If you have read my site for long you probably know that I have mixed feelings on gluten free flour blends. I love the idea and convenience of them. I love the thought of having just one flour to replace regular all purpose flour in baking. A one product fits all baking needs really does sound wonderful, but it is not as easy as it sounds. It is actually a difficult task.

In the five years that I have been gluten free I have tried many gluten free blends. Both homemade ones and premade ones. Some were good. Others were terrible. Most though worked well in some things, but not so great in other things. For most blends, I have found what may work well in a pancake wont work so well in a cookie. And what works in a gluten free bread may not work so well in a cake or muffin. It really is hard to find a one size fits all product when it comes to gluten free baking. Blends work okay in most things, but not all things.

This is why most of my recipes call for individual gluten free flours and not a blend.

Many people love the old blend. If you are one of them, dont worry, they still sell it. But I was not one of those that loved the old flour blend.

You may be wondering why I am talking about loving this blend when I mentioned above that I am usually not a big fan of blends. Well this new blend of Bobs Red Mill is different. Totally different in my opinion.

Product Review: Bobs Red Mill

Im always up for a trial of gluten-free bread mixes. Since bread is what I would consider a treat in our household, it is especially nice to smell fresh loaves baking in the oven.

This particular mix is gluten-free and dairy-free and can be used in a regular, conventional oven or in a bread machine. Since I am still without a bread machine, I chose the traditional preparation method.

The loaf mix contained a yeast packet, which was a pleasant surprise, and also quite convenient. I used almond milk to complete the recipe and it turned out fine-tasting, but dense. Using regular dairy milk might produce a fluffier and more airy loaf as the yeast would feed off the sugars in the dairy milk a bit more. Overall, I would say that it is worth the price, and worth a try. Our family finished the bread, but it is not our top loaf we tried thus far.

Review: Gluten Free Cinnamon Raisin Bread

I grabbed this gluten free cinnamon raisin bread mix from my local chain grocery store this past weekend and figured Id give it a quick test. As many of you know, gluten is a cornerstone in bread making. As a result, gluten free breads will have a difference in taste and sometimes texture, but that doesnt mean it wont be delicious. Also, as a bonus, not only is this gluten free, but also kosher and vegan.

Gluten Free Yeast Bread Recipe

The most important part of this recipe is being sure your yeast is good. Because yeast is alive, its important to check the expiration date, and if for some reason when you activate your yeast it doesnt bubble and puff up its no good! Opt for trying to activate your yeast again or head to the store and grab some new yeast.

I also appreciate that the instructions are pretty minimal. Throw everything into your mixer, after letting your yeast activate for 10-ish minutes and then mix it to hell. Thats it. The most difficult thing about this mix is the wait time. But thats just baking in general, its a lot of hurry up and wait.

Youll need to let your batter rise for about an hour, and then itll have almost a 90 minute bake time as well. Finally, you should let your loaf cool completely before cutting into it which takes about another hour. I do not recommend making this when youre jonesing some bread.

A word of advice, when youre letting the mix rise I suggest using the water method to create a very warm place if you dont have a sunny window. Put your loaf pan into another vessel and fill that with warm water and create a warm bath for your loaf. That seems to work better than trying to use your oven at a low temperature.

All in all, its a solid mix and when Im not baking from scratch, Ill definitely keep this around. If youre interested you can purchase it here.

How Long To Bake Gluten

This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

Remember to cover your gluten-free bread with foil half-way through baking so it doesnt over-brown.

You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

Homemade Wonderful Rolls And Buns

Makes 12 buns or 20 rolls. Prep time 20 minutes cook time 15â25 minutes
  • Place warm water in a large mixing bowl. Sprinkle in yeast and set aside for 5 minutes to allow the yeast to dissolve. Meanwhile, oil two baking sheets or line with parchment paper and set aside.
  • Add egg, egg whites, oil and entire contents of the bread mix to the yeast mixture. Using a stand mixer fitted with a paddle attachment, mix on low for 2 minutes. Turn mixer off and scrape down the sides of the bowl with a rubber spatula, then continue to mix on medium speed for 6 minutes. If preparing by hand, mix with a wooden spoon until the ingredients are very well combined.
  • For buns, portion dough into â cup portions for rolls, portion dough into 3 tablespoon portions. With wet hands, gently shape each piece into a ball and place on the prepared baking sheets.
  • Lightly brush or spray with oil. Cover with plastic wrap and let rise in a very warm place until doubled in size, about 40 minutes. While the dough rises, preheat the oven to 350°F.
  • When the dough has doubled in size, remove plastic wrap, and transfer sheet trays to the preheated oven. Bake until golden, rotating trays halfway through baking, 15â20 minutes for rolls and 20â25 minutes for buns, until golden brown. Let cool at least 5 minutes before serving.

  • ¼ cup melted Butter or Oil
  • 1 ½ cups Warm Water, 110°F
