Flapjacked Gluten Free Buttermilk Pancake Mix

FlapJacked products have adorable packaging, and I had been meaning to try one of their gluten free products for quite a while. These protein pancakes are made with whey protein isolate, which is a favorite gluten free baking ingredient of mine.

This is not a traditional pancake mix, though, like King Arthur Flours mix or Pamelas for that matter. Its a protein pancake.

I do prefer my own protein pancakes recipe, by quite a lot. But since you dont have to add anything to this mix other than water, theyre a quick and easy alternative to scratch baking.

The pancakes are very puffy, and theyre not what I would call light and fluffy. But they have good taste, and each serving of about 3 pancakes has 20 grams of protein. And I really love protein-packed breakfast recipes, like my chewy protein cookies and peanut butter protein cookies.

What Makes Belgian Waffles Different Than Regular Waffles

There are actually two types of Belgian waffles: Liege waffles and Brussels waffles. Liege waffles are made from a thicker, almost dough-like batter and often studded with pearl sugar. Brussels waffles are what most Americans picture when they talk about Belgian waffles.

So what exactly is the difference between Belgian waffles and regular waffles? There are two main differences: 1) Leavening and 2) Shape.

  • LEAVENING. Traditionally, Belgian waffles were made with yeast to leaven the batter. Today, its common for baking powder to be used instead .
  • SHAPE. Secondly, Belgian waffles are typically cooked in a deeper waffle iron than traditional waffles. This creates deeper pockets and a gorgeous crisp-on-the-outside, fluffy-on-the-inside interior.

    Pancake mix is one of those things thats pretty easy to take care of yourself at home, but for travel, gluten free company, camping, or the ease of having something on hand, sometimes a pancake mix just cant be beat.

    It was pretty surprising to me when we went gluten free 5 years ago that gluten free pancake mixes are an entirely different ball game. Without gluten and wheat flour proteins, youre usually relying on a blend of flours. The flour blends for gluten free pancake mix have to be a good blend of starchy and substantial to get the right texture. Some fall flat when cooking, some are dry and crumbly, others are REALLY thick and struggle to cook through.

    I got tired of wasting money on bad mixes, so we had a taste test and today you get the results! Im breaking down 10 popular brands of gluten free pancake mix and scoring them so you never have to buy a bad gluten free pancake mix again.

    Why Are My Gluten

    If your gluten-free waffles are sticking, this could be one of three things. First, if your waffle iron is non-stick, you should NOT spray it with cooking spray.

    Spraying it could result in sticking.

    Second, if your waffle iron is NON non-stick, you WILL need to spray it.

    Last, if you don’t let the waffles cook until they’re done, they might come apart when you try to lift them out. That’s because the center isn’t finished cooking. Hope that helps.

    Can I make gluten-free waffles sugar-free?

    Yes, you can make gluten-free waffles sugar-free. Simply use honey or coconut sugar instead of granulated sugar.

    I make my own mixes and my own flour blends. When I do, I personally like to store them in glass jars or containers.

    I feel that they stay fresh longer, and they are a good storage option.

    When I use ball pint mason jars I purchase the lids that have spots for the date on the lid. I write down when I made the mix or flour blend so I can keep track of how old it is.

    You can store this mix in a glass jar, container, or a zip lock bag.

    Just note that items stored in zip lock bags don’t last as long. Most mixes like this gluten-free waffle mix store really well in all of the above.

  • Chopped Toasted Nuts. Toasted walnuts or pecans add a satisfying nutty crunch to Belgian waffles! Theyre extra delightful with syrup, whipped cream, or that peanut butter banana combo!
  • Chocolate Hazelnut Butter like Nutella or this dairy-free version tastes amazing on gluten-free Belgian waffles! I love pairing it with raspberries or strawberries. YUM!

    Should Pancake Mix Be Thin Or Thick

    The batter, once prepared, should be thin enough to easily pour and spread onto a hot, greased griddle but not so thin that it runs all over the griddle. Aim for it to spread to about 1/4-inch thick. If the batter seems too thick, add a little more water or milk. If it seems too thin, add a couple more tablespoons of batter.

    Honestly, it’s up to you. I used a small, two-waffle waffle iron for almond 2o years. It was one of those $10 ones you get at Walmart.

    Just this last year a friend of mine gave me a round waffle iron. I love it just as much. If you have a waffle iron, just use that one.

    How you measure your gluten free flour is also very important.

    To accurately measure your flour, use the fork, spoon, knife method.

    First, mix your gluten free flour with a fork to ensure it is aerated and evenly mixed.
