If you have read my site for long you probably know that I have mixed feelings on gluten free flour blends. I love the idea and convenience of them. I love the thought of having just one flour to replace regular all purpose flour in baking. A one product fits all baking needs really does sound wonderful, but it is not as easy as it sounds. It is actually a difficult task.

In the five years that I have been gluten free I have tried many gluten free blends. Both homemade ones and premade ones. Some were good. Others were terrible. Most though worked well in some things, but not so great in other things. For most blends, I have found what may work well in a pancake wont work so well in a cookie. And what works in a gluten free bread may not work so well in a cake or muffin. It really is hard to find a one size fits all product when it comes to gluten free baking. Blends work okay in most things, but not all things.

This is why most of my recipes call for individual gluten free flours and not a blend.

Many people love the old blend. If you are one of them, dont worry, they still sell it. But I was not one of those that loved the old flour blend.

You may be wondering why I am talking about loving this blend when I mentioned above that I am usually not a big fan of blends. Well this new blend of Bobs Red Mill is different. Totally different in my opinion.

That is until recently.

My Two Favorite Bobs Red Mill Flours Are

Both of these flours are great for baking cookies and breads. The 1 to 1 Baking Flour contains xanthan gum so you wont need to add any extra. I keep both of these in my pantry for when the baking bug strikes.

I used coconut sugar but you can easily replace that with regular sugar or even honey if you prefer. I like the flavor of coconut sugar but I dont believe its better for you or has a lower glycemic load. It has a wonderful maple flavor that goes so well in quick breads like this Gluten Free Zucchini Bread.

How To Store Fresh Baked Bread

This fresh-baked bread stays soft for 2-3 days after it’s been baked. You’ll want to let it cool to room temperature before you slice it. We like to store it whole, in a sealed container, or wrap it tightly with cling wrap, and slice it as we need it.

After a day or two, we will freeze any bread that’s left.

Homemade Wonderful Rolls And Buns

Makes 12 buns or 20 rolls. Prep time 20 minutes cook time 15â25 minutes
  • Place warm water in a large mixing bowl. Sprinkle in yeast and set aside for 5 minutes to allow the yeast to dissolve. Meanwhile, oil two baking sheets or line with parchment paper and set aside.
  • Add egg, egg whites, oil and entire contents of the bread mix to the yeast mixture. Using a stand mixer fitted with a paddle attachment, mix on low for 2 minutes. Turn mixer off and scrape down the sides of the bowl with a rubber spatula, then continue to mix on medium speed for 6 minutes. If preparing by hand, mix with a wooden spoon until the ingredients are very well combined.
  • For buns, portion dough into â cup portions for rolls, portion dough into 3 tablespoon portions. With wet hands, gently shape each piece into a ball and place on the prepared baking sheets.
  • Lightly brush or spray with oil. Cover with plastic wrap and let rise in a very warm place until doubled in size, about 40 minutes. While the dough rises, preheat the oven to 350°F.
  • When the dough has doubled in size, remove plastic wrap, and transfer sheet trays to the preheated oven. Bake until golden, rotating trays halfway through baking, 15â20 minutes for rolls and 20â25 minutes for buns, until golden brown. Let cool at least 5 minutes before serving.

How Long To Bake Gluten

This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

Remember to cover your gluten-free bread with foil half-way through baking so it doesnt over-brown.

You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.

Making Gluten Free Bread

  • Add the sugar and yeast to your warm water and stir set it aside for 5-10 minutes but no longer.
  • While your yeast is proofing, in the bowl of a stand mixer fitted with the paddle attachment, add the flours, flax seed meal, xanthan gum, baking powder, and salt. Turn your mixer to low and mix just until combined.
  • Add the oil, egg whites, vinegar, and proofed yeast mixture.
  • Turn the mixer to a medium speed and mix for an additional 2 minutes. The dough will be thick and sticky. Turn off the mixer and scrape down the sides.
  • Using a rubber spatula, add the dough to your prepared loaf pan making sure to fill in the corners of the pan and level the top. Wet your fingers and smooth the top.
  • Cover the dough with a lightly oiled piece of plastic wrap and allow it to rise in a warm place for 45 to 60 minutes, or until it has risen slightly above the loaf pan.
  • When the dough is near the top of the pan, preheat your oven to 350°F. Remove the plastic wrap and bake for 60 â 65 minutes. Half way through baking, cover the bread loaf with a piece of foil to keep it from over-browning.
  • Remove the loaf from the oven and let cool completely before slicing. Slice the entire loaf and store in a container at room temperature for up to 4 days or in the freezer for up to a month.

    Can I Freeze Gluten

    Yes, you can freeze this gluten free bread loaf. After it has completely cooled, slice the loaf into equal slices. We like to place a piece of parchment paper or in between each slice, so it’s easy to pull it out of the freezer.

    You can either defrost the bread in the microwave or you can let it sit at room temperature until it has thawed.
