How To Make Low Carb Bread With Almond Flour

Easy Keto Bread with no crazy ingredients! GLUTEN FREE TOO!

This almond bread recipe is super easy! Just a few easy steps:

  • Prep. Preheat the oven and line a loaf pan with parchment paper.
  • Stir dry ingredients. These would be almond flour, psyllium husk powder, baking powder, and sea salt.
  • Add wet ingredients. Add the eggs, melted coconut oil, and warm water.

TIP: Mix well here to create air bubbles! This will help your bread rise.

  • Bake. Transfer the batter to the baking pan, round out the top, and bake until the top is crusty and an inserted toothpick comes out clean.

TIP: It will pass the toothpick test before its completely done, so make sure the top is very crusty, too.

Let your keto almond bread cool completely before slicing it, which will allow it to set inside.

What Do Low Carb Buns Taste Like

These dont taste like simple, traditional fathead dough for two reasons:

  • They are baked in a way to harden the outside which provides the roll feel.
  • The spices used really allow the flavor to pop.
  • Now, the undertone will always be fathead dough. You cant make dough with cheese and expect to not taste the cheese. BUT, these keto rolls really do have the look, feel and taste of more traditional buns!

How Do I Know If I Have An Issue With Gluten

If you have chronic problems with diarrhea, bloating, anemia, rashes, and/or fatigue, you should talk to your doctor about screening blood work to test for celiac disease.17 A positive screening test will usually be followed by a visit to the gastroenterologist to discuss doing a biopsy of the small intestine, which is the definitive way to make the diagnosis.

If your screening for celiac disease is negative, but you have many of the same symptoms when eating gluten-containing foods, then you may choose to remove these foods from your diet and wait for your symptoms to fully resolve. Then, slowly reintroduce these foods to see if the symptoms recur this can be done multiple times. Foods that reliably provoke symptoms should probably be avoided.

Remember, it may be difficult to pinpoint if symptoms are being caused by gluten or some other component of these foods. A series of different food tolerance tests may be your best bet.

For instance, if you do just fine with gluten-containing homemade bread but have symptoms after eating processed gluten-containing products from the store, the main offender may not be gluten. But if you react poorly to both of these, then there is a higher likelihood that gluten could be the problem.

This low carb bread recipe with almond flour came about somewhat by accident during my Sunday keto meal planning. Lately Ive been making the flattened version of my 4-ingredient almond flour biscuits to use for sandwiches each week, but since Ive been wanting to create a keto almond flour bread recipe, last weekend I decided to attempt that instead.

This is one of the closest ways Ive come to a carb-free bread or carbless bread. Technically, cloud bread is lower in carbs, but the texture is much further from real bread. Mywhite keto bread recipe is also lower in carbs , but that one is more like a fluffy white instead of a classic wheat. That one is more light, while this low carb gluten-free bread is chewy and similar to wheat bread. Just depends on what youre going for!

The taste and texture of this keto almond bread reminds me of a denser wheat bread. It even has a crusty exterior! You just need to make sure to bake it for long enough, so that the inside isnt wet anymore. The difference is, its paleo, gluten-free, and packed with protein and fiber, keeping you full for much longer. You can even make this keto bread in a bread machine, if youre so inclined see the FAQ below.

This low carb gluten-free bread post was originally published on March 13, 2017 and the post was republished in December 2020 to add useful tips and answer common questions. Its still the same delicious keto almond bread recipe that has been popular for years!

How To Make Sure Your Low Carb Bread Recipe Is Done

The only really challenging part about this low carb bread recipe is knowing when its done. It will look done before it actually is! And if you take it out too soon, it will fall and worse, it will be gummy inside.

Here are 2 ways to test for doneness:

  • The toothpick test. Insert a toothpick and check if it comes out clean. But, note that this bread will pass the toothpick test before its fully done. So, check with a toothpick and then continue baking for at least 10 more minutes.
  • The crust test. Another way to tell is that the top should get very hard and crusty. Yes, this low carb bread creates a hard crust! I actually love that, and its an important marker of the bread being done.
  • Oven temperatures vary, so it might take a little experimentation in yours if its not done the first time. But in general, err on the side of more time and not less. You can always cover the top if it starts to burn, though Ive never had to do that.

