How To Make Gluten

  • Chop the cranberries. You can do this by hand using a large knife and a cutting board or you can use a food processor. Either way, you want the cranberries to be coarsely chopped.
  • Make the batter. Whisk together the dry ingredients in a large bowl and then add the wet ingredients. Stir until the batter is smooth.
  • Add a little batter to the pan. To prevent the cranberries from sinking to the bottom of the pan, spread a little batter, about 1/2 cup into a greased baking pan. This step is totally optional. If you dont care if some cranberries sink, skip it.
  • Stir in the cranberries. Gently stir the chopped cranberries into the batter. Look for them to be evenly spread throughout the batter but stop before the batter turns bright pink.
  • Bake. Spread the batter into the pan and bake until set. Like most gluten-free quick breads, this cranberry bread takes almost an hour to bake.
  • Take the temperature. The best way to ensure the loaf is done is to take its temperature. Use an instant-read thermometer to check that its reached 205 degrees F.
  • Cool and slice. I know its hard but you want to make sure the loaf cools before you slice it. This gives the bread time to set up. If you slice it too soon, it will appear gummy even though the loaf is fully baked.

My Two Favorite Bobs Red Mill Flours Are

Both of these flours are great for baking cookies and breads. The 1 to 1 Baking Flour contains xanthan gum so you wont need to add any extra. I keep both of these in my pantry for when the baking bug strikes.

I used coconut sugar but you can easily replace that with regular sugar or even honey if you prefer. I like the flavor of coconut sugar but I dont believe its better for you or has a lower glycemic load. It has a wonderful maple flavor that goes so well in quick breads like this Gluten Free Zucchini Bread.

My morning routine goes a little something like this: Wake up, get dressed, head outside, garden while its only 70 degrees, go inside, make breakfast, eat, clean up after breakfast. While were out there weeding the garden, pruning the tomatoes, and picking berries, our stomachs are empty and in dire need of food. Sure a berry or two slips in here and there, but for the most part we yearn for breakfast.

It makes me wonder how some people can just skip breakfast. Yesterday, I really wanted to use the Gluten Free 1-to-1 Baking Flour I received from the kind people of Bobs Red Mill to make breakfast with so I whipped up a basic muffin batter, added some chocolate chips, and made the BEST gluten free chocolate chip muffins ever.

You can thank me later.

I was surprised at how well the Bobs Red Mill Gluten Free 1-to-1 Baking Flour did at replicating the results of a wheat flour muffin. The muffin was still tender, moist and downright delicious. Plus, it also rose in the same manner as a wheat flour muffin.

I will definitely be using this in the future if I ever need to make a recipe gluten free in a flash. I love that theres no need to add xanthan gum because its already in it!

Then just place the pan in the oven and bake them for 15-20 minutes.

Tips For Making Gluten

Here are my tips that work with this gluten-free bread recipe. See blow for my gluten free bread machine recipe.

Dont substitute anything unless I specified above that Ive tested it. This is important. If you substitute something I cant guarantee anything and I cant help you troubleshoot if something doesnt work in your gluten-free bread.

Ingredients at room temperature work best. You can always run your eggs under warm water for a couple minutes to bring the temperature up.

Read the recipe instruction and get all ingredients out before you start.

Use dry active yeast or quick yeast.

If your bread sinks in the middle before it is done baking you most likely let the yeast proof sit too long before using it or you let your bread rise too long. You want put your gluten-free bread in the oven when it rises just above the top of the loaf pan, no longer.

Make sure your water is between 95-110 degrees before adding the yeast. If you dont have a thermometer I suggest you get one.

Line the loaf pan with parchment paper and then spray it with oil, this will help you remove the loaf from the pan.

Pan size matters. If you use a wider pan your loaf will be wider, and shorter. If you use a narrower pan your loaf baking time might change.
