youll get a result thats closer to using real milk in taste and texture.
  • Use a neutral flavoured dairy-free milk like sweetened almond milk. Otherwise your pancakes can end up tasting like your dairy-free milk its fine if they do, but bear in mind it will affect the flavour!

Also bear in mind that dairy-free milk generally wont result in golden-coloured pancakes like mine in the photos but theyll taste identical!

Tips For The Perfect Gluten

  • After mixing up the pancake batter, allow it to rest for 10 minutes. This allows the mixture to hydrate and thicken up a little and almost always results in better pancakes.
  • Dont go overboard on the oil for each pancake. It can make the edges of the pancakes brown excessively and become very crisp, though theyre still perfectly edible! You just want enough oil to lightly coat the base of the pan, reapplying the oil in between each pancake.
  • Keep the heat low. As these are thicker pancakes, if your heat is too high, the underside will brown too much before the top is ready to flip. It needs to be just hot enough so that it sizzles gently as your pour it in.
  • Use a quarter measuring cup to ladle the pancake batter into the hot pan. Using a measuring cup ensures all your pancakes come out the exact same size plus, a quarter cup of batter is the perfect amount for a 5 inch pancake.
  • Use a neutral flavoured oil. Vegetable or rapeseed oil are my first choices, closely followed by a light olive oil. Extra virgin olive oil is a little too flavour intense for pancakes!

Add The Wet Ingredients

Ensure the eggs have already been whisked separately in a small bowl, for an even texture. Add the whisked eggs to the dry mix along with the milk, vanilla, and honey.

Gently whisk again until just combined its alright if some small lumps remain in the batter, but large lumps of flour should be avoided.

Dont over-mix the batter, because it will knock all the air out of it and lead to tough, dense, chewy pancakes instead of a light and fluffy texture.

    Making gluten free anything can be trickyespecially when baking or making pancakes or waffles. I have found that baking mini-muffins or mini-loaves when using gluten free flours works best. I have also found that many gluten free pancakes are quite flat.

    This batch was medium flat. Not quite as fluffy as regular wheat flour pancakes, but not flat and rubbery like other gluten free pancakes and mixes Ive tried. Heres what I did differentlyI really whipped the batter each time Id go to pour the pancakes onto the griddle. I think that aerating the batter by whipping it hard helped give them a extra bit of fluff!

    And I tried this batch with the free coconut milk that I got the other week. Ive always used rice or almond milkbut I really like the coconut-y flavor of these pancakes.

    Im calling these a gluten free pancake success!

    Gluten Free Pancakes Recipe (The Fluffiest!)
    • These pancakes are hard to mess up and I always have my kids help me make them too. They are one of the easiest recipes to make for breakfast and my kids LOVE them!
    • If you arent gluten-free, use regular all purpose flour to make them
    • I buy organic cottage cheese at the grocery store I dont use a flavored one just plain
    • You can add in any mix-ins you want to like berries, chocolate chips, anything!
    • Add these to your freezer stash. They freeze well and I defrost in the fridge overnight or just add to microwave

    How To Make Gluten

    Tip For Fluffy Pancakes

    Now, you are going to use more of the blended goat and coconut milk that was left in the blender or the milk of your choosing.

    TIP To activate baking soda, heat up a 1/3 cup of dairy free milk until it is warm. Milk burns very easily so make sure it does not come to a boil. If you put it in the microwave, about 25 seconds work. Mix well!

    Lastly, fold in the egg whites.

    Cook the pancakes on a hot cast iron skillet over medium heat. I enjoy the flavor of melted vegan butter. Pour out the desired amount of gluten and dairy free pancake batter. I like to make mine with roughly a 1/4 cup of batter. Do you see how the batter looks lighter?

    Cook for around 1 minute until you see the edges start to cook and bubbles on the surface.

    Then, flip the gluten and dairy free pancake and finish cooking it for about another minute. When you see bubbles, let it cook for a few more minutes. The edges need to become more firm so the pancake stays together when you flip the pancake over.

    To keep your pancakes warm till you are ready to serve them, layer them on a cooling rack stacked on a baking tray and place them in a warm oven .

    • 2 eggs seperated
    • 4 tablespoons of cane sugar
    • 3/4 cup of dairy free milk
    • I like to blend a can of goat milk with a can of organic coconut milk