    Three Types Of Gluten Conditions

The medical community categorizes three types of gluten-related conditions. Those with wheat allergy, celiac disease, and non-celiac gluten sensitivity.

There are three main types of gluten conditions. The most common type is celiac disease, which affects an estimated 1 in 100 people worldwide. Also known as celiac sprue or gluten-sensitive enteropathy, it is believed that about two-thirds of people with the disease are undiagnosed and not getting the proper treatment.

The second is people with wheat allergies. People who have allergies to wheat will break out into hives, have facial swelling, and even have difficulty breathing if they come in contact with any form of wheat. It is a serious thing when their antibodies react to the wheat proteins.

The third is people with non-celiac gluten sensitivity. Individuals with non-celiac gluten/wheat sensitivity have symptoms that are comparable to those of celiac disease, which go away when gluten is avoided. They do not, however, test positive for celiac disease.

Many people who have gluten in their diet but do not test positive for celiac disease experience symptoms comparable to those seen in celiac disease, such as foggy brain, increased sadness, ADHD-like symptoms, abdominal pain, bloating, diarrhea, constipation, headaches, bone or joint discomfort, and chronic fatigue.

Well Butter! Do you need anything else?

Ok, but seriously, I eat them with a variety of things.

I make sandwiches with keto chicken salad for lunches and it is perfect. I make a batch of keto rolls and a batch of chicken salad and my lunches are set for a few days.

Which is GREAT because lunch is always the wildcard for me.

Another fun idea is to make mini pizza rolls. I wish I had a picture to share, but basically you just cut the low carb rolls in half, layer it with keto pizza sauce, mozzarella cheese and pepperoni and you have little pizza rolls! You can even bake them if you want, but you dont need to.

    Misconceptions About Keto Foods

The misconception about the keto diet is that no dish can ever contain any grains or starch whatsoever. However, if those ingredients are very minute and the overall carb count is still low, doesnt spike the blood sugar, or kick one out of ketosis, its okay.

This flexibility is not true for a gluten free diet. Even a very small amount of gluten contaminates a dish and is not acceptable for those who are on a gluten free diet.

What this means is that on a keto diet, its not the specific food. If that food kicks one out of ketosis, its not keto friendly. A bite of wheat bread or a carrot may not kick a person out of ketosis. You can use a blood monitor like this to test your ketones. Keep in mind ketones vary throughout the day, so testing at different times may result in a different number.

The most critical point is to understand the differences between gluten free, grain free, keto and paleo and not to interchange them. Its also important to not assume a keto processed product is gluten free if that is also important to you, as it is to me.

    Is The Paleo Diet Healthy

Healthy is a subjective word. It can be extremely healthy if you dont overdo on the sugary fruit, nuts, nut products and the sweeteners.

If you have existed on processed foods most of your life, and you are making a switch, the paleo diet can be a game changer and bring abut positive health changes.

However, if you overdo the honey and maple syrup, you are still over-doing carbs and sugar. This can take your diet in an unhealthy direction.

Strictly speaking, the Paleo diet is gluten free, but is not necessarily keto friendly because high sugar content in most fruits, maple syrup, honey and higher carb vegetables are part of the Paleo lifestyle. However, you could follow a keto/paleo type plan by avoiding those foods, but adhering to grass fed, beef and keeping your net carbs to around 20.

My favorite Paleo meatballs are here.

Youre Still Spiking Inflammation When Eating Gluten

Gluten-free products may still contain carbs, sugars, preservatives and other forms of additives. So if youre eating these processed foods regularly, youre still triggering inflammation, making it difficult to get healthy.

But with keto, you focus on avoiding carbs and not triggering inflammation. This is an essential difference because inflammation is a significant factor behind most chronic diseases.

Your body triggers inflammation in response to a threat. It helps prevent injuries from becoming fatal and infections from spreading.

But if youre eating processed foods that your body perceives as threats, youre always in this fight or flight mode, causing long-term damage.

So although youll be able to manage celiac disease with a gluten-free diet, youll still trigger inflammation by eating high-carb processed foods. Here is a study that outlines the pros and cons of a gluten free diet for people with celiac disease.
