Halloween. When you live with a food allergy or food sensitivity, what frightens you more than costumes is candy. Does the candy in question contain your allergen? Did manufacturers produce this sweet on a shared line with an allergen? Does this candy contain undeclared gluten, which is found in wheat, barley, malt, and rye? What frightened me this Halloween was an Instagram post regarding NIMA and a 100 Grand bar.

Halloween was unique for me this year. My husband and I drove a 20 foot Uhaul from Michigan to South Dakota, with our car in tow. We chose to spend our vacation helping our dearest friends move all their belongings 800+ miles away, due to a new job. No costumes for us. No decorated van passing out safe treats from our Teal Pumpkin Project inspired stash of goodies. Therefore, I vicariously enjoyed Halloween through social media. From the comfort of the Uhaul , I perused Instagram.

I wondered Did Nestle change their recipe? My husband, who is completely a saint, agreed to pull off the freeway in Faimont, Minnesota and let me stop at a grocery store to check. So I wandered into the store, and asked one of the incredibly helpful staff to help me locate one of these 100 Grand bars. Heres what I found.

How To Make 100 Grand Bars

These 100 grand bars are super easy to make and don’t require any baking. You will, however, need a food processor or high powered blender to make the caramel.

Another thing to note: this recipe is messy! The caramel is sticky and the bars don’t always turn out looking perfect…but let me tell you, the taste makes up for all of it.

Reese’s Peanut Butter Cups

A gluten-free peanut butter lovers dream! Reeses Peanut butter cups are gluten-free! A chocolate cup filled with peanut butter and another national favourite from The Hershey Company. Dip In Dark Chocolate

When the caramel is ready, melt the dark chocolate. Place the chocolate and coconut oil in a small sauce pan and melt over low heat, stirring frequently.

Once the chocolate is melted, turn off the heat and grab the frozen caramel.

Cut the caramel into 12 equally sized pieces.

Dip the caramel, one at a time, into the melted chocolate and then place on a lined baking sheet to set.

Top the candy bars with extra chocolate .

Healthier Vegan 100 Grand Bars Made With All Gluten

You guys know how much I love you all, but this recipe is dedicated to my mama. The real queen of 100 Grand Bars.

When we were younger and would trick-or-treat for hours. Literally 4-5 hours every Halloween, my mom would always ask us to get her the 100 Grand Candy Bars. They are one of those candies that kind of fly under the radar a bit, but if you know you know.

These homemade 100 grand bars are my paleo spin on the original 100 grand candy bars. They consist of a date caramel filling that’s topped with sprouted buckwheat groats and coated in dark chocolate. This homemade candy bar recipe is paleo, vegan, gluten free and nut free.

My favorite candy bar as a kid? 100 grand bars all the way!

I have always been a total sucker for caramel, especially as a kid. And there’s nothing quite like the texture of gooey caramel with a crispy topping and rich chocolate coating. It’s the perfect combination of chewy, crunchy, sweet goodness!

I can’t remember the last time I indulged in a real 100 Grand, but I definitely enjoyed my fair share of these homemade 100 grand candy bars!

Unlike the traditional recipe, my version is:

How To Whip Up Healthier Vegan 100 Grand Bars

Make The Date Caramel

First, make the caramel. Grab an 8″ x 4″ loaf pan and line it with foil or parchment paper .

Remove the pits from the dates and measure out 250 grams, or about 10 large medjool dates. Soak them in boiling water for 5 minutes to soften.

Drain the water, then place the dates in your food processor. Process the dates, stopping every few seconds to scrape the sides, until they form a paste.

Next, add in the tahini, vanilla and salt. Blend the mixture until it forms a thick, consistent paste.

Spread the caramel into the lined baking pan.

We Still Need To Treat Each Other With Dignity

So here is where I voice my opinion. NIMA has become a controversial issue in the Celiac Disease community. I try not to share my own opinion about the NIMA too often, but instead share facts of how I have seen it used and how it performs. Based on that evidence, I am not a fan of the device. However, that doesnt mean I will publicly insult those who choose to use it. Some of NIMAs biggest users are friends of mine. I refuse to throw them to the curb and trash the rest of their advocacy because we disagree on this issue. We need to educate and listen to each other, both on topics which we agree and disagree. Remember, our Celiac attitude impacts the reach of our advocacy.

Heres where the Instagram account that posted the original picture faltered. That person ONLY had one of the 100 Grand miniature candy bars. He / she did not have the larger bag from whence it came, nor did the mini candy bar have a complete ingredient list. Mini bars, especially those passed out on holidays such has Halloween, do not always have a complete list of ingredients on the wrapper. If you question a food item, and the ingredients are not on the packaging, try to look it up online. ALSO make sure to read comments on posts as well. Pictures and ratings can be deceptive.

How To Make Keto 100 Grand Candy Bars

Place the baking chips and coconut oil into a microwave safe bowl, and heat them at 30 second intervals until the chocolate is melted and the ingredients are combined.

Fill 8 sections of a small square or rectangular candy mold about of the way full with the melted chocolate.

Place the chocolate into the freezer to set.

Put the butter and brown sugar substitute into a small saucepan over medium heat, and whisk until the butter is melted and sugar substitute is dissolved.

Whisk in the heavy whipping cream, and continue to cook down until a thick caramel colored sauce has formed. Let the sauce cool slightly.

Spoon or carefully pour the sauce mixture

evenly into the 8 candy mold sections.

Sprinkle the cereal into each candy mold section over the caramel sauce.

Return the tray to the freezer for an hour to allow the caramel to set.

Remove the candies from the silicone mold.

Reheat the chocolate mixture at 15 second intervals until completely melted again.

Hold the candies on the tines of a fork, and drizzle the chocolate over them.

Place the candies on a silicone or parchment paper lined tray to set for 15 minutes before serving.
