As with all natural, fresh-baked goods, cookies are best the first day. But sometimes, sometimes they taste even deeper and richer the next day. These gluten free peanut butter cookies are wonderful the first day and mayhaps even better the next.

After cooling the cookies completely, store them in an airtight container at room temp for 1-3 weeks.

You can buy peanut butter with either a crunchy or smooth texture. Natural peanut butter is made only with nuts. If you look at the ingredient list on a jar of peanut butter, you should see what is included in the popular brands. You can find peanut butter at local grocery stores.

Additional ingredients are often added when peanut butter is processed. Processed peanut butter can include salt, sugar, fat like palm oil or hydrogenated vegetable oil, and additives to prevent oil separation.
