Why we love them: If theres a cookie that never disappoints, it the classic chocolate chip cookie. Chocolate chip cookies are iconic, and I honestly dont know a single person who would turn one down. However, when it comes to gluten-free, dairy-free baking, these cookies are the most difficult to nail. This recipe from Vibrant & Pure is the best Ive tried, and tastes closest to the real thing.

Hero ingredient: Instead of using a chia or flax egg, this recipe calls for 1/3 cup of cold vegan butter. Im a firm believer that this is the distinguishing ingredient in this recipe, and what makes these cookies have that moist, buttery flavor thats just to die for.

Ingredients For Piping Frosting:

  • Powdered sugar 1 cup of powdered sugar is needed for the frosting, we like the Wholesome Organic brand, available at Thrive Market
  • Butter unsalted butter or, for dairy-free cookies, choose a plant-based stick butter
  • Heavy whipping cream or, for dairy-free, use coconut cream
  • Vanilla extract use pure vanilla extract, such as this one from Thrive Market
  • Coarse sugar or sanding sugar if desired, sprinkle coarse sugar over the piped frosting to create a sparkling effect

How To Make Gluten

  • Preheat oven to 375°F.
  • In a large bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
  • Add the egg , molasses, and pure vanilla extract to the butter mixture and mix until fully combined.
  • Add the gluten-free flour, baking soda, baking powder, and salt to the butter mixture and mix until fully combined.
  • Either stir in the chips with a spoon or use your mixer on low to mix the chocolate chips into the cookie batter.
  • Drop by rounded tablespoon or use a greased cookie scoop. .
  • Place the cookies 2 inches apart on a parchment-lined cookie sheet.
  • Bake for 8-10 minutes until they start to turn golden brown . Please watch your oven because all ovens are different.
  • Cool and store leftovers in an air-tight container. Enjoy!

What Dairy Free Butter Should I Use In These Cookies

We love using the Country Crock Plant Butter with avocado oil or olive oil for our baking. The plant butter sticks dont have soy in the ingredients but the tubs do have soybean oil in them. Also they have an almond oil plant butter, so if you have tree nut allergies double check the labels.

If you plan on using a different brand of dairy free butter, just remember that every dairy free butter acts a bit differently in baked goods and your cookies might spread more.

For example, Earth Balance Soy Free is more liquid at room temperature than the Country Crock Plant Butter Sticks. So the cookies may spread too much if you use that butter .

The sticks do have a warning of may contain soy, so if you have severe soy allergies you can use something like the Earth Balance Soy Free which is also a great option.

    I have found the best way to measure gluten-free flour is the spoon & level method. I use a spoon to scoop the flour into the measuring cup. Then I use the back of a knife to level off the top of the measuring cup.

    Please do not scoop the flour out of the bag with your measuring cup. If you do, you could end up with more flour than is called for in the recipe because the flour often gets compacted in the bags.

    With our cookies, you can make them crispier or chewier/softer depending on what you like. If you want these more crispy, bake for about 12-13 minutes. If you want these more chewy in the middle, bake for just 10-11 minutes.
